3 egg whites, room temperature (about 1/3 cup)
1/4 teaspoon cream tarter
1 teaspoon vanilla
3/4 cup sugar
1/3 cup lightly roasted pecans, chopped small (for crust)
1/4 cup pecans, chopped medium (for topping)
1/2 cup Ritz Crackers, lightly roasted, chopped fine, (for crust)
12 ounces Whipped Topping (Cool-Whip)
Caramel topping, optional

Steps:

  • Preheat oven to 350 degrees fahrenheit. Bake 1/3 cup pecans and Ritz crackers for 5 minutes. You want to lightly roast the nuts and crackers. Watch them carefully so they do not burn. The crackers and nuts should be a light golden in color. Remove from oven when golden and place on paper towel until cool. Add vanilla and cream of tarter to egg whites and beat until stiff. Slowly add sugar and continue to beat egg whites until very stiff, peaks form and sugar is dissolved. Fold in 1/3 cup pecans and Ritz crackers. Place in a 10" pie pan that has been lightly sprayed with a non stick baking spray. Spread the meringue to the sides and cover the bottom of pan. The meringue will be about 1" - 1 1/8" thick layer in the pie pan. Hollow out a little hole in the middle of the bottom of the meringue the size of half a dime, this will help with a even baking of the shell. If you have any meringue left make little nest bake the same manner and fill with leftover pudding or fruits. Place in a preheated oven at 275 degrees for 1 hour. Check shell, the meringue should not scorch, it will turn light tan in color. Turn oven off and let shell dry in the oven for another hour. Remove shell and cool. When shell is cool place the whipped topping in the shell and sprinkle with 1/4 cup broken pecans. Place in refrigerator to completely chill before serving. When ready to serve, you may drizzle caramel topping over the pie or by the slice. Meringue's will whip fluffier and be fuller when prepared at low humidity.

1/2 cup melted butter
1 cup white sugar
3 tablespoons all-purpose flour
1 teaspoon baking powder
1 teaspoon vanilla extract
3 eggs, beaten
1 teaspoon confectioners' sugar (for dusting)

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of salted water to a boil.
  • Add carrots and cook until tender, about 15 minutes.
  • Drain and mash.
  • To the carrots add melted butter, white sugar, flour, baking powder, vanilla extract and eggs.
  • Mix well and transfer to a 2 quart casserole dish.
  • Sprinkle with confectioners sugar.
  • Bake in preheated oven for 30 minutes.

3 (approximately 1/3c) egg whites, room temperature
1/4 tsp cream tarter
1 tsp pure vanilla (i use my homemade vanilla)
3/4 c sugar (i use 2/3 c splenda or stevia)
1/3 c lightly toasted crushed pecans
1/4 c pecans (chop these medium, for topping)
1/2 c ritz crackers (chop these into fine pieces & lightly toast pieces in oven, for the crust
12 oz whipped topping; or cool whip if your prefer
non stick baking spray, for pie plate
(preheat oven to 350 df; then later lower to 275 df)

Steps:

  • 1. In a preheated oven at 350 dF and place 1/3 C pecans and the Ritz crackers in for 5 minutes. You want to lightly toast the nuts and crackers. Watch carefully so you don't burn them. The crackers and nuts should be a light golden in color. Remove from oven when golden and place on paper towel until cool.
  • 2. Add vanilla and cream of tarter to egg whites and beat until stiff. Slowly add sugar and continue to beat egg whites until very stiff peaks form and sugar is dissolved. Fold in the cooled 1/3 C pecans and Ritz crackers.

  • 7. When the shell is cooled, place the whipped cream or cool whip topping in the shell. Sprinkle with the 1/4 C. broken pecans. Place in refrigerator to completely chill before serving. P.S. I like to flavor my whipped cream and even when I use cool whip....sometimes adding in some cinnamon-sugar, vanilla, butter-rum extract or burnt sugar flavoring. Don't just make theirs, make it your own.
  • 8. NOTE: If you have any meringue left over make little nest like shells, bake the same as large shell (don't burn them) and fill them with any leftover pudding you may have on hand or some drained fruits.
  • 9. TIP: Meringue's will whip fluffier and be fuller when prepared at low humidity.

1/2 cup corn flakes, crushed
1/2 cup pecans, chopped
3 tablespoons brown sugar
2 teaspoons butter, room temperature
3 lbs peeled carrots
1 1/2 cups sugar
1 tablespoon baking powder
1 tablespoon vanilla
1/4 cup flour
6 eggs
1/2 lb margarine, 2 sticks
1 dash nutmeg (optional)
1 dash cinnamon (optional)
salt (optional) or pepper (optional)
powdered sugar

Steps:

  • Preheat oven to 350°F Use a 9x13-inch pan.
  • For the topping, combine the crushed corn flakes, nuts, brown sugar, and butter. Set aside.
  • Boil carrots in salted water until soft. Drain well mash with potato masher or food mill.
  • In a bowl, while carrots are warm, add sugar, vanilla and baking powder.
  • Whip with electric mixer or food processor until smooth.

