PICKLE COLESLAW

1/2 cup honey
1/2 cup rice wine vinegar
2 tablespoons mayonnaise
1 tablespoon spicy mustard
1 cup extra-virgin olive oil
Kosher salt and freshly ground black pepper
1 head (2 pounds) green cabbage, thickly sliced (about 12 cups)
1 small red onion, thinly sliced
1 cup Chinese celery or celery leaves, roughly chopped
Your favorite pickles, chopped, plus juice, optional

Steps:

  • Whisk together the honey, vinegar, mayonnaise and mustard in a small bowl. Slowly drizzle in the oil, whisking to combine. Season well with salt and pepper. (Alternatively, add the honey, vinegar, mayonnaise and mustard to a mason jar with a lid, cover and shake well. Add the oil and shake well once more.)
  • Combine the cabbage, red onion, Chinese celery and pickles to taste in a large bowl. Pour the dressing over the vegetables and mix well. Taste and season with salt and pepper. For an extra kick of flavor, mix in some pickle juice if using to taste. Refrigerate until ready to serve.

2 russet potatoes, baked and chilled
2 tablespoons horseradish (optional, but recommended!)
2 tablespoons oil
salt and pepper
4 (6 ounce) salmon fillets

Steps:

  • Preheat oven to 375°F.
  • Grate potatoes through the large holes of a box grater into a medium sized bowl.
  • Stir in horseradish, oil and salt and pepper mixing well.
  • Pat crust onto top surface of filets and place in a baking pan or on a baking sheet.
  • Bake until salmon is cooked through and the crust is golden and crispy, about 15 minutes.

8 eggs
1 1/2 cups milk
half a loaf whole wheat bread, cubed and toasted in the oven
8 small breakfast sausage, sliced
1 large onion, sliced
1 cup cheddar cheese, grated
3 sprigs fresh tarragon, leaves removed from stalk and chopped
salt and pepper

Steps:

  • Preheat oven to 350°F.
  • Place a large skillet over medium-high heat and add sausages and onions. Saute until golden brown.
  • Meanwhile, whisk eggs together with milk and season with salt and pepper. Add cheese, bread cubes, sausage and onion mixture and tarragon.
  • Pour into a sprayed 9" x 9" baking dish and bake for 35 minutes or until set.
