Put a savory spin on traditional waffles with a recipe that turns breakfast into dinner. Original Bisquick mix is the secret shortcut for this intriguing new dish.

2 cups Original Bisquick™ mix
1/2 cup milk
2 tablespoons vegetable oil
1 egg
1/2 cup freshly grated Parmesan cheese
2 tablespoons basil pesto
6 eggs

Steps:

  • Spray waffle maker with cooking spray; heat until hot. In large bowl, stir together Bisquick mix, milk, oil and 1 egg just until combined (don't overmix). Fold in cheese and pesto.
  • Pour batter onto center of hot waffle maker. (Check manufacturer's directions for recommended amount of batter.) Close lid of waffle maker. Bake about 5 minutes or until steaming stops. Carefully remove waffle; cover to keep warm. Repeat with remaining batter.
  • Meanwhile, fry or poach 6 eggs.
  • To serve, place 2 waffles on each plate; top with 1 fried egg.

1 cup balsamic vinegar
2 tablespoons brown sugar
2 bacon strips, chopped
1/2 cup butter, softened
1/3 cup crumbled goat cheese
1/2 pound portobello mushrooms, stems removed, cubed
2 tablespoons olive oil
1-3/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon dried thyme
1/2 teaspoon pepper
1/4 teaspoon salt
2 eggs
1-1/2 cups plus 2 tablespoons milk
1/2 cup canola oil

Steps:

  • In a small saucepan, combine vinegar and brown sugar. Bring to a boil; cook until liquid is reduced to 1/3 cup. In a small skillet, cook bacon over medium heat until crisp. Transfer bacon and drippings to a small bowl; cool slightly. Add butter and goat cheese; beat until blended. , In a large skillet, saute mushrooms in oil until tender; cool slightly. Place 1/4 cup mushrooms in a food processor. Cover and process until very finely chopped. In a large bowl, combine the flour, baking powder, baking soda, thyme, pepper and salt. In another bowl, combine the eggs, milk, oil and chopped mushrooms; add to dry ingredients just until moistened. Fold in the cubed mushrooms. , Bake in a preheated waffle iron according to manufacturer's directions until golden brown. Serve with goat cheese butter and balsamic syrup.,

cooking spray
8 slices whole grain bread
¼ cup prepared pesto
4 teaspoons balsamic vinegar
4 slices mozzarella cheese
4 slices ham

Steps:

  • Spray a waffle iron with cooking spray and preheat according to manufacturer's instructions.
  • Arrange 4 bread slices on a work surface and spread 1 tablespoon pesto onto each slice. Drizzle 1 teaspoon balsamic vinegar onto each of the remaining 4 bread slices. Arrange 1 mozzarella cheese slice and 1 ham slice on pesto bread and top with balsamic bread.
  • Cook each sandwich in the prepared waffle iron until cheese is melted and bread is golden brown, 3 to 5 minutes. Spray waffle iron with more cooking spray before cooking each sandwich.
