On those cold, winter days, this chili is warming and filling. Feel free to adjust the amount of chili powder to your personal taste.

2 lbs ground beef
1 medium onion, chopped
1 (28 ounce) can crushed tomatoes
1 (30 ounce) jar spaghetti sauce
1 (8 ounce) can tomato sauce
2 (16 ounce) cans kidney beans, drained
3 tablespoons chili powder
1 teaspoon salt
1/2 cup all-purpose flour
3/4 cup shredded cheddar cheese
1/2 cup yellow cornmeal
1 teaspoon baking powder
1 egg, beaten
3 tablespoons milk
1 1/2 tablespoons cooking oil

Steps:

  • Fry ground beef and onions in a large pan until beef loses its pinkness; drain.
  • Place in crock pot with remaining ingredients, and stir.
  • Simmer on low for 7 hours, then turn to high setting.
  • To make dumplings, combine flour, cheddar cheese, cornmeal, and baking powder in a medium bowl.
  • In a small bowl, mix beaten egg, milk, and oil.
  • Add to flour mixture, and stir with a fork until just combined.
  • Drop dumplings by tablespoonfuls into chili.
  • Cover and cook for 50-60 minutes more.

1/2 cup all-purpose flour
14 1/2 ounces chicken broth
15 ounces salsa verde or 2 cups salsa verde
5 ounces evaporated milk
1 large rotisserie-cooked chicken, meat shredded in large chunks or 6 cups cooked chicken
1 cup whole milk
3 tablespoons unsalted butter
1 1/2 cups all-purpose flour
1/2 cup yellow cornmeal
1 tablespoon baking powder
3/4 teaspoon salt
1/4 cup thinly sliced scallion top
1/4 cup chopped fresh cilantro

Steps:

  • Chicken: Heat butter over medium-high heat in a large (11 - 12 inch), deep ovenproof skillet or 5-6 quart Dutch oven.
  • Whisk in flour to make a paste.
  • Mix broth, salsa verde, and evaporated milk and whisk in all at once. Whisk, vigorously at first, until mixture simmers and thickens to sauce consistency.
  • Stir in chicken, heat through, and cover to keep warm.
  • Meanwhile, adjust oven rack to lower-middle position and heat oven to 400 degrees.
  • Dumplings: Heat milk and butter in a small saucepan until steamy.
  • Mix flour, cornmeal, baking powder, salt, scallions, and cilantro in a medium bowl with a fork. Stir in milk mixture to form a smooth, firm dough.
  • Pinch off Ping-Pong-ball-size peices of dough with your fingers and drop onto chicken mixture.
  • Return chicken to a simmer over medium-high heat.

1/2 cup cornmeal
2/3 cup milk
1/2 cup shredded Cheddar cheese (2 oz)

Steps:

  • In 4-quart Dutch oven, mix chicken and tomato sauce. Heat to boiling; reduce heat. Cover; simmer 5 minutes, stirring occasionally. Stir in beans and corn. Heat to boiling; reduce heat to low.
  • In medium bowl, mix Bisquick mix, cornmeal and milk until soft dough forms. Drop dough by 12 spoonfuls onto hot chili (do not drop directly into liquid). Cook uncovered over low heat 10 minutes. Cover; cook 10 minutes longer.

I have been making this stew for more than 20 years. It's a dish I use to celebrate the harvest season. It may be a bit labor-intensive, but it is worth every minute! Experiment with different root vegetables, and use the dumplings in other hearty stews or soups. They are so yummy!

1 pound boneless country-style pork ribs, cut into 1-inch chunks
2 tablespoons vegetable oil
2 cups chopped onions
2 cloves garlic, crushed
1 ½ pounds potatoes, peeled and cubed
2 quarts water
2 teaspoons beef bouillon granules
4 large carrots, peeled and cut into 1/2-inch pieces
1 ½ tablespoons chili powder
1 teaspoon dried marjoram
½ teaspoon dried thyme
2 bay leaves
⅛ teaspoon ground nutmeg
1 teaspoon salt
⅛ teaspoon ground black pepper
6 tablespoons all-purpose flour, sifted
¼ cup yellow cornmeal
2 teaspoons white sugar
1 ½ teaspoons baking powder
¼ teaspoon dried sage, crumbled
¼ teaspoon dried thyme
½ teaspoon salt
2 tablespoons vegetable shortening
½ cup milk, or as needed

Steps:

  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Arrange pork pieces one layer deep in a large baking pan. Broil, stirring often, until meat is browned, about 10 minutes. Pour off and discard the fat.
  • Heat vegetable oil in a Dutch oven or large skillet over medium heat. Stir in onions; cook and stir until the onions have softened and turned translucent, about 5 minutes. Add garlic and cook, stirring frequently, until the garlic is fragrant but not brown, 2 minutes more.
  • Stir in potatoes and cook for 5 minutes. Pour in water, beef bouillon, sliced carrots, chili powder, marjoram, 1/2 teaspoon thyme, bay leaves, nutmeg, 1 teaspoon salt, and pepper. Bring to a boil, then reduce the heat and cover. Simmer until the meat and all of the vegetables are tender, about 3 hours.
  • To make the Sage-Cornmeal Dumplings: combine flour, cornmeal, sugar, baking powder, sage, 1/4 teaspoon thyme, and 1/2 teaspoon salt in a large bowl. Cut in the shortening until the mixture resembles a coarse meal. Add milk all at once, stirring just until the mixture holds together.
  • When the stew is ready, remove the bay leaves. Bring the stew to a gentle boil over medium-low heat. Drop the dumplings by rounded spoonfuls evenly over the surface. Cover the pot and boil for 12 minutes, until the dumplings are cooked through. Ladle the dumplings into soup bowls and top with lots of stew.

