A convenient, quick, low-cost way to whip up a yummy cauliflower pizza (or flatbread) for one. Buy inexpensive frozen cauliflower when on sale and thaw as needed to make a single crust. Uses just a few ingredients I always have on hand. The seeds are carried in the health section of grocery stores, even in my small town. You could leave them out, but I recommend them for added nutrition-especially iron, fiber, and protein.

- Preheat the oven to 400 degrees F (200 degrees C). Cover a pizza pan with parchment paper.
- Pour frozen cauliflower into a microwave-safe bowl and heat in the microwave until just thawed, about 1 minute. Place cauliflower in the middle of a thin cloth napkin; twist and squeeze repeatedly to wring out as much moisture as possible. Transfer cauliflower to a food processor. Process until crumbled. Return to the cloth napkin and repeat twisting and squeezing. Transfer cauliflower pulp to a mixing bowl.
- Add egg, mozzarella cheese, Parmesan cheese, seed blend, basil, garlic powder, and salt to the bowl with the pulp and stir together. Turn mixture out onto the center of the prepared pizza pan. Form into a ball, then use palms of hands to gradually press into a flat 8-inch circle. Use fingertips to create a smooth, slightly thicker outer edge.
- Bake in the preheated oven on the center rack until top begins to turn golden brown, 16 to 17 minutes. Remove from oven and use a spatula to loosen paper. Flip crust and return to oven until golden, 5 to 6 minutes more.
- Combine olive oil, garlic, basil, and salt in a bowl. Spread sauce on top of baked crust. Top sauce with mozzarella cheese, bruschetta sauce, and feta cheese. Return pizza to the oven until cheese is bubbly, 3 to 5 minutes more.

- Preheat oven to 450°F (230°C).
- Place a parchment paper-lined baking sheet in the oven.
- To make four personal-sized pizzas, divide pizza dough into fourths.
- Roll out each piece of dough to desired thickness.
- To par-bake the pizza rounds, arrange the pizza dough rounds on the hot baking sheet.
- Bake for 3-4 minutes or until dough looks puffy and dry. Dough should not be golden brown.
- Cool pizza rounds on a wire rack.
- When cool, top your rounds with desired toppings.
- Place prepared pizzas on a baking sheet and freeze, uncovered, for 3 hours so the toppings adhere to one another.
- Wrap the now-frozen pizzas in plastic wrap and aluminum foil to prevent freezer burn. Label each pizza as desired and freeze for 1-2 months.

- Unwrap pizza and place directly on rack or parchment-lined baking sheet.

- Preheat the oven to 450*.
- Line a large baking sheet with parchment paper and set aside.
- In a 12" non-stick skillet over medium high heat, brown the sausage adding a small amount of water to help the meat release the juice and render the fat. Breaking the sausage up with the back of a spatula, brown the meat until just cooked through. About 15 minutes. Using a slotted spoon, remove the sausage from the skillet reserving the fat that remains in the pan.
- Sauté the package of potatoes, stirring occasionally until they turn brown and tender and if necessary, add 2 Tablespoons of water to allow potatoes to steam a bit. You can also keep slightly covered. When potatoes are still slightly firm (about 17 minutes) and golden brown add the sausage back to the skillet and mix thoroughly. Transfer entire mixture back to the bowl and set aside.
- Again, do not rinse skillet. Add 1 tortilla to the skillet and toast on each side about 1-2 minutes per side until golden and slightly crisp. Remove from pan, put on a plate and toast remaining tortillas. Stack tortillas and cover with a tin foil or kitchen towel to keep warm and allow any steam to heat through.
- Put 4 tortillas on the parchment lined baking sheet and using the back of a large Tablespoon, spread enough pepper jelly on each tortilla, stopping about ¼" from the outside edge. Once 4 tortillas are coated with jelly, spoon the sausage/potato mixture on top. Add 5 small scoops of ricotta cheese to each pizza and place in 450* oven for 12 - 14 minutes until crisp and jelly begins to bubble.
- Once cooked through, remove, and add another small amount of ricotta cheese to each pizza. At this time you may serve 1 pizza per person while cooking the next set of 4 pizzas. To serve them all together, if you have a second baking sheet, these can be cooked together in the oven, rotating the sheets from the top to the bottom about ½ way through the cooking time, just like when baking cookies.
- Place pizzas on plate, using a pizza cutter, cut into triangles and serve.
- Tip: This is a great make-ahead snack for the kids. Sauté the meat and potato mixture and put into an air tight container in the refrigerator. Toast the tortillas as well and set aside lining each tortilla between a small sheet of wax paper.
- To assemble, add the jelly to the previously toasted tortilla, put the potato/sausage mixture on top and once again add the ricotta cheese. For children that are comfortable with the toaster oven, place on a small sheet pan and toast until warmed through being careful not to burn the edges. Allow to cool slightly before cutting and serving.

HOMEMADE PERSONAL PIZZA

- Proof yeast by placing warm water in the large bowl of a heavy duty stand mixer. Sprinkle yeast over the water and let sit for 5 minutes until yeast is dissolved.
- After 5 minutes, stir if yeast not completely dissolved. The yeast should foam which indicates it's active and alive.
- Using the paddle attachment, mix the flour, salt, sugar, and olive oil on low speed for a minute, then replace mixing paddle with dough hook.
- Knead dough on low to medium speed using the dough hook until the dough is smooth and elastic, about 10 minutes.
- Add flour or water if the dough is too sticky or water if too dry.
- Spread a think layer of olive oil over the inside of a large bowl. Place the dough in the bowl and turn it around until it's coated with oil.
- Cover the dough with plastic wrap and let sit in a warm place (75-85 degrees) and let it rise until it doubles in size. At least 1 - 1 1/2 hours though longer is better. Several hours is fine.
- If you don't have a warm spot heat oven to 150 then turn it off. When it's still a little warm put your dough in.
- Pre-heat your pizza stone in the lower third of the oven. 450 or 500 is best. (be sure to remove dough before pre-heating!)
- Punch down dough so it deflates. Divide into 4 to create personal pizzas. (un-needed dough can be frozen in an airtight container)
- Place dough balls that aren't being frozen for later use in their own bowls, cover with plastic, and let sit for 10 minutes.
- Prep toppings. Too many will make a soggy pizza so keep layers to a minimum.
- Flatten dough ball and stretch into a round. Work the dough on a floured surface. Using your hands or a rolling pin stretch it to about 1/2 ".
- Let rest for 5 minutes then stretch to desired diameter. Pinch edges if you want a lip
- Brush dough top with olive oil and let rest 5 minutes. Repeat with all dough balls in use.
- Sprinkle pizza peel (or flat cookie sheet) with cornmeal. Transfer first pizza to peel. Spread with sauce and toppings
- Sprinkle cornmeal on pizza stone (while in oven) and slide pizza onto it. Add more cornmeal to pizza peel if pizza doesn't slide easily.
- Bake until crust is browned and cheese golden. About 10-15 minutes. More cheese can be added at end of cooking time if desired.
- Use pizza peel to remove pizza from oven. Transfer to cutting board. Let sit for a minute or two before cutting.
HEART HEALTHY PERSONAL PIZZA
I don't know about you, but if I can't have pizza on my diet I feel as though I am being denied one of the basic four-food groups. I have created this recipe as one of my lunch choices for a very strict 1800-calorie per day low fat cardiac diet. - Pre heat pizza stone in a 400 degrees oven.
- Sauté garlic and broccoli.
- Carefully cut a pocket into the center of the pita, but be careful not to slice through, then stuff inside with the sautéed steamed Broccoli and garlic.
