I love pickled asparagus but got tired of spending so much money on tiny little jars and decided to pickle my own. I also like it spicy but feel free to halve the crushed red pepper or omit it altogether if spice is not your thing.

1 pound thick asparagus spears, trimmed
1 tablespoon minced garlic
2 teaspoons crushed red pepper flakes
1 teaspoon mustard seed
½ teaspoon pink peppercorns
1 ¾ cups distilled white vinegar
1 cup water
1 tablespoon salt
1 teaspoon white sugar

Steps:

  • Place trimmed asparagus in a quart-sized canning jar. Add garlic, pepper flakes, mustard seed, and peppercorns.
  • Combine vinegar, water, salt, and sugar in a medium saucepan over medium heat; bring to a boil. Reduce heat and simmer for 5 minutes. Turn heat off.
  • Pour vinegar mixture over the asparagus. Screw on the lid and let sit until lid has sealed, about 1 hour.
  • Place in the refrigerator until pickled, at least 2 days.

6 pounds fresh asparagus
3 large garlic cloves, halved
6 teaspoons dill seed
6 teaspoons mustard seed
36 whole peppercorns
2 quarts water
2-1/2 cups white vinegar
1/2 cup sugar
3 tablespoons canning salt

Steps:

  • Wash, drain and trim asparagus; cut into 4-1/2-in. spears. Discard ends or save for another use. Place asparagus in a large container; cover with ice water. In each of six 1-pint jars, place half of a garlic clove, 1 teaspoon dill seed, 1 teaspoon mustard seed and six peppercorns., In a Dutch oven, bring the water, vinegar, sugar and salt to a boil. Drain asparagus; pack in jars to within 1/2 in. of top. , Carefully ladle hot mixture into hot pint jars, leaving 1/4-in. headspace. Remove air bubbles, wipe rims and adjust lids. Process for 20 minutes in a boiling-water canner.

16 pounds fresh asparagus, trimmed
2 quarts white vinegar
1 cup canning salt
1 tablespoon mixed pickling spices
1 garlic clove, minced

Steps:

  • In a stockpot, bring 6 qts. of water to a boil. Cook asparagus in batches, uncovered, for 2-1/2 minutes. Remove and rinse in cold water., In a Dutch oven, combine the vinegar, salt, pickling spices, garlic and remaining water; bring to a boil. Pack asparagus in quart jars to within 1/2 in. of top. , Carefully ladle hot mixture into hot quart jars, leaving 1/2-in. headspace. Remove air bubbles, wipe rims and adjust lids. 1 1/2 quarts water
1 quart white vinegar
5 tablespoons canning salt (plain, non-iodized)
2 tablespoons pickling spices
7 lbs fresh asparagus
4 garlic cloves (1 per quart jar)
4 hot chili peppers (i per quart jar)

Steps:

  • Bring the water, vinegar, and salt to a boil for 15 minutes.
  • Remove all the cloves from the pickling spice (or as much as you can).
  • Wrap the remaining spice in a cheese cloth or tea holder and hang in the vinegar mixture.
  • Break off the ends of the asparagus and blanch for 1 to 1-1/2 minutes, then plunge into ice water.
  • Place 1 garlic clove and 1 pepper into each quart jar. Pack the asparagus into the jars standing on end, then pour the vinegar mixture into the jars making sure its very hot at the time to ensure a good seal on the jars.
  • Wipe rims, place lids and screw on bands fingertip-tight.
  • Process in a boiling water bath for ten minutes.
  • Store in pantry for 2-1/2 to 3 months before use.

Like baking bread or making a slow-cooked tomato sauce, preserving offers primal satisfactions and practical results.

