3 pounds potatoes (about 8 medium)
6 hard-boiled large eggs, chopped
3 celery ribs, chopped
6 green onions, chopped
2 medium dill pickles, finely chopped
1-1/2 cups mayonnaise
1/4 cup dill pickle juice
4-1/2 teaspoons prepared mustard
1 teaspoon celery seed
1 teaspoon salt
1/2 teaspoon pepper
Optional: Leaf lettuce and dill pickle slices

Steps:

  • Place potatoes in a Dutch oven or large kettle and cover with water; bring to a boil. Reduce heat; cover and simmer until tender, 20-30 minutes. Drain and cool., Peel and cube potatoes; place in a large bowl. Add eggs, celery, onions and pickles. , In a small bowl, combine mayonnaise, pickle juice, mustard, celery seed, salt and pepper until blended. Pour over potato mixture; mix well. Cover and refrigerate at least 4 hours. If desired, serve in a lettuce-lined bowl and top with pickle slices.

This recipe was brought to The Times by Joan Nathan and was featured in her cookbook "Quiches, Kugels, and Couscous: My Search for Jewish Cooking in France." It's a hearty root vegetable salad enriched with hard-boiled eggs and tossed with a lively Dijon vinaigrette.

2 medium beets
5 tablespoons olive oil
Salt to taste
2 small (not tiny) potatoes
1 large carrot, peeled
2 tablespoons red or white wine vinegar
1 clove garlic, minced
1 teaspoon Dijon mustard
Dash of sugar
Freshly ground pepper to taste
1 large pickle, diced
1 tart green apple, diced
2 hard-boiled eggs, peeled and roughly chopped
1 tablespoon chopped fresh dill

Steps:

  • Preheat the oven to 350 degrees Fahrenheit and line a baking sheet with aluminum foil.
  • Cut off the tops of the beets, scrub them, and place them on the baking sheet. Coat them with 1 tablespoon of the olive oil, and roast them in the oven for an hour. Remove from the oven, and when they are cool enough to handle, peel and cut them into 1/2-inch cubes.
  • Bring a small pot of salted water to a boil, and cook the potatoes until they are tender, about 15 minutes. Remove from the water and allow to cool before peeling and cutting into 1/2-inch cubes. Cook the carrot for about 5 minutes in that same boiling salted water. Remove with a slotted spoon, cool and cut into 1/2-inch rounds.
  • Whisk together the vinegar, garlic, mustard, sugar and salt and freshly ground pepper to taste in a salad bowl. Stream in the remaining 4 tablespoons olive oil. Toss in the beets, the potatoes, the carrot, the pickle, the apple and the eggs. Stir until everything is just coated with the vinaigrette. Serve at room temperature garnished with fresh dill, or refrigerate and serve the next day.

3/4 cup mayonnaise
3/4 cup dill pickle, diced
4 scallions, sliced, use all of it (green onions)
1/4 cup fresh parsley, chopped
1/2 teaspoon salt (I use Aunt Jane's crazy mixed up salt)
1/2 teaspoon pepper

Steps:

  • Peel and cube potatoes. Boil until just tender.
  • Mix all other ingredients in a medium size bowl.
  • Drain cooked potatoes and let cool completely.
  • Mix potatoes into mayonnaise mixture.
  • Serve or refrigerate until ready to serve. It tastes best if you refrigerate it at least 4 hours, so that flavors meld.

4 stalks celery, chopped small
1 medium onion, chopped finely
1 dozen hard-boiled egg, cut in bite sized pieces
4 -5 med-large dill pickles, chopped
1 tablespoon salt (more to taste)
1 tablespoon pepper (more or less)
2 -3 tablespoons mustard (I like guldens brown)
2 tablespoons pickle juice
1 cup Best Foods Mayonnaise (or more to taste)

Steps:

  • Bake potatoes (microwave or oven) as they don't get soggy like boiled ones, cool to handle. Peel and cut in large chunks.
  • Use large bowl to mix potatoes, celery, pickles, onion and eggs. Mix carefully so as not to mash potatoes.
  • Mix dressing by mixing last 4 ingredients together in a small bowl or just add to salad bowl & mix. Stir to coat all ingredients and taste for saltiness.
  • Chill several hours or overnight. Taste for seasoning & add more of anything you like (salt, mustard, pickles, olives etc). If too dry add more mayo.

