SIMPLE PERUVIAN CEVICHE

Simple Peruvian Ceviche image

The best and easiest Ceviche recipe I've ever tasted (and I've tried them all over South America). It's quick, easy and disappears quickly. The habanero peppers make it spicy without giving it the distinctive flavor of jalapenos and it's great without hot peppers too. You can adjust any of the seasonings to suit your taste. I am not a cilantro fan, but this is the only recipe in which I will tolerate cilantro.

Categories     Tilapia

Time 30m

Yield 6-8 serving(s)

Number Of Ingredients 8

2 lbs tilapia fillets or 2 lbs other firm white fish fillets, cubed
8 -10 garlic cloves, chopped
1 teaspoon salt
1/2 teaspoon black pepper
2 teaspoons fresh cilantro, chopped
1 habanero pepper, seeded and chopped (or real Peruvian Aji Amarillo, if you can find it)
8 -12 limes, freshly squeezed and strained to remove pulp, enough to cover fish
1 red onion, thinly sliced and rinsed

Steps:

  • Combine all ingredients except red onion and mix well.
  • Place red onion on top and let it marinate in the refrigerator for at least 2-3 hours before serving.
  • Before serving, mix well and serve with lettuce, corn, avocado or other cold salad vegetables on the side.
  • It is important to use a juicer that presses the juice out of the limes, not one that will tear the membrane of the lime sections since this will make the lime juice bitter.

PERUVIAN SALMON CEVICHE

Peruvian Salmon Ceviche image

This ceviche recipe is from my husband's family from Peru. The ceviche is made with salmon, shrimp, and of course, lots of lime juice. You can substitute other fish, like tilapia, as well. Use fewer chile peppers (or remove the seeds) if you don't like it too spicy. In Peru, it is generally eaten with sweet potatoes.

PERUVIAN CEVICHE DE PESCADO

Peruvian Ceviche De Pescado image

Classic Peruvian Ceviche Use any combination of whitefish (I use tilapia or halibut, if you'd like to splurge, shrimp, scallop, and/or crab (lump works just fine, but don't do the salt water bath on the lump type) And must must must be served with Peruvian Aji Salsa Verde and chips!! It is not a form of salsa in the normal american idea of the word, but meaning only that it is a sauce, its nothing like the chunky sort of salsa served at latin restaurants etc. Also, can be made days in advance, the first time I made it, i made it the evening before, but sampled and it tasted just the same if not better the next evening when I served it, and the same was true a few days later with the leftovers : )

Provided by GoldsmithLissa

Categories     One Dish Meal

Time 40m

Yield 4-6 serving(s)

Number Of Ingredients 17

1 lb white fish (tilapia or halibut recommended)
1 lb shrimp
1 (6 ounce) container lump crab
salt (to add to water to tenderize fish and or or shrimp)
3/4 cup lime juice
1/4 cup lemon juice
1/2 teaspoon salt
1 garlic clove, chopped
1 -2 aji amarillo chili pepper, chopped (yellow Peruvian peppers)
1 -2 jalapeno, chopped (to taste, remove seeds for milder spice)
1 teaspoon parsley, chopped
1 teaspoon cilantro, chopped
1/2 cup purple onion, chopped
3 -4 lettuce leaves
4 ears corn, cooked and cut into 2-inch pieces
1 lb sweet potato, roasted in the skin, peeled, and cut
1 lb yucca root, peeled, cut, and boiled until soft

Steps:

  • Soak fish and/or shrimp (do not include lump crab if you're including it) in salted water for 1 hour to tenderize. Drain well.
  • Add lemon/lime juice until fish is covered (using more, if necessary) Add the salt, garlic, onion and peppers and refrigerate for 20 minutes.
  • Before serving, fold in cilatro and parsley.
  • To serve, line a bowl or large platter with the lettuce. Place the ceviche in the center. Surround it with 3 separate mounds: corn pieces at the top of the platter, sweet potato slices on one end, yucca on the other.
  • My personal method: pour off extra citrus mixture from ceviche (to desired combination, myself I prefer extra a little extra juice in the bottom to toss the fish back into as I'm eating); use the citrus to soak the corn, potatoes, and yuca for another 10 or 15 minutes, then drain off before serving.

PERUVIAN CEVICHE

Peruvian Ceviche image

Categories     appetizer

Time 30m

Yield 4 to 6 servings

Number Of Ingredients 17

4 Roma tomatoes, seeded and diced
2 stalks celery, chopped into small cubes
1 cucumber, peeled, seeded and chopped into small cubes
1 red onion, diced
1/2 cup roughly chopped fresh cilantro
1/2 cup lime juice (3 to 4 limes)
2 teaspoons minced fresh ginger
1 teaspoon minced garlic
Kosher salt and freshly ground black pepper
One 15-ounce can white corn, drained
2 tablespoons aji amarillo paste
3 bay leaves
Juice of 2 limes
Kosher salt and freshly ground black pepper
1 pound large shrimp (21/25), peeled and deveined
2 to 3 avocados, diced
Fried Peruvian corn, such as Amazonas, for serving (see Cook's Note)

Steps:

  • For the salsa: Combine the tomatoes, celery, cucumber, onion and cilantro in a mixing bowl.
  • Add the lime juice, ginger, garlic and salt and pepper to taste. Add the corn and aji amarillo paste. Mix well.
  • For the ceviche: In a separate bowl, add the bay leaves, lime juice, some salt and pepper and 5 cups water. Add the shrimp and toss to coat. The citric acid in the lime juice will cook the shrimp in about 3 to 5 minutes. Once the shrimp turn opaque, take them out and place them on ice to stop the cooking process.
  • To serve, place some avocado on each plate. Top with 6 to 7 shrimp and some of the salsa. Garnish with some Peruvian corn.