About 5 pounds asparagus, thin to medium-thick
2 1/4 cups distilled white or white wine vinegar (labeled at least 5 percent acidity)
4 tablespoons salt
2 garlic cloves, slivered
1 teaspoon dill seed (optional)
1/4 teaspoon hot pepper flakes
1/4 teaspoon whole allspice (optional)
1/4 teaspoon cumin seed (optional)
1/4 teaspoon coriander seed (optional)
Hard-boiled eggs for serving
extra virgin olive oil for serving
freshly ground black pepper, for serving

Steps:

  • Cut bottoms off asparagus to make them fit upright in a pint jar. Asparagus tips should be at least 1/2 inch below lid. (Reserve bottoms for another use.)
  • Pour about 2 inches water into a skillet large enough to hold asparagus lying down; bring to a boil. In batches, blanch asparagus: place in skillet, bring water back to a boil, and then immediately remove and run under very cold water or dunk in ice water. Set aside to drain.
  • Combine remaining ingredients in a saucepan with 2 1/4 cups vinegar and bring to a boil. Stir occasionally and cook just until salt dissolves; turn off heat.
  • Prepare 4 clean, hot pint jars and bands, and new lids. (Dip in boiling water, or run through dishwasher.) When jars are dry but still hot, pack asparagus into them, wedging spears in tightly. There should be enough for 3 or 4 full jars: do not half-fill jars.
  • Pour in vinegar solution, just to barely cover tips of asparagus. Make sure to leave 1/2 inch air space above vinegar solution. Distribute garlic slivers and spices evenly among jars. Wipe rims with a clean paper towel dipped in hot water, place lids on top and screw on bands. (Not too tight, just firmly closed.)
  • Prepare a boiling-water bath in a deep pot with a rack. Place jars on rack and pour water over them, making sure water covers jars by 2 to 3 inches. Bring water back to a rolling boil over high heat, start a timer for 10 minutes, then reduce heat and gently boil. When timer goes off, turn off heat and wait 5 minutes before removing jars with jar lifter or tongs. Let cool on counter, untouched, 4 to 6 hours. After 12 to 24 hours, check seals: lift each jar up by the lid, and press the lid to make sure the center is sucked down tightly.
  • Store in a cool, dark, dry place (not refrigerator) for 4 weeks before using, or up to 1 year. Refrigerate after opening. To serve, drain off pickling liquid and arrange asparagus on plates. Add hard-boiled egg, drizzle with oil and shower with black pepper.

5 teaspoons mixed pickling spices

3 cups cider vinegar
2/3 cup sugar

  • Wash, drain and trim asparagus; cut into 5-3/4-in. spears (discard ends or save for another use). Pack asparagus into five 1-quart jars to within 1/2 in. of top. Place 1 tablespoon dill seed and 1 teaspoon pickling spices in each jar., In a Dutch oven, bring water, vinegar, sugar and salt to a boil. Pickled asparagus is delicious, and this recipe was given to me by my best friend, Carole. We get our asparagus in the spring from the Yakima Valley in central WA. Use the freshest dill you can find and pack the spears in quart jars making sure all spears are covered with pickling juice. These are great with salads, in cocktails, or served as a snack. Check out the price at the grocery store. You'll be glad you made your own.

4 -5 lbs fresh asparagus, washed and bottoms snapped
1 large white onions or 1 large yellow onion, thinly sliced
2 heads garlic
2 1/2 cups white vinegar
2 1/2 cups water
2 tablespoons pickling salt (non iodized salt)
fresh dill

Steps:

  • Clean and sterilize wide mouth canning jars.
  • Clean garlic and pound with with chef's knife so it cracks a bit.
  • Wash and clean asparagus.
  • Remove tough bottom.
  • Heck you know how to snap asparagus.
  • Prepare it in lengths so it will fit into jars.
  • Save the tender bottoms for dinner.
  • Pack jars with some onion, garlic, dill and asparagus.
  • The amount of each is up to your personal taste.
  • This is the hardest part.
  • Mix vinegar, water, and salt in a pot.
  • Bring to a boil Pour hot liquid into jars making sure that spears are covered but not touching the metal sealing lid.
  • Wipe any spills from lip of jars.
  • Burp air bubbles from jars.
  • Seal jars with lid and ring.
  • Process jars in a canner (hot water bath).
  • Make sure tops of jars are covered with 1 inch of water.
  • Allow to boil 20 minutes.
  • Start timing when water reaches a boil.
  • Ready to eat in 4 to 6 weeks.

