Peruvian Quinoa Shrimp Chicharrones With Green Aji Sauce image

Posted for the Central and South America stop on the Summer '08 Zaar World Tour. Chicharrones are a popular fried snack in Peru, and some chefs there are serving them with quinoa in the coating. This is a lighter version, using the technique of oven-frying to keep the coating from soaking up oil. The quinoa has a wonderful crunch, even without frying. Creator Robin Asbell used red quinoa for a dramatic look (this is a stunning photo in "The New Whole Grains Cookbook" and I'm sure a Zaar photographer can take an equally beautiful one using red or regular quinoa).

16 jumbo shrimp or 16 prawns, deveined and with tails on
1/2 cup red quinoa, rinsed (or regular quinoa)
1/2 teaspoon dried oregano
1/2 teaspoon ground cumin
1/4 teaspoon cayenne
1/2 cup unbleached white flour
2 large eggs, lightly beaten
1 large jalapeno chile, seeded
2 garlic cloves
1 bunch cilantro, cleaned and stemmed (2 cups leaves)
1 tablespoon lime juice
1/4 teaspoon salt
1/4 cup extra virgin olive oil

Steps:

  • Make the sauce first. In a food processor or blender, finely mince the jalapeno, garlic and cilantro. Add the lime juice and salt, and puree. Drizzle in the olive oil to make a smooth sauce. Reserve.
  • Bring a large pot of water to boil. Rinse the quinoa and add it to the boiling water and cook for 10 minutes, then drain.
  • Spread the quinoa out on a baking sheet lined with paper towels to dry. It should be quite dry to the touch; pat it with towels if necessary.
  • Pat the shrimp dry, if damp, and place in a medium bowl. Mix the oregano, cumin, and cayenne and sprinkle it over the shrimp; toss to coat.
  • Preheat the oven to 425 degrees.
  • Prepare two pie pans, one with the flour and one with the beaten eggs.
  • Dip the shrimp in the flour, then the egg, then the quinoa.
  • Place two heavy baking pans in the hot oven for five minutes. Take each out, spray liberally with oil, then quickly place the shrimp on the hot pans, keeping them from touching.
  • Spray the coated shrimp with oil, and bake for five minutes.
  • Flip the shrimp with tongs, then bake for five minutes more.
  • Remove from the oven and cut one through the thickest part to ensure they are cooked through. The baking time will vary with the size of the shrimp.
  • Serve the shrimp hot with the aji sauce.

This is the bright green spicy sauce served in Peruvian restaurants that is delicious as a bread dip but can be used on meats or fish.

2 heads washed romaine lettuce
2 bunches of fresh washed fresh cilantro
1/2 bunch fresh parsley
5 fresh jalapenos or 5 serrano chilies
1/2 cup mayonnaise
1/4 cup vegetables
1/3 of an onion
3 garlic cloves
1 tablespoon lime juice
1 tablespoon kosher salt
1/8 teaspoon finely ground black pepper

Steps:

  • Chop everything up as needed to fit into a blender.
  • Remove the thick stems from the Cilantro and Parsley bunches. Cut the hard stem/hearts out of the romaine lettuce.
  • Combine ingredients in the blender and blend thoroughly until smooth. Add small amounts of water if it sticks and gets too thick to blend. It will be a bright teal to sea green in color when complete.
  • Spread it on any kind of bread either by itself, or on top of butter, margarine or hydrolyzed vegetable oil spreads. It is very tasty and really wakes up bread or can be used as a dip with chips.
  • Store up to a week in the refrigerator. This stuff is awesome but very perishable, so I would use it within 5 days.

1 cup quinoa
2 cups chicken broth
1 (16 ounce) package frozen baby lima beans, thawed and rinsed (about 2 cups)
2 tablespoons heavy cream
2 tablespoons sriracha hot chili sauce
1 (3 1/2 ounce) package sun-dried tomatoes, chopped
1 1/2 tablespoons fresh lemon juice
1/2 cup parmesan cheese, grated
1/4 cup orange juice

Steps:

  • Put quinoa with chicken broth in a large saucepan and bring to a boil.
  • Reduce to simmer, cover and cook until all the broth is absorbed (about 10-15 minutes). Stir occasionally while simmering.
  • In a small bowl; mix cream, sriracha, lemon juice, and sundried tomatoes.
  • Add tomato mix to cooked quinoa and stir well.
  • Stir in lima beans, orange juice, and parmesan cheese.
  • Heat on low until cheese melts through (about 5 more minutes) then serve.

This bright green salsa goes well with just about anything - empanadas, potatoes, vegetables, grilled meats, etc. It's a bit like chimichurri sauce, but without the garlic - scallions add a milder onion flavor instead. Recipe is from About.com South American Food

1 large bunch cilantro
3 -4 green onions
1 lime
1 tablespoon vinegar
1 small green chili pepper, such as a jalapeñ, o
4 tablespoons olive oil or 4 tablespoons vegetable oil
salt, to taste

Steps:

  • Wash the cilantro and dry thoroughly. Separate the leaves from the stems, and place the leaves in a food processor or blender, discarding stems. Chop the green onions and add them to the food processor with the cilantro. Process the mixture in short pulses, until everything is coarsely chopped.
  • Mince the chile pepper, removing any stems or seeds. Add minced chile pepper by the teaspoon to the cilantro and onions, pulsing the mixture after each addition, until desired spiciness is obtained.
  • Whisk together the vinegar and the juice from 1/2 of the lime. Whisk in the olive oil. Stir the chopped cilantro, green onions and chile pepper mixture into the oil and lime juice. Taste for seasoning and add salt to taste, or more lime juice if desired.
  • 4.Store salsa in an airtight container in the refrigerator until ready to serve (salsa should keep for up to a week in the fridge).

There many ways to make Aji in Ecuador, but one thing is certain, there is always aji on the table. This is a recipe I learned while I was there. Cayenne or similar small red peppers are decent substitutes for the South American Aji peppers from which this delicious (hot) condiment gets its name.

4 hot red peppers (aji peppers or similar small hot peppers)
2 garlic cloves
1/2 cup water
2 tomatoes, peeled and chopped
3 tablespoons scallions, chopped
1 tablespoon fresh coriander, chopped
1 tablespoon fresh flat leaf parsley, chopped
1 lemon, juice of
2 tablespoons olive oil
1 tablespoon salt

Steps:

  • Combine the water, peppers and garlic in the blender and blend well.
  • Strain the liquid into a bowl and discard any solids.
  • Add the balance of the ingredients and mix well.
  • Store in the refrigerator.
