  • Cook pasta as directed on package, omitting salt. Meanwhile, heat oil in large nonstick skillet on medium heat. Add chicken; cook and stir 7 min. or until done.
  • Stir in milk and cream cheese spread; cook 3 min. or until cream cheese is completely melted and sauce is well blended. Add peppers, Parmesan and pesto; stir. Cook 3 min. or until heated through, stirring occasionally.

2 lbs boneless skinless chicken breasts
1 tablespoon olive oil
1 tablespoon butter
1 (8 ounce) cont. fresh sliced mushrooms
1 teaspoon minced garlic
1 small red bell pepper, julienned
1 (20 ounce) package cheese-filled tortellini, fresh or frozen, cooked
1 (1 lb) jar alfredo sauce, or homemade
1/4 cup prepared basil pesto
1 (6 ounce) jar artichoke hearts, drained and coarsely chopped
1 (2 1/4 ounce) can sliced black olives
1 tomatoes, drained and chopped
fresh grated parmesan cheese
chopped fresh basil or parsley

Steps:

  • Grill chicken breasts til done, julienne, cover and set aside.
  • In saute pan, melt butter with olive oil and cook garlic, mushrooms and bell pepper til tender.
  • Meanwhile, cook tortellini til done, drain.
  • Stir in alfredo sauce, pesto sauce, chicken, tortellini, artichoke hearts, chopped tomato and black olives into mushroom mixture gently til mixed.
  • Heat over low heat til heated through.
  • Pour onto serving platter.

This is one of my favorites. Great with a crusty loaf of french bread! Would also be tasty with shrimp or scallops instead of the chicken. You can adjust the amount of red pepper flakes to your liking. The cooking time is for the rigatoni. I give directions for grilling the chicken with an indoor grill, but you can grill or cook the chicken any way you prefer.

1 1/2 lbs boneless skinless chicken breasts
2 cups 2% low-fat milk
3 tablespoons unsalted butter
3 tablespoons flour
6 tablespoons fresh grated parmesan cheese
1/8 teaspoon white pepper (or black)
1/4 cup prepared pesto sauce
1/8 teaspoon red pepper flakes
1/4 cup dry julienned sun-dried tomato
1 tomatoes, chopped
2 garlic cloves, crushed
1 lb rigatoni pasta
1 tablespoon olive oil
salt, to taste

Steps:

  • Cook the rigatoni according to package directions. Drain, place back in the pot, and stir in the olive oil (to avoid sticking).
  • Grill the chicken breasts on an indoor grill, 6 minutes per side or until juices run clear. Cut into strips.
  • Melt the butter in a medium saucepan over medium heat.
  • Slowly whisk in the flour until smooth and pasty.
  • Add milk gradually, whisking well after each small addition, then until no clumps can be seen.
  • Add the sundried tomatoes.
  • Heat over medium, whisking constantly, until heated and thick (sauce will thicken the more you cook it).
  • Add the pesto sauce and mix well.
  • Sprinkle the parmesan in, and whisk.
  • Add the crushed garlic,chopped tomato, white (or black) pepper, and red pepper flakes.
  • Remove from heat, and add salt to taste.
  • Pour over rigatoni, mix and serve!

12-16 oz pasta your choice cooked
2 clove chopped garlic divided
1 lb large frozen shrimp thawed or fresh shrimp with tails removed. may also use chicken breast sliced in 2" wide and thick piecess.
3 1/2 oz your choice. i use a 1/2 container of buitoni pesto with basil( in refrigerated section of store)
3 Tbsp butter divided
1 1/4 c heavy cream
1 Tbsp corn starch
3-5 turns of fresh black pepper
4 Tbsp parmigiano-reggiano, grated
OPTIONAL
2 lb chicken tenders cut up
2-3 c steamed broccoli or asparagus if desired
5-7 add some chopped sun dried tomatoes if desired

Steps:

  • 1. Boil water for pasta. While that is getting ready. In a large non stick fry pan. Melt one tablespoon of butter. Add 1 clove of chopped Garlic and saute for a minute.
  • 2. (Note: if using chicken. Cook chicken until no pink shows. Add Garlic last. Follow same steps for shrimp. Remove from pan and set aside) Add thawed shrimp, or chicken to butter. Saute for a minute to heat. Remove Shrimp , or chicken with Butter and Garlic to a plattter. In to same pan add 2 more tablespoons of butter,and remaining chopped Garlic. Cook for 1 minute. Add in the cream, and corn starch. Cook to boiling stirring constantly.
  • 3. While that is cooking boil pasta with 1 teaspoon of salt. in the boiling water. To the cream in pan. add the of pesto,and cracked black pepper. Cook to boiling. Reduce heat to medium. add the parmigiano-reggiano. Stir until it thickens a bit. Add the shrimp with Garlic and butter to Alfredo sauce. Stir to combine. Remove from heat.
  • 4. Serve over the cooked drained pasta. Add steamed Broccoli or Carrots if desired.

1 tablespoon Thyme
4 cups Grated Parmesan cheese
2 cups Pasta water
3 cups Heavy cresm
1 teaspoon Pepper
5 pieces Chicken breast
1 jar Pesto
2 box Fettuccine pasta
3 heads Large red or orange tomatoes
1 tablespoon Corn starch flurry

Steps:

  • Cut chicken breast in halfs and place in plastic bag with jar of pesto to marinade over night or for at least three hours
  • Slice tomatoes in halfs and then quarters. Place marinaded chicken breast on a sheet pan and then place all the tomatoes on top of chicken and place foil over it and cook at 350 for 45 minutes of so. Let rest and cut each on a bias
  • In a large pan melt butter, add heavy cream, thyme, pepper, cheese and let mix until creamy on medium-low
  • Boil water for pasta and cook as directed per directions. Cook pasta and save two cups of pasta water to the alfredo sauce
  • Take corn starch and add to two tablespoons of cold water to it and mix well, then pour in alfredo sauce
  • Stir well to thicken the sauce
  • Take pasta for one person and place in alfredo sauce and mix well. Place on a plate and add as much chicken as desired on top of the pasta. Yummy