2 teaspoons salt
2 cups water
3/4 cup chopped whole kernel corn
2 tablespoons butter
1 teaspoon finely chopped onion

1 egg, beaten
1-1/4 cups all-purpose flour, divided
2-1/2 teaspoons baking powder
2 quarts chicken broth

Steps:

  • In a saucepan, combine cornmeal, salt and water; bring to a boil over medium-high heat, stirring constantly. Cook and stir until very thick. Reduce heat; cook and stir for 3 minutes. Remove from the heat. Stir in corn, butter, onion and pepper; let stand for 3 minutes. Add egg; mix well. In a bowl, combine 3/4 cup flour and baking powder. Add to cornmeal mixture; beat well. Shape into 1-1/2-in. balls; roll in remaining flour to lightly coat. In a Dutch oven or kettle, bring broth to a boil. Add dumplings. SECRET INGREDIENT Beer flavors this robust chicken and vegetable stew. Any light-or medium-colored lager will do, but pilsner-with its pronounced taste of hops-works best.

3 tablespoons unsalted butter
1 1/2 pounds boneless, skinless chicken thighs (about 5), cut into 1-inch pieces
Coarse salt and ground pepper
1/2 bunch scallions, trimmed and cut into 1/2-inch pieces
1 green bell pepper, ribs and seeds removed, cut into 1/2-inch dice
2 celery stalks, cut into 1/2-inch dice
2 medium carrots, cut into 1/2-inch dice
1 teaspoon dried thyme
1/4 cup all-purpose flour
2 bottles (12 ounces each) pilsner or another light- or medium-bodied lager
1 can (28 ounces) whole peeled tomatoes (with their juice)
1 to 2 tablespoons red-wine vinegar
Cornmeal Dumpling Dough (recipe follows)

Steps:

  • In a large Dutch oven or other heavy pot, melt 1 tablespoon butter over medium-high. Pat dry chicken and season with salt and pepper. Add to pot, and cook, stirring occasionally, until browned on all sides, about 5 minutes. With a slotted spoon, transfer chicken to a medium bowl.
  • Add remaining 2 tablespoons butter, the scallions, bell pepper, celery, and carrots to pot. Cook, stirring occasionally, until scallions and celery are soft, about 4 minutes. Stir in thyme and flour and season with salt and pepper; cook 1 minute. Whisk in beer and return chicken to pot. With your hands, roughly tear tomatoes and add to pot along with their juices. Bring to a rapid simmer and cook, uncovered, 30 minutes. Season to taste with vinegar.
  • Reduce to a medium simmer and drop dough by rounded tablespoonfuls on top of stew. Cover and simmer until dumplings are cooked through, 7 to 10 minutes. Serve immediately.

1/4 c peanut oil
2 Tbsp butter or margarine
1 1/2 lb skinless boneless chicken breast, cut into 1 1/2-inch cubes, ( 2 cups)
3 Tbsp all-purpose flour
1 lb ground pork sausage
1 tsp salt
1 tsp freshly ground black pepper
1/4 tsp ground red pepper
1 c sweet onions, chopped
1 c poblano pepper, seeded and chopped
1 c sweet red bell pepper, seeded and chopped
2 large jalapeno peppers, seeded and finely chopped
2 clove garlic, minced
2 tsp ground chili powder
1 tsp ground spiced annatto
1 tsp cumin seeds
1/2 tsp ground allspice
1 tsp hot pepper sauce
2 c low-sodium chicken broth
1 c frozen corn, thawed and drained
1 can(s) (15.5-oz.) cannellini beans, rinsed and drained
1 can(s) (15-oz.) black beans, rinsed and drained
1 can(s) (12-oz.) evaporated milk
1 pkg (6-oz.) cornbread or muffin mix, plain or mexican style
1 Tbsp sugar
2 Tbsp whole milk
1 1/2 c sour cream
1 c monterey jack cheese, shredded

Steps:

  • 1. Heat peanut oil and melt butter in a 5-quart Dutch oven with lid, over medium heat. In a medium bowl toss chicken cubes and flour together until chicken cubes are coated. Add coated chicken cubes, pork sausage, salt, ground black pepper and ground red pepper to heated oil and butter, and cook for 3 minutes, or until meat is partially cooked, stirring frequently, uncovered. Stir in onions, poblano peppers, roasted red peppers, jalapeno peppers, garlic, ground chili pepper, ground spiced annatto, cumin seeds, ground allspice and hot pepper sauce and cook an additional 5 minutes, or until meat is no longer pink,( keeping pork sausage crumbled), and vegetables are tender, stirring frequently, uncovered.
  • 2. Add in chicken broth, corn, cannellini beans, black beans and evaporated milk to chili mixture and cook an additional 5 minutes, stirring occasionally, uncovered.
  • 3. Meanwhile, prepare dumplings. In a medium bowl, stir cornbread mix, sugar, whole milk and 1/2 cup sour cream together with a spoon until blended. Drop dumpling mixture by heaping tablespoons into cooking chili mixture. Cover Dutch oven with lid, reduce heat to medium-low, cook an additional 10 minutes, or until dumplings puff and firm.
  • 4. To serve chili, ladle equal portions of chili and dumplings into 6 serving bowls. Place one or two dollops of remaining 1 cup sour cream on the top center of each chili and dumpling bowl and sprinkle 1 to 2 heaping tablespoons shredded cheese over the top of each to garnish and serve immediately.
