Yet another one from Moosewood cooks at home. I guess I'm in the mood for stew! You can top this with grated cheddar if you like (or vegan cheese for that mater). Cilantro is optional, but I think it really makes it. I also like cornbread with this - very satisying.

1/2 cup quinoa
1 cup water
1 onion, diced
2 garlic cloves, minced
2 tablespoons oil (any light oil)
1 celery rib, chopped
1 carrot, sliced (1/4-inch thick slices)
1 bell pepper, cut into 1-inch pieces (any colour)
1/2 zucchini, cubed
2 cups chopped tomatoes (fresh or canned, undrained, a 28oz/800 ml tin works well)
2 teaspoons ground cumin
1/2 teaspoon chili powder
1 teaspoon ground coriander
1 pinch cayenne (or to your taste)
1 teaspoon dried oregano (or 2 tsp fresh)
1 cup vegetable stock
fresh cilantro, finely chopped (optional)

Steps:

  • Rinse your quinoa really well. Place it in a pot with the water and cook, covered over medium heat, for about 15 minutes or until soft. Set aside.
  • While the quinoa cooks, saute the onions and garlic in the oil for about 5 minutes over medium heat.
  • Add in the celery and carrots. Continue to cook for about 5 more minutes, stirring often so nothing sticks or burns.
  • Add in the bell pepper, zucchini and tomatoes, along with the spices (cumin, chili powder, coriander, cayenne and oregano). Let that blend together for just a few more minutes and then stir in the stock. Cover and simmer for about 15 minutes until the veggies are tender.
  • Stir in the cooked quinoa and adjust the salt to taste. Just before serving, stir in the cilantro if you choose, or sprinkle on top.

PERUVIAN CHICKEN, AVOCADO & QUINOA SALAD

50g uncooked quinoa
100g frozen sweetcorn
1 tbsp extra virgin olive oil
75g cherry tomatoes , quartered
small pack coriander , leaves roughly chopped
2 spring onions , trimmed and finely sliced
zest and juice 1 lime
1/2 long red chilli , finely chopped (deseeded if you don't like it too hot)
1 ripe but firm avocado
200g skinless, cold, cooked roast chicken , cut into chunky pieces

Steps:

  • Half-fill a medium pan with water and bring to the boil. Rinse the quinoa in a fine sieve, then add to the water, stir well and simmer for 12 mins or until just tender.
  • While the quinoa is cooking, put the sweetcorn in a dry frying pan over a medium-high heat. Cook for 5 mins, turning every now and then, until defrosted and lightly toasted. Set aside.
  • Rinse the cooked quinoa in a sieve under cold water, then press hard with a serving spoon to remove excess water.
  • Tip the quinoa into a bowl and toss with the olive oil, sweetcorn, tomatoes, coriander, spring onions, lime zest and chilli. Season well with black pepper.
  • Halve and stone the avocado. Scoop out the flesh with a large metal spoon, cut into slices and combine with the lime juice. Add the chicken pieces and avocado to the salad and toss gently together before serving.

PERUVIAN PORK AND QUINOA SOUP

One 3-pound pork butt
Kosher salt and black pepper
1 1/4 cups cups quinoa, rinsed well
2 large yams, peeled and diced
1/3 cup olive oil, plus more for roasting
1 cup finely diced carrot
1 cup finely diced onion
2 tablespoons minced garlic
2 teaspoons coriander seeds, toasted and ground
1 teaspoon turmeric
3 quarts vegetable, chicken or pork stock (preferably homemade)
White pepper
2 tablespoons lime juice
Fresh cilantro leaves, for garnish

Steps:

  • Preheat the oven to 350 degrees F.
  • Season the pork butt generously with salt and pepper. Place the pork in a roasting pan, cover with foil and roast until tender, at least 4 hours. Dice the pork and reserve 4 cups. Set aside the remaining pork for another use.
  • Increase the oven temperature to 375 degrees F.
  • Add the quinoa and 2 1/2 cups water to a medium saucepan and bring to a boil. Lower to a simmer, cover and cook until tender, about 15 minutes.
  • Toss the yams in some of the oil and season with salt and pepper. Roast the yams in the oven until fork-tender, about 25 minutes. Reserve 2 cups and set aside any remaining yam for another use.
  • Heat the remaining 1/3 cup oil in a large saucepan over medium heat. Add the carrot, onion and 1 teaspoon of salt and saute until translucent. Add the garlic, coriander and turmeric and cook for 5 minutes on medium heat. Add the stock and bring to a simmer.
  • Add the cooked quinoa, the 4 cups pork and 2 cups yams. Adjust the seasoning with salt and white pepper to taste, then add the lime juice and garnish with cilantro.