1 bunch fresh asparagus spears
1 cup water
1 cup white wine vinegar
¼ cup brown sugar
4 cloves garlic, crushed
1 jalapeno pepper, seeded and julienned
4 sprigs fresh thyme
2 tablespoons Old Bay Seasoning TM
2 bay leaves
1 teaspoon salt
6 whole black peppercorns

Steps:

  • Trim the bottoms off of the asparagus, and pack loosely into a 1 quart jar.
  • Combine the water, white wine vinegar, brown sugar, garlic, jalapeno, thyme sprigs, bay leaves, salt and whole peppercorns in a saucepan. Bring to a boil, and boil hard for 1 minute.
  • Pour the hot liquid over the asparagus in the jar, filling to cover the tips of the asparagus. Cover, and cool to room temperature. Store in the refrigerator for 24 hours to blend flavors before serving.

30 asparagus spears
1/3 c course salt
2 qt cold water
1 2/3 c distilled white vinegar
2/3 c sugar
1 tsp course salt
1 tsp mustard seed
1 1/2 tsp dill seed
1 white onion sliced inti rings
1/2 tsp chili flakes
2 sprig(s) fresh dill

Steps:

  • 1. Trim the cut end of the asparagus spears, and cut into 3 inch lengths. Place them in a large bowl with 1/3 cup salt, and cover with water, let stand for 2 hours. Drain and rinse under cool water and pat dry.
  • 2. Sterilize two pint size wide mouth jars in simmering water for 5 minutes.
  • 3. In a saucepan over medium heat, combine the vinegar, sugar, 1 tea. salt, mustard seed, dill seed, and onion rings. Bring to a boil and boil for 1 minute.
  • 4. Pack the asparagus spears, (tip end up) in the hot jars leaving 1/2 of head space from the rim. Tuck one dill sprig in each jar and sprinkle in 1/4 tea. of red pepper flakes. Pour hot pickling liquid into the jars filling to within 1/4 inch of the rim. Wipe rim with a clean dry cloth seal with lid and process in a boiling water bath for 10 minutes.
  • 5. Cool to room temperature. Check seals when cool by pressing the center of the lid, it should not move . Label and date, Store in a cool dark place. If any jars have not sealed properly, refrigerate and eat within two weeks.

2 teaspoons dry dill weed

3 cups cider vinegar

Steps:

  • Sterilize 7 pint canning jars,lids & rings. Keep warm & clean.
  • Wash any sand from asparagus and cut to fit jars.
  • Place asparagus,onion 2 pieces of garlic, 1/4 teaspoons dill and the pepper into each jar.
  • Into a pan place vinegar, water and salt. Place on high heat and bring to a boil for 5 minute.
  • Pour some of the vinegar solution into each jar. Slide a knife carefully around the filled jar to release any air bubbles. Wipe rims and jar sides clean and place lid and ring on and hand tighten. Place on a rack into a boiling water bath,making sure lids are covered with 1 inch of water,bring water to another boil and time for 20 minutes.
  • Carefully remove and place onto a towel to cool. Ready to eat in one month or later.

7 ounces pork shoulder
2 ounces orange juice
Juice of 1/2 lemon
Canola oil, for frying
2 tablespoons flour
1 tablespoon cornstarch
Kosher salt and freshly ground black pepper
1 clove garlic, crushed
1 ounce red wine vinegar
1 teaspoon sugar
1 slice red onion, cut into a julienne
1/2 tablespoon unsalted butter
1 clove garlic
4 to 5 asparagus spears, halved (about 2 ounces)
Kosher salt and freshly ground black pepper
1/2 cup fresh basil leaves
2 tablespoons olive oil
2 teaspoons pine nuts
1/3 teaspoon minced garlic
5 teaspoons grated Parmesan
Kosher salt and freshly ground black pepper

Steps:

