It's not a party without deviled eggs! This classic deviled eggs recipe is great for all kinds of gatherings, whether an Easter brunch, a summer picnic, or just because.

1 dozen large eggs
2 teaspoons Dijon mustard
1/3 cup mayonnaise
1 tablespoon minced shallot or onion
1/4 teaspoon Tabasco sauce
Salt and pepper, to taste
Paprika, to taste

Steps:

  • Steam the eggs: (See how to steam hard boiled eggs .) Fill a saucepan with an inch of water and insert a steamer basket. Bring the water to a boil and place the eggs in the steamer basket. (If you don't have a steamer basket, you can just place the eggs directly in about 3/4 inch of water.) Cover the pan and let the eggs steam from the boiling water for 17 minutes for 12 large eggs, or 15 minutes for 6 large eggs. Reduce cooking time by a couple minutes if using regular size (not large) eggs. Then shock with cold water and peel. Have a pressure cooker? You can also make easy to peel hard cooked eggs in a pressure cooker .
  • Prep the eggs: Peel the eggs. Using a sharp knife, slice each egg in half, lengthwise. Gently remove the yolk halves and place in a small mixing bowl. Arrange the egg white halves on a serving platter.
  • Make the filling: Using a fork, mash up the yolks and add mustard, mayonnaise, onion, tabasco, and a sprinkling of salt and pepper. Add more mayonnaise as necessary to get to the creamy consistency you want.
  • Pipe or spoon mixture into egg white halves: Pipe through a piping bag (star tip) or simply use a spoon to put the egg yolk mixture into the egg white halves. Sprinkle with paprika.

My dad loves these stuffed eggs, which are a Southern favorite. I've been cooking since I became a teenager, and this is one of my original recipes.

12 hard-boiled large eggs
1/2 cup mayonnaise
1/4 cup sweet pickle relish, drained
1 tablespoon honey mustard
1 teaspoon garlic salt
1/2 teaspoon Worcestershire sauce
1/4 teaspoon pepper
Fresh parsley sprigs, optional

Steps:

  • Slice eggs in half lengthwise; remove yolks and set whites aside. In a small bowl, mash yolks with a fork. 12 large hard-boiled eggs, peeled
⅓ cup mayonnaise
1 tablespoon pickle relish
1 teaspoon Dijon mustard
1 teaspoon yellow mustard
1 teaspoon apple cider vinegar
½ teaspoon salt
¼ teaspoon ground black pepper
1 teaspoon ground paprika

Steps:

  • Slice eggs in half lengthwise and remove yolks. Place yolks in a medium bowl and set whites aside.
  • Mash yolks with a fork. Add mayonnaise, relish, Dijon, yellow mustard, vinegar, salt, and pepper; stir until well combined and smooth. Transfer to a large zip-top bag.
  • Arrange egg whites on a tray. Snip off the bottom corner of the zip-top bag. Fill each white with about 1 1/2 to 2 teaspoons filling. Sprinkle with paprika.

12 large eggs
kosher salt
1/2 cup mayonnaise (preferably homemade)
2 teaspoons Dijon mustard
2 teaspoons sweet pickle relish
1 pinch curry powder
1 pinch cayenne
1 pinch sea salt
2 teaspoons snipped chervil or 2 teaspoons chives

Steps:

  • Put the eggs in a large saucepan with enough water to cover by 2 inches.
  • Add some salt.
  • Bring to a boil over high heat.
  • As soon as it boils, take the pan off the heat, cover, and let stand for 10 minutes.
  • Pour off the hot water, fill the pan with cold water, and let stand about 10 more minutes.
  • Gently crack the shells under water to loosen, then remove the shells.
  • Halve the eggs and scoop out the yolks.
  • Mash the yolks well, then add the remaining ingredients except the chervil or chives.
  • Mix well.
  • Taste, adjust the seasonings.
  • Fill the egg halves withe the filling.
  • Can be prepared about 4 hours before serving.
  • Sprinkle with the chervil or chives just prior to serving.
