2 1/2 cups flour
1/2 teaspoon salt
1 cup hot water
1 tablespoon shortening or 1 tablespoon oil
1 lb ground pork
2 tablespoons soy sauce
1 tablespoon sesame oil
1 teaspoon grated ginger
1 pinch sugar
salt and pepper
3 green onions, chopped
1 egg
1 tablespoon cornstarch
1 (8 ounce) can water chestnuts, finely chopped
1 garlic clove, minced
1/2 cup soy sauce
1/4 cup white vinegar
1 teaspoon chili oil
1 green onion, chopped

Steps:

  • Combine the flour, salt, hot water and shortening in a bowl and incorporate into a smooth dough. Allow the dough to rest for 20 minutes, covered.
  • Combine the filling ingredients. Combine the dipping sauce ingredients.
  • Roll the dough out about 1/8 thick. Use a biscuit cutter or a glass to cut out 3 inch circles. Brush a little water over the circles and place about 2 teaspoons of filling in center. Fold the circles in half and press to seal, making sure to squeeze out any air. Stand the dumplings up on the folded side and press slightly so that they stand up nicely.
  • To cook, bring a pot of salted water to boil, and boil the dumplings until cooked through, about 5 minutes. Drain well. The dumplings may be frozen at this point for future use; this recipe makes about 8 dozen. Heat a skillet with about 2 tablespoons oil and fry the dumplings on one side only, until nicely browned. Drain on paper towels.
  • Serve with the dipping sauce.

This recipe is taken from Rachael Ray's "Cooking 'Round the Clock" cookbook. It turns the frozen pierogies you get at any grocery store into a fantastic, cripsy alternative to the usual soggy, boiled ones and makes a yummy snack or sidedish. Make these on game day and your guests will kiss the ground you walk on! Feel free to experiment with different herbs and spices - basil or crushed red pepper might be good.

3 tablespoons butter, softened
1 lb frozen potato pierogi, any kind
1 cup water
salt and pepper
2 tablespoons fresh dill, chopped or 2 teaspoons dried dill leaves
2 tablespoons fresh chives, chopped
2 tablespoons fresh flat-leaf parsley, chopped
1 cup sour cream

Steps:

  • Cover the bottom of a skillet with softened butter. Arrange pierogies in the pan in a single layer. Add 1 cup water. Cover pan and place over medium-high heat. Cook, covered, 8 minutes.
  • Remove lid and cook out any remaining liquid. Let the pierogies stick to the pan and brown in the butter as the liquid evaporates. (I find that this usually takes at least 5 minutes. Try to gently nudge a pierogi - if it doesn't move easily, then it's not done yet.) Remove crisp pierogies from heat and add chopped herbs and season with salt and pepper. Turn to coat and serve with sour cream on the side. Yum!
  • NOTE: If you're using a smaller pan for this and must make two separate batches, I recommend that you wipe out the "old" butter and recoat with fresh butter before starting the second batch.

1 1/2 tablespoons soy sauce
1 tablespoon seasoned rice vinegar
1 tablespoon chili-garlic sauce
1 teaspoon hot chili oil
1/4 lb ground pork
2 ounces uncooked shrimp, shelled, deveined, and finely chopped
1 egg white
1/4 cup minced water chestnut
2 tablespoons minced Chinese celery
1 teaspoon minced cilantro leaf
1/2 teaspoon minced ginger
1/2 teaspoon sugar
1/2 teaspoon salt
1/8 teaspoon sesame oil
1 dash white pepper
24 dumpling wrappers (potsticker)
3 tablespoons cooking oil
1/2-2/3 cup chicken broth or 1/2-2/3 cup water

Steps:

  • To make the sauce: In a medium bowl, combine the soy sauce, vinegar, chili-garlic sauce and hot chili oil. Mix well and reserve.
  • To make the filling: In a large bowl, combine, the pork, shrimp, egg white, water chestnuts, celery, cilantro, ginger, sugar, salt and sesame oil. Season with a little pepper and mix, stirring rapidly in 1 direction until the mixture is well combined and spongy.
  • To make the potstickers: Working in batches, lay 4 potsticker wrappers on a clean surface. Keep the remaining wrappers covered with plastic wrap to prevent drying. Put a heaping teaspoon of filling in the center of each of the 4 wrappers. Brush the edges with water. Fold the wrappers in half over the filling, pinching the edges together to form semi-circles. Put the potstickers on a baking sheet seam-side up and cover with a clean towel. Repeat until all the potstickers have been formed.
  • To cook the potstickers: Heat a large skillet over medium. Add about 1 1/2 tablespoons of oil. When the oil is hot add half the potstickers, seam-side up. Cook the potstckers until the bottoms are golden and crisp, about 4 minutes. Add 1/3 cup broth. Reduce the heat to low, cover, and cook until the liquid is absorbed, 5 to 6 minutes. Transfer the cooked potstickers to a platter. Repeat, cooking the remaining potstickers.
  • Serve the potstickers warm accompanied by the dipping sauce.

1/2 cup soy sauce
1 teaspoon rice vinegar
1/2 teaspoon toasted sesame oil
2 teaspoons sugar
1 whole scallion, trimmed and sliced
1 hot green chili, thinly sliced
2 tablespoons water
1/2 pound ground turkey, chicken, or pork (if using poultry, add 1 teaspoon peanut oil to the mixture)
1 cup finely chopped bok choy
1/2 teaspoon minced peeled fresh ginger
1 small garlic clove, minced
1 teaspoon soy sauce
1/2 teaspoon sesame oil
1/2 teaspoon coarse salt
1 large egg white
36 dumpling wrappers
Peanut oil, for frying

Steps:

  • In a small bowl, combine all ingredients for the dipping sauce. Set aside.
  • In a medium bowl, mix together the turkey, bok choy, ginger, garlic, soy sauce, sesame oil, and salt. Stir in the egg white.
  • Working with 6 at a time, lay down the dumpling wrappers on a work surface. Spoon 1 teaspoon of filling onto each one. Lightly wet the edge of each wrapper with water. Fold the dough over and pinch around the edges. This is easiest done by picking up each dumpling and pinching around the edges with thumb and forefinger. Place on a baking sheet and cover with plastic wrap to keep the dumplings from drying out. Repeat until all filling is used.
  • To cook the dumplings, heat a large skillet and swirl some oil around to coat the pan. Add a single layer of pot stickers. Cook for 2 to 3 minutes (2 minutes longer if frozen), until they begin to turn golden on the underside. Don't move them. Add 1/4 cup of water to the pan and cover immediately. Cook for 5 minutes, or until the meat is cooked through and the dumplings release from the pan. Serve immediately with the dipping sauce.

8 green onions, divided (scallions)
1 1/2 cups low sodium chicken broth
1/2 cup water
2 tablespoons canola oil or 2 tablespoons butter
4 slices fresh ginger (each slice 1/4-inch thick)
10 potato & cheese pierogies (frozen)
1/4 cup fresh cilantro leaves (chopped)
1 tablespoon toasted sesame seeds
1/3 cup soy sauce
1/4 cup orange juice
4 teaspoons rice wine vinegar
1 1/2 teaspoons finely minced crystallized ginger
1 tablespoon asian hot chili oil
2 teaspoons minced garlic

Steps:

  • To prepare dipping sauce; combine soy sauce, orange juice, rice wine vinegar, crystallized ginger, hot chili oil and minced garlic in a small mixing bowl; set aside.
  • Cut 6 green onions into 5" lengths. Make into "brushes": slice into thin strips, leaving bottoms intact; immerse in a bowl of ice water and set aside.
  • Chop remaining 2 of the green onions.
  • In a large nonstick skillet over high heat, bring broth, 1/2 cup water, peanut oil or canola oil or butter, and ginger to a boil.
  • Add pierogies in a single layer.
  • Reduce heat to med-high.
  • Cook uncovered, until all liquid is absorbed and pierogies begin to sizzle, about 10 minutes.
  • Remove ginger.
  • Add chopped green onions.
  • Continue to cook, shaking pan often without turning peirogies, until golden and crisp on the bottom, 3-5 minutes, rearranging pierogies for even browning, but do not turn.
  • Remove to platter; sprinkle with chopped cilantro and toasted sesame seed.
  • Serve with Orange-Soy Dipping Sauce and drained green onion "brushes".
