Pesto Pasta With White Beans and Halloumi image

This vegetarian weeknight dinner comes together in half an hour and is made super special with the addition of halloumi. It looks like a fluffy cloud when grated, and it gives the pasta just the right amount of salty tang. Be sure to use a very fine grater, like a Microplane, when you prepare the halloumi, as it will only add to the fluffy effect (which is what you're after). This is a full meal in its own right, but you can also serve it alongside a big green salad.

1/3 cup/75 milliliters olive oil
6 garlic cloves, peeled and thinly sliced
1 medium green serrano chile, stemmed and halved lengthwise
1 tablespoon fresh thyme leaves, chopped
2 (15.5-ounce/400-gram) cans cannellini beans, drained and rinsed
3 cups (about 9 ounces/250 grams) short, twirled pasta, preferably gemelli or trofie pasta
3 cups/700 milliliters chicken or vegetable stock
Kosher salt and black pepper
1/4 cup/60 milliliters lemon juice (from 2 lemons)
1 block halloumi (around 7 ounces/200 grams), very finely grated
Heaping 1/3 cup/50 grams pine nuts, well toasted
2 small garlic cloves, roughly chopped
3 lightly packed cups (about 2 ounces/60 grams) arugula (rocket), roughly chopped
1/2 cup/20 grams roughly chopped parsley (leaves and tender stems only)
1/3 cup/90 milliliters olive oil, plus more as needed

Steps:

  • Prepare the pasta: Add the oil to a large, lidded sauté pan, and then place it over medium-high heat. Once hot, add the garlic and chile, and cook for 2 minutes, stirring often, until the garlic is nicely golden. Stir in the thyme, beans, pasta, stock, 2 teaspoons salt and plenty of pepper, and bring to a simmer. Turn the heat to medium, cover, and cook for 12 minutes. Remove from the heat and let sit, with the lid off, for about 5 to 10 minutes. This will help it absorb more of the liquid.
  • As the pasta cooks, make the pesto: To a food processor, add the nuts, garlic, arugula (rocket), parsley, half the oil, 1/2 teaspoon salt and a good grind of pepper. Pulse a few times, scraping down the sides and pulsing again until you have a coarse paste. Transfer to a small bowl and stir in the remaining olive oil, adding a touch extra if needed to loosen the pesto.
  • When ready to serve, stir the lemon juice and half the pesto into the pasta (discard the chile, if you wish) and transfer to a large serving bowl or platter with a lip. Sprinkle over about half the halloumi, and serve with the extra halloumi and pesto to eat alongside.

2 tablespoons olive oil
1 garlic clove, chopped
1/2 cup chopped drained oil-packed sun-dried tomatoes
1/2 cup dry white wine
1/3 cup purchased pesto sauce
1 15-ounce can cannellini (white kidney beans), rinsed, drained
8 ounces gemelli pasta
1/4 cup freshly grated Parmesan cheese (about 1 ounce)

Steps:

  • Heat olive oil in heavy medium saucepan over medium heat. Add garlic; sauté 2 minutes. Add tomatoes, wine and pesto; simmer over medium heat until reduced slightly, about 5 minutes. Add cannellini and stir until heated through.
  • Meanwhile, cook pasta in large pot of boiling salted water until tender but still firm to bite, stirring occasionally. Drain pasta, reserving 1 cup cooking water.
  • Add pasta and cheese to sauce; toss to coat. Mix in enough reserved pasta water, 1/4 cup at a time, to moisten. Season to taste with salt and pepper.

HALLOUMI WITH PESTO SPAGHETTI

A delicious, quick and easy vegetarian recipe, packed with flavours from roasted red peppers, rocket and pesto.

Steps:

  • Pre-heat over to 200C. Wash the peppers, remove the seeds etc and cut into slices. Coat in olive oil and put into oven for 15-20minutes (turning halfway through) until soft
  • Slice halloumi into thick chunks (about 6 slices if using a normal supermarket pack) and add to oven 5 minutes after peppers have gone in (turn halfway through)
  • Cook pasta according to directions on packet, drain and stir in the pesto
  • Put spaghetti onto plates, share peppers and halloumi between the plates, sprinkle rocket on top and grate over with the vegetarian hard cheese (as close to parmesan as you can get)

BEAN & HALLOUMI STEW

Use a can of mixed beans to make this tomato-based veggie stew with halloumi. Make it in just 25 minutes for a quick and easy midweek supper

3 tbsp olive oil
1 onion , thinly sliced
1 red pepper , thinly sliced
2 garlic cloves , crushed
3 tbsp red chilli , sundried tomato pesto or vegan alternative
1 heaped tsp ground coriander
400g can mixed beans , drained and rinsed
400g can chopped tomatoes
½ x 250g block halloumi , sliced
½ small bunch of coriander , finely chopped
garlic bread , to serve (optional)

Steps:

  • Heat 2 tbsp of oil in a frying pan over a medium heat. Add the onion and pepper, along with a pinch of salt and fry for 10 mins or until softened. Add the garlic, pesto and ground coriander, and cook for 1 min. Tip in the beans and tomatoes along with ½ can of water, then bring to a simmer and cook uncovered for 10 mins.
  • Add the remaining oil to a separate frying pan over a medium heat. Fry the halloumi for 2 mins on each side or until golden brown.
  • Taste the beans for seasoning, then spoon into deep bowls. Top with the halloumi and scatter over the chopped coriander. Serve with garlic bread, if you like.