BAKED QUINOA CASSEROLE WITH PERUVIAN POTATOES AND CHEESE



Baked Quinoa Casserole with Peruvian Potatoes and Cheese image

2 tablespoons olive oil
2 leeks, white part only, cleaned and sliced
2 cloves garlic, peeled and diced
1 green bell pepper, diced
1 red bell pepper, diced
4 eggs
3/4 cup low-fat milk
1 cup quinoa, cooked
1 1/2 cups grated smoked cheddar cheese
1 pound Peruvian potatoes, unpeeled, diced and steamed
Salt and pepper to taste
1 teaspoon thyme leaves

Steps:

  • Preheat oven to 350 degrees F. Oil a 2-quart gratin dish.
  • In a saute pan over medium heat, heat olive oil and add leeks. Saute, stirring, until they become tender, about 5 minutes. Add the garlic and continue to cook, stirring, for another minute. Add the peppers and cook, covered, for 5 to 10 more minutes, until peppers are tender, yet crisp. Remove pepper mixture for the heat.
  • In a bowl, beat eggs and milk. Stir in the quinoa and add cheese, potatoes, pepper mixture, salt, pepper and thyme. Pour into the prepared baking dish and bake for about 35 to 45 minutes, until the top is golden brown. Let mixture rest about 5 minutes before serving

1 cup quinoa
2 cups chicken broth
1 (16 ounce) package frozen baby lima beans, thawed and rinsed (about 2 cups)
2 tablespoons heavy cream
2 tablespoons sriracha hot chili sauce
1 (3 1/2 ounce) package sun-dried tomatoes, chopped
1 1/2 tablespoons fresh lemon juice
1/2 cup parmesan cheese, grated
1/4 cup orange juice

Steps:

  • Put quinoa with chicken broth in a large saucepan and bring to a boil.
  • Reduce to simmer, cover and cook until all the broth is absorbed (about 10-15 minutes). Stir occasionally while simmering.
  • In a small bowl; mix cream, sriracha, lemon juice, and sundried tomatoes.
  • Add tomato mix to cooked quinoa and stir well.
  • Stir in lima beans, orange juice, and parmesan cheese.
  • Heat on low until cheese melts through (about 5 more minutes) then serve.

PERUVIAN BAKED QUINOA AND CHEESE

This is an interesting way of using Quinoa, a wonder grain that is thousands of years old. My wife resisted strongly when I introduced this grain into our household but now loves it. One of the nice things about it is that it cooks in 15 minutes from scratch so it is a time easy menu item. Make sure you rinse it well in water as it may be bitter. I have never experienced bitterness but that is what all the packages and websites say. I have made some changes to the recipe which I have noted in the recipe. 2 teaspoons olive oil
1 medium leek, white and pale green parts halved and sliced (1 cup, Jim used green onions)
1/2 cup diced red bell pepper
1/2 cup diced green bell pepper
1 1/2 cups quinoa, rinsed and drained
2 garlic cloves, minced (2 tsp.)
2 large eggs
1 cup milk (Jim suggests that you increase this to 2 cups of milk or it may be too dry)
1 1/2 cups grated cheddar cheese, . jim used 50 50 sharp cheddar & pecorino romano plus more for the top see instructions (4 ounces)
1 teaspoon instant chicken bouillon granules (Jim's substitution or use salt to taste)
1 tablespoon sesame seeds (Jim's addition)

Steps:

  • 1. Heat oil in a medium saucepan over medium heat. Add leak and bell pepper; cover, and cook 5 minutes, or until tender. Stir in quinoa, garlic, and sesame seeds, and cook, uncovered, 3 to 4 minutes, or until quinoa grains turn opaque.
  • 2. Add 3 cups water, and season with the chicken granules. Taste for salt and add more granules or salt as desired. Cover, reduce heat to medium low, and simmer 3 or 4 minutes more, or until most liquid has been absorbed. Remove from heat, and let stand for 5 minutes.
  • 3. Preheat oven to 350°F Coat 13 X 9 inch baking dish with cooking spray. Whisk together eggs and milk in large bowl. Fold in quinoa mixture and 80% of the cheese. Transfer to a prepared baking dish, level contents, and add remaining 20% of the cheese to the top, and bake 30 to 35 minutes, or until browned around the edges and top.
  • 4. Jim's Additional Step: Once removed from the oven, sprinkle top with additional shredded cheese. Lay a piece of aluminum foil over the top and set on stove top for a few additional minutes. The goal is to allow the additional cheese to melt as a second layer of melted cheese on the top of the hot casserole. Don't worry, the casserole will retain all the heat required to melt the addition cheese - don't go wild here - just a nice additional thin melted topping. A little bright red paprika on this layer would also add some additional color. Enjoy!
  • Suggest for a smaller serving that you just make ½ of everything and place in a small 7" X 9" pan. This is the perfect size for a smaller meal and will cut into very nice 4 piece serving pieces.

ORGANIC PERUVIAN QUINOA MUSHROOM SALTADO

1 cup cremini mushrooms
1 cup Peruvian quinoa, preferably organic
1 teaspoon vegetable oil, plus more for cooking
1/2 teaspoon kosher salt
1 teaspoon garlic paste
2 tablespoons soy sauce
2 teaspoons red wine vinegar
1 teaspoon Peruvian Yellow Pepper Paste, recipe follows
1/2 teaspoon ginger paste
1/2 medium red onion, sliced 1/2-inch-thick
1 Roma tomato, sliced 1/2-inch-thick
1 tablespoon sliced green onions (dark greens only)
Leaves from 4 stems fresh cilantro
1 cup Peruvian yellow peppers ("aji amarillo")

Steps:

  • Wash mushrooms, then pat dry or let drain for 15 minutes. Remove and discard stems, then slice caps 1/4-inch thick. Set aside.
  • Wash quinoa with cold water three times, then let drain for 10 minutes. Combine vegetable oil, quinoa, salt and 1/2 teaspoon garlic paste in a pot on medium heat. Add water to cover quinoa by 1/4 inch and boil until done, about 30 minutes. Remove from heat and set aside.
  • Combine soy sauce, vinegar, Yellow Pepper Paste, ginger paste and remaining 1/2 teaspoon garlic paste in small bowl. Mix well and set aside.
  • Heat a wok over medium-high heat, then add vegetable oil and heat until smoking-hot. Add mushrooms and stir-fry for 1 minute, then set aside in small bowl.
  • Add more oil to the wok and heat until hot, then add red onions and cook for 1 minute. Add tomato and cook for 1 minute, then add three-quarters of the stir-fry cooking sauce and saute for 30 seconds more. Add cooked mushrooms and stir-fry for final 15 seconds. Set half aside. Add half of cooked quinoa and remaining stir-fry sauce to the wok and cook for 1 minute.
  • To serve, add all quinoa and pour over all mushroom stir-fry. Garnish with the green onions and cilantro leaves and serve.
  • Cut peppers in half and remove seeds and veins.
  • Add to a medium pot and cover with cold water. Place over medium heat and bring to a boil, then let peppers boil for 10 minutes. Remove from heat and drain well for 15 minutes. Repeat this step two additional times, starting peppers each time in fresh cold water.
  • While still warm, peel off skin. Blend skinless peppers in a blender to create a paste. Let paste cool down, then store in a lidded container in the fridge.

QUINOA SOUP (PERUVIAN STYLE)

I was born with my grandma preparing this soup up in the mountains of Peru. The other day I decided to re-created and give my grandma's recipe a little bit of modern taste and lower calories. This soup is excellent for vegetarian people and for people that love quinoa.