7 cups red potatoes, sliced into disks
1/2 cup vinaigrette or 1/2 cup Italian salad dressing
1/2 cup sour cream
1/2 cup mayonnaise
2 teaspoons horseradish
3 slices bacon, cooked and crumbled
3 tablespoons sweet pickle relish
3 green onions, finely chopped
2 tablespoons fresh dill
1 teaspoon salt and pepper (to taste)

Steps:

  • Slice the unpeeled potatoes into disks.
  • Cook the sliced potatoes in slightly salted water until just barely tender then rinse and drain them.
  • Put them in a bowl while still hot and pour the ½ cup of vinaigrette or Italian salad dressing over them. The heat helps the potatoes to absorb the flavor of the dressing better.
  • Let the potatoes marinate in the refrigerator for about two hours, then lift them out of the dressing.
  • In another bowl, blend together the ½ cup of sour cream, the ½ cup of mayonnaise, the 2 teaspoons of horseradish, the 3 crumbled slices of bacon, the 3 tablespoons of pickle relish, the 3 chopped green onions, the 2 tablespoons of chopped dill and the salt and pepper to taste.
  • Blend all of these ingredients together and then fold in the potatoes, refrigerate for at least two hours to chill and serve.

  • Place potato, whole with skin on, in a pot and cover with water. Turn stove onto medium heat. Once boiling, turn heat down to medium-low and place lid over tilted a bit to let steam out. Boil for 50 mins. Remove from heat. Drain water. Pour cold water over for about one minute. Remove from water and peel. The peel will come off easily, but be careful not to burn yourself as potato will still be hot. Chop potato coursely, and place in a bowl. Sprinkle with salt and pepper. Pour liquid from pickle jar over potato. Let sit for 10 mins. so that the potato has a chance to absorb the flavor from the liquid. Mix in the rest of the ingredients. Serve at room temp. or chilled.

1 cucumber, peeled, quartered, seeded, and cut into 1/4-inch slices
1 cup white vinegar

1 onion, minced
1/4 cup olive oil

  • Fresh Cucumber: Stir sugar, cucumber, ½ cup vinegar, dill, and ½ teaspoon salt together in bowl; set aside while preparing potatoes.
  • Bring potatoes, remaining vinegar, 1 tablespoon salt, and 8 cups water to boil in large pot. Reduce heat to medium and simmer until potatoes are just tender, 10 to 15 minutes. Drain potatoes and return to pot.
  • Dressing: Meanwhile, fry bacon in large skillet over medium heat, stirring occasionally, until brown and crisp, 8 minutes. With slotted spoon, transfer bacon to paper towel-lined plate; pour off and discard all but 2 tablespoons bacon grease. Add onion and oil to skillet and cook, stirring occasionally, over medium heat until onion is softened and beginning to brown, about 4 minutes.
  • Drain cucumbers and reserve juice, set brined cucumber aside. Whisk cucumber juice, mustard, and 1 teaspoon pepper into skillet; bring to simmer.
  • Pour dressing over warm potatoes, stir to combine, and let sit until slightly cooled and potatoes have absorbed dressing, about 10 minutes.

  • Steam potatoes until just tender, about 12 minutes. Transfer to large bowl. Cool potatoes slightly. Drizzle with vinegar; toss to coat.
  • Heat oil in heavy medium skillet over medium-low heat. Add onion; sauté until beginning to soften, about 2 minutes. Stir in garlic and Old Bay seasoning; sauté 1 minute. Remove from heat. Cool to room temperature. Add onion mixture to potatoes. Add remaining ingredients. Toss gently to combine. Season salad with salt and pepper. (Can be prepared 1 day ahead. Cover and refrigerate. Bring to room temperature before serving.)

Bread and Butter Pickle Potato Salad image

My boyfriends grandmother used to make this potato salad, she was from Germany. You can make this a day ahead to help meld the flavors. This has a sweet creamy dressing that everyone loves. Don't let the pickles fool you, they are delicious in the potato salad.