  • For the pork: Marinate the pork in the orange juice, lemon juice and garlic in a baking dish in the refrigerator overnight.
  • Preheat the oven to 280 degrees F. Remove the pork from the marinade, transfer to a baking dish and cover with foil. Roast until tender, about 4 hours. Let cool until firm.
  • Heat the oil in a deep fryer or large pot. Combine the flour, cornstarch, salt and pepper in a shallow bowl. Dredge the pork in the flour mixture and fry until warmed through and crispy, 4 to 5 minutes.
  • For the pickled onions: Bring the vinegar to a boil in a small saucepan. Add the sugar and stir to dissolve. Pour over the red onions in a heat-proof bowl. Let stand until room temperature and then refrigerate overnight.
  • For the asparagus: Heat the butter and garlic in a skillet over medium-high heat. Add the asparagus and saute until crisp-tender, about 5 minutes. Season with salt and pepper.
  • For the pesto: Puree the basil, olive oil, pine nuts and garlic in a blender. Transfer the mixture to a bowl and fold in the Parmesan and season with salt and pepper.
  • For plating: Put the asparagus on a plate. Add the crispy pork and top with the pesto and pickled red onions.

1 tsp mustard seed

1 small onion thinly sliced

  • 1. Mix pickling salt, vinegar, and sugar together in pan on stove and bring to a boil and cook until sugar has dissolved.
  • 2. Pack all ingredients in jar and pour hot liquid over top.

ASPARAGUS WITH PROSCIUTTO AND PICKLED SHALLOTS

1 shallot, thinly sliced and separated into rings
1 tablespoon yellow mustard seeds
1/4 cup champagne vinegar
2 tablespoons sugar
2 sprigs thyme, plus 2 teaspoons leaves
1 bunch thin asparagus, ends trimmed
2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground pepper
4 ounces thinly sliced prosciutto (8 to 10 slices)

Steps:

  • Put the shallot and mustard seeds in a small bowl. Combine the vinegar, sugar and thyme sprigs in a small saucepan and bring to a boil. Reduce the heat and simmer, stirring, until the sugar dissolves, 1 to 2 minutes. Pour the vinegar mixture over the shallot mixture and stir. Refrigerate 30 minutes.
  • Preheat the broiler. Spread the asparagus on a rimmed baking sheet; drizzle with the olive oil and sprinkle with the thyme leaves. Season with 1/2 teaspoon salt and a few grinds of pepper and toss until coated. Broil until crisp-tender and lightly browned in spots, about 4 minutes.
  • Transfer the asparagus to a platter. Discard the thyme sprigs from the shallot mixture and spoon over the asparagus. Serve with the prosciutto.

3 cups white-wine vinegar
1 1/2 teaspoons whole coriander seeds
6 strips (1 inch wide) fresh lemon zest
2 bay leaves
Coarse salt
1/3 cup sugar
4 bunches spring onions (red or white), trimmed to height of a 1-quart jar
1 bunch thin asparagus, trimmed to height of a 1-quart jar

Steps:

  • Bring 3 3/4 cups water, the vinegar, coriander seeds, lemon zest, bay leaves, 2 tablespoons salt, and the sugar to a boil in a medium saucepan. Add onions, and return to a boil. Reduce heat, and simmer 4 minutes.
  • Divide asparagus between two 1-quart jars. Add onions, and divide liquid between jars. Let cool to room temperature, about 1 hour. Cover, and refrigerate at least 1 day and up to 1 month.

CANNED PICKLED ASPARAGUS

7 lb fresh asparagus washed and trimmed
2 jalapeno pepper
8 clove garlic
2 Tbsp red curry paste
2 Tbsp dill weed
4 Tbsp mustard seed
10 c white vinegar
3 c water
3 c sugar
3 Tbsp pickling salt

Steps:

  • 1. Cut the asparagus to the length that would fit into the jars leaving the head space. Save the little nubs that was cut off discarding any woody parts.
  • 2. Add the jalapeno, garlic, dill, mustard seed and curry paste to a food processor and process until well mixed. Set aside.
  • 3. Mix the vinegar, water, sugar and salt together in a pot and bring to a boil. Cook until all is dissolved.
  • 4. Sanitize 7 qt jars. place equal amounts of jalapeno mixture in each one. Lay side ways and stuff the whole asparagus in each jar. You should have two jars left over for nubs.
  • 5. Ladle the vinegar mixture in each jar leaving head space. Wipe the rim and seal the jars Place in boiling water bath for 15 minutes

This is a wonderful pickled asparagus recipe. When this veggie is at a good price, I always make lots of it, and store away for the winter...great along side with just about any dish. Note cooking time is boiling time for the jars.

