A juicy spinach ricotta filling encased with buttery, flaky puff pastry. Great finger food or to pop into lunch boxes, thought they are definitely best served warm! Refer to the notes for make ahead instructions and the recipe video below. Some people like to serve this with tomato sauce.

250 g / 8 oz frozen chopped spinach (, thawed (Note 1))
400 g / 13 oz firm ricotta ((Note 2))
¾ cup grated parmesan
1 ½ cups shredded cheese ((cheddar, tasty, Monterey Jack, Gruyere, Pepper Jack))
1 egg
1 large garlic clove (, minced)
Pinch of nutmeg ((fresh grated or powder))
¼ - ½ tsp salt
Black pepper
3 sheets puff pastry ((Note 3))
1 egg (, beaten)
Sesame seeds ((optional))

Steps:

  • Take pastry out of freezer.
  • Place spinach in a colander and use a wooden spoon or your hands to press out excess water. You could also do this using a tea towel or paper towels. Transfer spinach to a bowl (drink the liquid, it's good for you!).
  • Add remaining Filling ingredients. Mix to combine.
  • Place pastry on work surface and cut in half to create 2 rectangles - you should have 6 in total.
  • Divide filling between pastries, brush edge with egg then roll up, finishing with the seam side down.
  • Refrigerate for 15 minutes. Meanwhile, preheat oven to 180C/350F.
  • Spray 2 x baking trays with oil (any).
  • Cut rolls into 4, or whatever size you want. Brush tops with egg (makes it golden) then sprinkle with sesame seeds.
  • Bake for 25 minutes, then take out the top tray and move the bottom tray to the top and give it an additional 5 - 10 minutes to make it golden.
  • Best served warm - the pastry is crispier and the filling is juicier. See notes for make ahead instructions.

2 cups fresh basil
1/3 cup pine nuts
2 cloves of garlic
1/2 cup grated Parmigiana Reggiano
1/2 cup olive oil (plus extra for cooking chicken and spinach)
3/4 cup heavy cream (heavy whipping cream is fine too)
salt and pepper to season
2 large chicken breasts
1 pound farfalle pasta
4 cups fresh spinach

Steps:

  • Start by adding your fresh basil, pine nuts, garlic, cheese, and half the amount of olive oil into the food processor. Start processing and slowly drizzle in the remaining olive oil till you reach the desired thickness.
  • Add salt and pepper to taste.
  • Drizzle in the cream and then check the taste to see if you need to add more salt. Set creamy pesto aside.
  • Boil your water if you are enjoying this meal with pasta.
  • At the same time, the water is warming up; heat olive oil in a cast-iron pan and season your chicken with salt and pepper.
  • Brown the chicken on both sides, reaching an enteral temperature of 165 degrees F.
  • Remove from the heat and set aside to rest while you quickly sauté the spinach. Drizzle with olive oil and a dash of salt and pepper.
  • Cook your pasta.
  • Slice the chicken and add the pieces back into the pan.
  • Pour the creamy pesto sauce over the chicken and spinach.
  • Once pasta cooks to al dente, add to the pan and toss the whole dish together.
  • Top with more Parmigiano Reggiano and serve

2 cups lightly packed baby spinach leaves (about 2 ounces)
1/4 cup pine nuts, toasted
2 tablespoons fresh lemon juice
1 to 2 teaspoons grated lemon peel
1/3 cup plus 2 teaspoons olive oil
Salt and freshly ground black pepper
1/3 cup freshly grated Parmesan

Steps:

  • Heat a grill pan on medium high heat. Lightly oil the grill pan. Sprinkle the chicken with salt and pepper. Grill the chicken until cooked through, about 5 minutes per side.
  • Combine the spinach, pine nuts, lemon juice, and lemon peel in a processor. Lightly pulse. With the machine running, gradually add 1/3 cup of the oil, blending until the mixture is creamy. Add salt and pulse. Put half of the pesto into ice cube trays and store in the freezer for future use.

1/2 cup pine nuts
4 garlic cloves
1 cup olive oil, divided
1 cup grated parmesan cheese (optional)

1/4 teaspoon fresh ground pepper
3 tablespoons margarine or 3 tablespoons butter, softened
1/4 cup pesto sauce
1/2 cup minced red bell pepper
1/4 cup crushed corn flakes
1/2 teaspoon paprika

Steps:

  • To make pesto: Process basil, pine nuts, garlic and a few tablespoons of olive oil in the container of a food processor fitted with a knife blade.
  • With processor running, pour salt, pepper and remaining oil through the food chute until a thin paste forms.
  • Add parmesan cheese, if using, pulsing until blended.
  • To make chicken rolls: Combine margarine/butter, pesto and bell pepper, stirring until smooth.
  • Sprinkle each flattened chicken breast with salt and pepper. Spread 2 tablespoons of pesto mixture across each breast, roll up lengthwise and secure with a toothpick.
  • Combine cornflake crumbs and paprika in a shallow bowl.
  • Dredge chicken rolls in the crumb mixture and place in a baking dish coated with Pam.
  • Cover and refrigerate at least 1 hour.
  • Preheat oven to 350, remove chicken from refrigerator and bring to room temperature.
  • Bake, uncovered, for 35 minutes.
  • Remove from the oven and let stand for 10 minutes.
  • Remove toothpicks and slice into 1/2 inch pieces. Serve warm.

1 tablespoon water
⅔ cup grated Parmesan cheese
½ cup olive oil
⅓ cup chopped fresh parsley
2 cloves garlic, minced