5 lb red potatoes
2 medium onions, chopped
2 c celery diced
1/2 c bread and butter pickles, diced
2 c miracle whip
1/2 c bread and butter pickle juice strained
2 tsp sugar
6 hard boiled eggs
1 lb bacon, cooked and crumbled

Steps:

  • 1. Peel and cut potatoes into bite sized pieces, Cover with cold water and boil till potatoes are tender 20-30 minutes. Drain and return to pot. Turn heat back on for a few minutes to get rid of any excess water. Transfer potatoes to a large bowl to cool
  • 2. Chop onions, celery, eggs and pickles into small pieces. When the potatoes have cooled add the veggies and bacon bits to the potatoes. Toss to evenly distribute. If you want more of any ingredient you can add them to your salad.
  • 3. In a separate bowl add 2 cups of Miracle Whip, sugar and some of the pickle juice. With a whisk blend the dressing adding more pickle juice until you get a nice consistency to pour over the potatoes. Be sure you strain the pickle juice before you add it to the dressing.
  • 4. Note: You can use Hormel Real Bacon bits instead of cooking the bacon. I usually add some to the top of my salad.

PENNY'S DELICIOUS NO PICKLE POTATO SALAD

This is the only potato salad I would eat as a child, because I didn't like pickles. The recipe is from my aunt. She uses garlic chive, which I have substituted by using the same amount of chive and a clove of garlic. I usually leave off the nasturtiums, but they add a nice *Zip* if you have them.

8 -10 medium potatoes
4 hard-boiled eggs, chopped
1 cup minced onion
1 1/2 cups mayonnaise or 1 1/2 cups Miracle Whip
1 1/4 cups minced chives
1 garlic clove, minced
2 tablespoons dijon-style mustard
1 tablespoon fresh minced thyme or 1 teaspoon dried thyme
salt and pepper, to taste
1 hard-boiled egg, cut into slices
3 slices cooked bacon, crumbled
6 -8 nasturtium blossoms (make sure they have not been sprayed with chemicals)

Steps:

  • Peel and chop potatoes into bite-sized pieces.
  • Boil or steam potatoes until just tender (should not immediately fall apart when you stick a fork in).
  • Rinse in cold water to chill.
  • Combine mayonnaise, mustard, thyme, salt and pepper, blend well and allow to rest at least 30 minutes (while potatoes are cooking).
  • In a large bowl, combine all salad ingredients (except garnish), adding more mayonnaise if necessary.
  • Garnish with egg slices.
  • Chill salad (tastes best a day after you make it).
  • Before serving, sprinkle with bacon bits and nasturtium blossoms.

1/4 cup mayonnaise
1/4 cup whole grain mustard
1/4 cup prepared horseradish (or fresh grated)
1/4 cup pickle juice
1 medium onion
2 half sour pickles
Salt and pepper

Steps:

  • Quarter the potatoes and boil until just cooked. Drain and rinse. Mix together mayonnaise, mustard, horseradish, and pickle juice. Transfer still warm potatoes to mixing bowl and blend in dressing. Chop pickles and onions to 1/4-inch dice and add. Season with salt and pepper. Serve chilled.

3 celery ribs, chopped
6 green onions, chopped
2 medium dill pickles, finely chopped
1 1/2 cups mayonnaise
1/4 pickle juice
4 1/2 teaspoons prepared mustard
1 teaspoon celery seed
1 teaspoon salt
1/2 teaspoon pepper
1 leaf lettuce (optional)

Steps:

  • Place potatoes in Dutch oven and cover with water.
  • Bring to a boil.
  • Reduce heat, over and simmer for 20-30 minutes or until tender.
  • Drain and cool.
  • Peel and cube potatoes.
  • Place in large bowl.
  • Add the eggs, celery, onions and pickles.
  • In a small bowl, combine the mayonnaise, pickle juice, mustard, celery seed, salt and pepper.
  • Pour over potato mixture.
  • Mix well.
  • Cover and refrigerate for at least 4 hours.
  • Serve in a lettuce-lined bowl if desired.