1 medium onion, thinly sliced
4 lbs fresh asparagus
1 red bell pepper, seeded,and cut into thin strips
5 cups white wine vinegar
2 cups water (distilled bottled if possible)
4 tablespoons sugar
4 tablespoons pickling spices
2 teaspoons pickling salt or 2 teaspoons kosher salt

Steps:

  • Place several slices of onion in the bottom of two 1-quart jars.
  • Trim the asparagus to fit in the jars; pack them in with the cut-end facing down.
  • Place the pepper strips in between asparagus.
  • Combine the remaining ingredients in a saucepan, and boil over moderate heat for 10 minutes.
  • Pour into the jars, leaving 1/2-inch head space.
  • Seal the jars according to the manufacturer's directions; process for 20 minutes in boiling water bath.

PICKLED ASPARAGUS

6lbs. fresh asparagus
(recipe to yield 6 pints of asparagus)
3lg. garlic cloves, halved
6 tsp. dill seed
6 tsp. mustard seed
36 whole peppercorns
2 qt. water
2.5cup white vinegar
1/2cup sugar
3 tblsp canning salt (alt. kosher/any non-iodized salt).
*50% brine exactly enough for 3x1.5pints

Steps:

  • Wash, drain, trim asparagus. Cut & dry fit to jars, 1.5pint tall size desired (already too much trimmed pieces to discard, tried asp. end soup) and remainder of recipe tailored to 1.5 pint size. Blanch spears in jar batches in boiling water (approx 10sec) followed by ice bath. Prepare brine with water, vinegar, sugar and salt mixed until boiling in sauce pan. Load each prepared sterilized jar (dishwasher) and (& lids boiled water in sauce pan) with 1med size garlic clove, 1.5tsp dill seed, 1.5tsp mustard seed and 10 peppercorns. Additionally, I added a couple shakes of hot pepper flakes as well. Pack asparagus to jars to within 1/2in. of top of jar. Ladel hot brine to jars leaving 1/4in. head space. Tap out air bubbles, wipe rims, and adjust lids. Process in pre-warmed boiling water canner for 20min.

30 asparagus spears
⅓ cup coarse salt
2 quarts cold water
1 ⅔ cups distilled white vinegar
⅔ cup sugar
1 teaspoon coarse salt
1 teaspoon mustard seed
1 ½ teaspoons dill seed
1 white onion, sliced into rings
½ teaspoon chili pepper flakes
2 sprigs fresh dill

Steps:

  • Trim the cut end of the asparagus spears, and cut them into 3 inch lengths. Place them in a large bowl with 1/3 cup salt, and cover with water. Let stand for 2 hours. Drain and rinse under cool water, and pat dry.
  • Sterilize two pint size wide mouth jars in simmering water for 5 minutes.
  • In a saucepan over medium heat, combine the vinegar, sugar, 1 teaspoon of salt, mustard seed, dill seed and onion rings. Bring to a boil, and boil for one minute.
  • Pack the asparagus spears, tips up, in the hot jars leaving 1/2 of space from the rim. Tuck one dill sprig into each jar, and sprinkle in 1/4 teaspoon of red pepper flakes. Pour hot pickling liquid into the jars, filling to within 1/4 inch of the rim. Wipe rims with a clean damp cloth, and seal with lids. Process in a boiling water bath for 10 minutes.
  • Cool to room temperature. Check seals when cool by pressing the center of the lid. It should not move. Label and date; store in a cool dark place. If any jars have not sealed properly, refrigerate and eat within two weeks.

Steps:

  • Snap off tough ends of asparagus.
  • Bring a large pot of water to a boil.
  • Drop in asparagus and cook 2 minutes.
  • Drain and rinse under cold water.
  • Cut spears to the height of the pickle jar.
  • Place in juice.
  • Cover with lid.
  • Refrigerate at least 1 day.