PERUVIAN CEVICHE

Peruvian Ceviche image

Ceviche is Peru's national dish. Walking the streets of Lima, it is hard to go three blocks without finding a cevicheria serving up the popular delicacy. Versions are also sold from mobile vending wagons pushed along the dusty streets of the capital's shantytowns and at fine eating establishments in the most affluent residential areas. This one, with its spicy red peppers and tart lemon juice, would go well with corn and sweet potatoes, a light and refreshing meal.

PERUVIAN CEVICHE WITH PICKLED RED ONIONS

Peruvian Ceviche With Pickled Red Onions image

This recipe comes from Ciudad in downtown Los Angeles. The onions need to pickle for a day, so plan ahead before making this. This recipe calls for halibut, but you can use any firm white fish. It also uses aji amarillo chilies, but jalapeno peppers can be substituted if need be.

Provided by threeovens

Categories     One Dish Meal

Time 1h10m

Yield 4 serving(s)

Number Of Ingredients 22

1/2 lb red onion, thinly sliced
1/2 cup white vinegar
1/2 teaspoon black pepper, cracked
1/2 teaspoon cumin seed, roughly chopped
1/2 teaspoon dried oregano
2 garlic cloves, sliced
1 tablespoon sugar
3/4 teaspoon salt
1 small beet, trimmed peeled and cut into 8 wedges
1 lb halibut, skinless boneless and cut into 1/4 inch dice (or other firm white ocean fish)
1 cup fresh lime juice
1/2 red onion, finely diced
1 aji amarillo chile, seeds removed and minced
1/2-1 jalapeno pepper, seeds removed and finely diced
1/2 inch piece fresh ginger, peeled and grated
1/4 cup extra virgin olive oil
1/2 bunch cilantro, finely chopped
1 1/2 teaspoons aji amarillo chili paste
salt, to taste
plantain chips or tortilla chips, for garnish
1/3 cup pickled red onions, more as desired, for garnish
avocado, sliced for garnish

Steps:

  • The day before making the ceviche, place sliced onions in a medium saucepan and cover with water; bring to a boil, remove from heat, then strain onions and set aside.
  • In the saucepan, combine vinegar, black pepper, cumin seeds, oregano, garlic, sugar, salt and beet; bring to a boil, reduce heat and simmer 7 minutes.
  • Add the onions and simmer an additional 7 minutes.
  • Place mixture in a covered container and refrigerate at least one day.
  • This makes more than is needed for the ceviche, but the pickled onions can kept up to a month, in the refrigerator, and used in other dishes, like salad, and as a garnish.
  • To make the ceviche, place fish in a large glass or other nonreactive bowl; cover with lime juice and allow to marinate for about 20 minutes, stirring occasionally.
  • Drain fish, but reserve 1/4 cup of the lime juice.
  • To the fish, add the onion, chile peppers, ginger, oil, cilantro and chile paste; stir in the reserved lime juice.
  • Chill thoroughly (I chill overnight).
  • Drain ceviche and season to taste with salt.
  • Serve in a chilled martini glass, if desired, and garnish with plantain chips or tortilla chips, pickled red onions, and slices of avocado.

No visit to Peru is complete without ceviche, but you can experience it close to home. Because ceviche is 'cooked' by acidity and not with heat, be sure to use very fresh seafood. This recipe is from a chef friend.

PERUVIAN CEVICHE

Peruvian Ceviche image

Like carpaccio, ceviche (seh-VEE-chay) is a raw fish recipe that modern cooks just love to play with. It is essentially fish "cooked" in the acid of citrus juice and served with a cold beer on a hot day. The dish originates in Peru, and is thought to be a development from Spanish escabeche, which is a vinegar-marinated dish. This recipe is for the classic Peruvian ceviche. Ceviche is so sharp and acidic it cries out for beer and tortilla chips as an accompaniment -- although you won't find tortilla chips in Peru. In Peru, you will most often find this served with potatoes, either sweet or white.

Time 3h

Yield 10 serving(s)

Number Of Ingredients 8

1 lb fish fillet, white saltwater (albacore, sole, snapper, halibut anything you would see on a sushi menu)
1 cup lime juice, key limes if you can get them
1/2 cup lemon juice
1/2 cup orange juice
1 tablespoon salt
1 rocoto chilies (chile manzano in Mexican markets) or 2 aji amarillo chilies (substitute a habanero)
1 medium onion, sliced very thinly into half-moons
4 tablespoons cilantro, chopped

Steps:

  • Cut the fish into small pieces: You can dice it or leave it in pieces up to 1 inch square, but remember that the larger the pieces the longer it will take to marinate.
  • Salt the fish, then cover with the citrus juice in a non-reactive (glass or plastic) container with a lid. Add the sliced onions and the chiles.
  • Chill this in the fridge for at least 2 hours, possibly as much as 3 hours -- very large pieces can take longer. If your fish is truly raw-eating quality, it is OK if the centers of the pieces are still raw-looking.
  • To serve, lay down some of the onions and chiles and top with the fish. Garnish with the cilantro.
