- For Pico: Combine all vegetables. Add lime juice, olive oil, salt, pepper, and cayenne, and stir. For best taste, allow to chill for an hour.
- For burgers: Mix all ingredients together except for salt and pepper, and form into six medium patties. Sprinkle freshly ground pepper and salt on both sides, to taste. Grill on medium high for about ten minutes, flipping once. Juice should run clear. For a fresh new take, serve burger bun-less with the pico. Or, serve on bun with monteray jack cheese and pico. Great with grilled pineapple and rice.
- NOTE: make sure the jalepenos are completely seeded, and that the white inner ribs have been removed.
TEXAS BEST PICO DE GALLO
In Texas and Mexico, this is known as pico de gallo, but in Central America it's known as Chismol. It's best with fresh vegetables from the garden or farmers market. Tip: do not overchop ingredients; onion and tomatoes should not be mushy. We use pico de gallo as a relish, dip, topping for baked potatoes, Mexican food or fish, or mix it with pinto beans, black-eyed peas or rice.

- 1. Finely mince the tomatoes and onions. Chop the cilantro. Add to a stand mixer with the ground beef, onions, tomatoes, cumin, peppers, hot sauce, cilantro, and garlic.
- 2. I used my mixer to make the burger mixture.
- 3. Then form into patties.
- 4. Hubby grilled them for 7 to 10 minutes on each side.
- 5. Top them with the Monterey jack cheese.
- 6. We put them on burger rolls and topped them with avocado and sour cream.
- 7. Hubby topped his with diced fresh jalapenos from the garden. I put a little salsa on mine.
