2 pound pheasant cut up
1 medium onion sliced
2 stalks Celery with leaves
1 carrot sliced
1 teaspoon salt
1/8 teaspoon pepper
1 cup heavy cream
1 1/2 tablespoons flour
3 tablespoons white wine
Fresh mushrooms

Steps:

  • Place pheasant with next five ingredients in 2 cups boiling water in saucepan. Simmer covered for 45 minutes or until tender. Remove pheasant, bone and set aside. Strain and preserve broth. Boil broth in saucepan until reduced to 1/2 cup. Blend in cream. Heat to boiling point. Blend flour with two 2 tablespoons cold water in small bowl then add to broth mixture. Cook until thickened, stirring constantly. Add pheasant. Cook until heated through. Stir in wine and mushrooms. Serve immediately over rice.

2 pheasants (2 1/2 to 3 pounds each), thawed if frozen
1/2 cup all-purpose flour
1/2 teaspoon seasoned salt
1/4 teaspoon pepper
2 tablespoons vegetable oil
1 package (8 ounces) whole mushrooms
2 cups baby-cut carrots
1 tablespoon butter or margarine
1 cup half-and-half
1/2 cup chicken broth
2 tablespoons dry sherry or chicken broth
1 tablespoon chopped fresh or 1/2 teaspoon dried oregano leaves

Steps:

  • Heat oven to 350°. Cut each pheasant in half along backbone and breastbone from tail to neck with kitchen scissors. Mix flour, seasoned salt and pepper in shallow bowl. Coat pheasant generously with flour mixture. Reserve remaining flour mixture.
  • Heat oil in 12-inch skillet over medium-high heat. Cook pheasants in oil 3 to 4 minutes on each side or until well browned. Place in ungreased rectangular pan, 13x 9 x 2 inches, or in shallow roasting pan. Top and surround pheasants with mushrooms and carrots.
  • Melt butter in 2-quart saucepan over medium heat. Add enough additional flour to remaining flour mixture to make 2 tablespoons. Stir flour mixture into butter. Cook, stirring constantly, until mixture is smooth and bubbly; remove from heat. Gradually stir in half-and-half and broth. Heat to boiling, stirring constantly. Boil and stir 1 minute. Stir in sherry and oregano. Pour evenly over pheasants.
  • Bake uncovered 1 hour 15 minutes to 1 hour 30 minutes, spooning sauce in pan over pheasants once, until pheasants are tender and juice is no longer pink when centers of thickest pieces are cut. Remove pheasants from pan with slotted spoon. Stir sauce until smooth. Serve sauce with pheasants.

4 boneless, skinless pheasant breasts, about 1/3 pound each
Salt and freshly ground pepper to taste
2 teaspoons paprika
2 teaspoons butter
1/2 cup finely chopped onions
2 sprigs fresh thyme or 1/2 teaspoon dried
1/4 cup dry white wine
1/3 cup heavy cream
1/3 cup sour cream

Steps:

  • Sprinkle the breasts with salt, pepper and paprika.
  • Melt the butter in a heavy nonstick skillet large enough to hold the pheasant breasts in one layer. Add the breasts and cook over medium-high heat for 3 minutes or until they are lightly browned. Turn the breasts and cook for 3 minutes more. Add the onions and thyme. Stir and cook until the onions are wilted. Add the wine to dissolve the brown particles that cling to the bottom of the pan. Continute cooking until most of the wine evaporates.
  • Add the heavy cream and cook until the liquid is reduced by half. Add the sour cream, blend well and bring to a boil, stirring until smooth. Taste and adjust the seasonings and serve very hot.

1 pheasant or broiler/fryer chicken (2 to 3 pounds), cut up
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 can (4 ounces) sliced mushrooms, drained
1/2 cup apple cider
1/3 cup chopped onion
4 teaspoons Worcestershire sauce
1/2 teaspoon salt
1 garlic clove, minced
1/4 teaspoon dried tarragon
Paprika

Steps:

  • Place pheasant in an ungreased 11x7-in. baking dish. Combine the next eight ingredients; pour over pheasant. Sprinkle generously with paprika. Bake, uncovered, at 325° for 1-1/2 hours until a thermometer inserted in thickest part of thigh reads 170°-175°, basting occasionally. Sprinkle again with paprika before serving.

2 young Pheasant
16 Juniper berries
1 pc Lemon peel
0.125 l white wine
salt
2 sliced Bacon
Black pepper
80 grams butter
250 grams Whipped cream
chopped Walnut

Steps:

  • Remove pheasant wings, stomachs and hearts, rinse thoroughly and place into a saucepan. Add crushed juniper berries (reserve some), lemon zest, wine and 1/8 liter of water (approximately 1/2 cup) and season with salt.
  • Cover and cook for about 45 minutes on low heat. Strain broth through a sieve and return to the pan, simmer down until just a few spoonfuls left.
  • Rinse and pat dry pheasants. Season with salt and pepper. Wrap each pheasant with a slice of bacon and tie with kitchen string. Heat butter in a pan and brown pheasants on all sides. Cover pan and finish cooking in preheated oven at 220°C (approximately 425°F) for about 40 minutes or until golden brown, basitng with cooking juice often.
  • Remove bacon from the birds and and let pheasants brown for 10 minutes more, uncovered. Remove pheasants from the pan and keep warm wrapped in foil.
  • Simmer down cooking sauce slightly. Crush remaining juniper berries in a mortar and add to the sauce. Add pheasant broth and cream, simmer down to creamy sauce, add chopped walnuts. Arrange pheasants on preheated plates and serve with the sauce.

2 teaspoons chicken bouillon
1/2 cup water
1 can cream soup (celery, chicken or mushroom)
1 cup sour cream
2 cups half-and-half
1 cup water
salt and pepper

Steps:

  • Fry pheasant in oil until brown.
  • Take out of pan.
  • To pan add flour and bouillon dissolved in 1/2 cup water.
  • Add soup, sour cream, half-and-half, 1 cup water, and salt and pepper.
  • Add pheasant and bake at 350° until pheasant is tender.

1 pheasant (1 & 1/2 - 2 pounds)
1/2 c onion
1 c fresh sliced mushrooms
2 Tbsp butter or margarine
3 oz cream cheese
1 can(s) (10 & 3/4 oz.) cream of mushroom soup
1/4 c water
2 Tbsp milk
1/2 c carrot, shredded
1 Tbsp parsley flakes
1 tsp instant chicken bouillon

Steps:

  • 1. Preheat oven to 350 degrees F.
  • 2. Salt and pepper pheasant and place in greased baking dish, skin side down. Bake at 350 degrees for 30 minutes.
  • 3. Meanwhile, prepare mushroom cream sauce: Sauté onion and mushrooms in butter until tender. Add remaining ingredients and stir until smooth.
  • 4. After pheasant has baked for 30 minutes, turn pheasant and add mushroom cream sauce. Cover and continue baking until tender.
  • 5. Serve with wild rice.
