CREAM CHEESE STUFFED FRENCH TOAST
Thick slices of sweet, egg-soaked bread cooked until golden and stuffed with a sweet cream cheese filling. Perfect for a sweet breakfast or brunch treat.

Steps:
- Beat together cream cheese, powdered sugar, and vanilla until you have a spreadable consistency.
- Spread a thick layer of cream cheese filling on one side of half of the Texas Toast. Top with a second piece of Texas toast, forming a sandwich with cream cheese filling in the middle.
- In a small bowl whisk eggs, milk, granulated sugar and cinnamon together. Dip the sandwiches in the egg mixture to coat completely
- Melt butter on a griddle or skillet over medium heat. Cook sandwiches until golden brown on both sides.
- Top with strawberries, syrup, and whipped cream.

- Coat a 9x13-inch baking dish with melted butter. Spread any remaining melted butter over bottom of dish.
- Sprinkle brown sugar and cinnamon evenly over melted butter.
- Arrange bread in two layers over brown sugar mixture.
- Beat eggs, milk, and salt in a bowl; pour over bread.
- Cover and refrigerate overnight.
- Preheat oven to 350 degrees F (175 degrees C).
- Bake in the preheated oven until golden brown, about 30 minutes.

Again, a recipe I had marked "Great" in my collection file.Like so many of you, I have collected many recipes over the years and have them filed in many places. Recipezaar is helping me get organized and find old favorites.

Steps:
- The night before, spread each of 4 slices of bread with 1T. cream cheese and the other 4 each with 1T. preserves.Make 4 sandwiches from the bread and put in a 9 x 13 inch baking pan.
- Mix eggs, milk, sugar and nutmeg in a bowl. Slowly pour half of this mixture on one side of each sandwich. Turn sandwiches over and repeat process, making sure that all bread surfaces have some egg mixture on them.
- Cover with wax paper and refrigerate overnight.
- In the morning, preheat oven to 200 degrees.
- Heat a large skillet over medium heat; add 1T. of butter. Fry sandwiches about 4 minutes on each side. Keep warm in oven.
- Serve with strawberry sauce: Combine strawberries, sugar, cornstarch and water.
- Bring to a boil and watch carefully so that it doesn't boil over.
- Boil several minutes until mixture cooks down and thickens.
- This can be done the night before, refrigerated and then reheated.
