PASTA WITH SHRIMP AND ARTICHOKES

Number Of Ingredients 14

2 tablespoons olive oil
1 medium onion, chopped
2 garlic cloves, minced
1/4 cup chopped fresh basil or 4 teaspoons dried
2 tablespoons chopped fresh oregano or 2 teaspoons dried
1/4 teaspoon dried crushed red pepper
1 14 1/2-ounce can stewed tomatoes
2 large tomatoes, seeded, diced
1 9-ounce package frozen artichoke hearts, thawed
1 tablespoon fresh lemon juice
3/4 pound spaghetti
1 pound uncooked medium shrimp, peeled, deveined
Additional chopped fresh basil
1/2 cup freshly grated Parmesan cheese

Steps:

  • Heat oil in heavy large skillet over medium heat. Add onion and garlic; sauté until tender, about 5 minutes. Add 1/4 cup basil, oregano and dried red pepper and stir 1 minute. Add stewed tomatoes, diced tomatoes, artichoke hearts and lemon juice and simmer until sauce thickens slightly and artichokes are tender, about 30 minutes.(Can be made 1 day ahead. Cover and refrigerate.)
  • Cook spaghetti in large pot of boiling salted water until tender but still firm to bite. Drain.
  • Meanwhile, bring sauce to a simmer. Stir in shrimp and simmer until just cooked through, about 5 minutes. Season to taste with salt and pepper.
  • Add spaghetti to sauce and toss to coat. Transfer to large bowl. Sprinkle with additional chopped fresh basil. Serve, passing Parmesan separately.

Found this gem in a "Taste of Home" magazine. It was submitted by Daniel Spengler of Seattle, Washington. Excellent light pasta dish that can easily be made into a vegetarian dish by omitting the shrimp and adding mushrooms, asparagus, sun dried tomatoes and spinach. I used the wine instead of the chicken broth. As is or "doctored up", this is a great recipe.

4 ounces uncooked linguine
1/2 cup chopped sweet red pepper
1 1/2 teaspoons minced garlic
1 green onion, chopped
2 tablespoons olive oil
4 1/2 teaspoons butter
12 ounces uncooked medium shrimp, peeled and deveined
14 ounces water-packed artichoke hearts, rinsed, drained and chopped
1/4 cup white wine or 1/4 cup chicken broth
1 tablespoon lemon juice
1/4 teaspoon salt
1/4 teaspoon creole seasoning

Steps:

  • Cook the linguine according to package directions. Meanwhile, in a large saucepan, saute the red pepper, garlic and onion in oil and butter until vegetables are crisp-tender. Add the shrimp; saute until shrimp turns pink. Stir in the remaining ingredients, heat through. Drain linguine; serve with shrimp mixture.

1 lb linguine
6 tablespoons butter
2 cups heavy cream
1/2 teaspoon ground black pepper
1/2 cup grated parmesan cheese
1/3 cup pesto sauce
1 lb large shrimp, peeled and deveined

Steps:

  • Bring a large pot of lightly salted water to a boil.
  • Add linguine pasta, and cook for 8 to 10 minutes, or until al dente; drain.
  • In a large skillet, melt the butter over medium heat.
  • Stir in cream, and season with pepper.
  • Cook 6 to 8 minutes, stirring constantly.
  • Stir Parmesan cheese into cream sauce, stirring until thoroughly mixed.
  • Blend in the pesto, and cook for 3 to 5 minutes, until thickened.
  • Stir in the shrimp, and cook until they turn pink, about 5 minutes.
  • Serve over the hot linguine.

Number Of Ingredients 7

2 large artichokes
1 cup (packed) fresh basil leaves
1 garlic clove
1 cup extra-virgin olive oil
1 tablespoon freshly grated Pecorino Romano cheese
1 tablespoon freshly grated Parmesan cheese
32 cooked jumbo shrimp, peeled, deveined

Steps:

  • To trim artichoke, add the juice from half a lemon to a large bowl of cold water. Cut off the artichoke's stem; rub cut surface with the other lemon half. Peel off all the leaves. Cut off top one inch of artichoke. Using a spoon with a serrated edge, scrape out the fibrous choke from the center. Rub the artichoke all over with lemon and drop it into lemon water. Drain before using.
  • Cut artichoke hearts into quarters. Combine artichoke hearts, basil, and garlic in processor. Add oil and blend until smooth. Transfer to bowl. Mix in cheeses. Season artichoke pesto to taste with salt and pepper. Place pesto in center of platter. Surround with shrimp and serve.