1 cup quinoa
6 cups water
1 shallot, finely chopped
1 1/2 tablespoons garlic, finely chopped
1 cup soymilk or 1 cup low-fat milk
fresh parsley
1 teaspoon cumin
1 (8 ounce) can tomato sauce
2 tablespoons sazon goya with coriander and annatto
1 (8 ounce) box firm tofu
1 tablespoon olive oil

Steps:

  • In a medium pot, on medium heat, toss the olive oil, garlic and the onions and cover until the onion looks soft (approx. 2 minutes, stirring the ingredients if they seemed to be burning).
  • Add the quinoa and stir (30 seconds)
  • Add the 6 cups of water, the cumin, the annatto, the parsley and salt to taste, mix the ingredients and bring to boil. When the soup is boiling turn down the temperature a little bit. Let boil for about 20 minutes.
  • Add the tomato sauce and the tofu. Taste if you need to add more salt. Let it boil for 15 more minutes.
  • Lower the temperature to low and let it boil for 10 more minutes.
  • Add the milk or soy milk and turn off the stove. Stir the soup until the milk has mixed with the rest of the ingredients. Add more parsley if you want.
  • Enjoy!
  • My grandma used fresh cheese or "Mexican Cheese" instead of tofu.

140g frozen sweetcorn
1 tbsp extra-virgin olive oil
75g cherry tomatoes , quartered
1 small pack coriander , leaves roughly chopped

1/2 long red chilli , finely chopped (deseeded if you don't like it too hot)

25g mixed nuts , such as brazils, almonds, hazelnuts, pecans and walnuts

Steps:

  • Half fill a medium pan with water and bring to the boil. Rinse the quinoa in a fine sieve then add to the water, stir well and simmer for about 12 mins or until just tender.
  • While the quinoa is cooking, put the sweetcorn in a dry frying pan and place over a medium-high heat. Cook for 5-6 mins, turning every now and then until lightly toasted. Set aside.
  • Rinse the cooked quinoa in a sieve under cold water, then press hard with a ladle or serving spoon to remove as much of the excess water as possible.
  • Tip the quinoa into a bowl and toss with the olive oil, sweetcorn, tomatoes, coriander, spring onions, lime zest and chilli. Season well with black pepper.

1 large jalapeño, seeded
2 cloves garlic
1 bunch cilantro, cleaned and stemmed (2 cups leaves)
2 tablespoons lime juice
1/4 teaspoon salt
1/4 cup extra virgin olive oil
1/2 cup red or regular quinoa, rinsed
16 jumbo shrimp or prawns, tails on, deveined
1/2 teaspoon dried oregano
1/2 teaspoon ground cumin
1/4 teaspoon cayenne
1/2 cup unbleached white flour
2 large eggs, lightly beaten

Steps:

  • 1. Make the sauce first. In a food processor or blender, finely mince the jalapeño, garlic, and cilantro. Add the lime juice and purée. Drizzle in the olive oil to make a smooth sauce. Reserve. 2. Bring a large pot of water to a boil. After rinsing the quinoa, add it to the boiling water and cook for 10 minutes, then drain. Spread the quinoa out on a baking sheet lined with paper towels to dry. It should be quite dry to the touch; pat it with towels if necessary. 3. Pat the shrimp dry, if damp, and put it in a medium bowl. Mix the oregano, cumin, and cayenne and sprinkle over the shrimp; toss to coat. 4. Preheat the oven to 425°F. Prepare 2 pie pans, one with the flour, one with the beaten eggs. Dip the shrimp in the flour, then the egg, then the quinoa. Place 2 heavy baking pans in the hot oven for 5 minutes. Take each out, spray liberally with oil, then quickly place the shrimp on the hot pans, keeping them from touching. Spray the coated shrimp with oil, and bake for 5 minutes. Flip the shrimp with tongs, then bake for 5 minutes more. Cut one through the thickest part to make sure they are cooked through. The baking time will vary with the size of the shrimp. 5. Serve the shrimp hot with the aji sauce.