3 1/2 lb peeled carrots
2 1/2 c sugar
1 Tbsp baking powder
1 Tbsp vanilla
1/4 c flour
6 medium eggs
1/2 lb margarine
GARNISH FOR TOP
powdered sugar

Steps:

  • 1. Steam or boil carrots until extra soft. Drain well.
  • 2. While carrots are warm, add sugar, baking powder and vanilla. Whip with mixer until smooth. (I used a potato masher first and then the mixer. Either way works fine.)
  • 3. Add flour and mix well. Whip eggs and add to flour mixture, blend well. Add softened margarine to mixture and blend well.
  • 4. Pour mixture into 13 by 9 inch baking dish about half full as the souffle will rise.
  • 5. Bake in 350 degree oven about 1 hour or until top is a light golden brown. Sprinkle lightly with powdered sugar over top before serving.
  • 6. I tried this out in two smaller ramekins and they looked so festive. Plus it cut down on the cooking time about 20 minutes less. I may try serving this way next time.
  • 7. 4-20-2014 --- Had to make this for our Easter Sunday dinner again. It is so delicious and loved by all.
  • 8. Here is the pic of soufflé and the beautiful tulips that were a sweet welcome gift from a dear friend for our first home purchase.

1 lb spaghetti, dry
1 bottle creamy italian salad dressing, 15 oz
3 Tbsp grated parmesan cheese, i used the powdered kind
14 oz slaw mix, bagged, old fashioned style
2 can(s) tuna, chunk, light, in water, 5 oz each, undrained
2 Tbsp sweet pickle relish with juices
2 Tbsp chow chow relish, hot or mild, i use hot, heaping measure
2 tsp jalapeno peppers, diced fine, jarred, with juice

Steps:

  • 1. Break spaghetti into approximately 1-2 inch pieces. Cook spaghetti according to pkg directions. Drain.
  • 2. In a large bowl or container, toss slaw mix, cooked spaghetti, cheese and salad dressing.
  • 3. Toss in the tuna with the liquid from the can.
  • 4. Toss in the sweet relish and any juice that you spoon out of the jar with it. Picadilly is hot and sweet so dill pickles won't do. You can use chopped whole sweet pickles with a tsp of the juice..
  • 5. Toss in the Chow Chow. If you can't find this ingredient you can use salsa (medium or hot).
  • 6. Add the jalapeno peppers.
  • 7. Toss well. Cover and refrigerate at least one hour. Toss before serving. Keeps for at least 3 days in the fridge. If it seems too dry or if you want it a bit creamier toss with up to 6 TBSP water. The pasta will absorb some of the liquid as it sits in the fridge.

You'll be surprised that this does not taste anything like carrots and qualifies more as a dessert. It's better than the original from Piccadilly's. This was given to me by my sister-n-law who just loves this dish.

2 1/4 c baby carrots, sliced
1/4 c water
1 1/2 c sugar
1 1/2 tsp baking powder
2 tsp vanilla
3 Tbsp ap flour
4 eggs
1/2 c melted butter
powdered sugar

Steps:

  • 1. Cook the baby carrots with the water in the microwave for 10 minutes, covered. Remove them from the water with a slotted spoon (to drain them), and throw them into a food processor along with the next six ingredients. Blend until smooth.
  • 2. Pour carrot puree into a greased 8" x 8" casserole dish and bake at 350 degrees for 1 to 1 1/2 hours, depending on the size of the dish and depth of the batter. (The batter should come only about halfway up the sides of the dish, as it will puff up a lot!)
  • 3. Sprinkle with confectioners sugar before serving.
  • 4. NOTES: When it comes out of the oven, a soufflé should be puffed up and fluffy, and it will generally fall after 5 or 10 minutes.

3 eggs, separated
1 cup sugar
1 tsp vanilla
22 RITZ crackers, broken into pea-size pieces
1 cup coarsely chopped pecans
- TOP LAYER -
1 cup whipping cream
2 Tbsp sugar
Vanilla (or other flavoring)
Optional: Garnish with shavings of BAKER'S CHOCOLATE

Steps:

  • Separate egg yolks and egg whites. Beat egg whites till foamy. Slowly, add sugar and beat till stiff. In separate bowl, beat egg yolks and combine with vanilla. Stir in broken cracker pieces and pecans. Fold in egg whites/sugar mixture
  • Turn into greased 8" or 9" Deep Dish pie plate.
  • Bake 300 degrees F for 25-30 minutes. Cool COMPLETELY at room temperature. Whip cream. Add sugar and vanilla. Cover pie with topping. Refrigerate 8-12 hours.
