CHAI-SPICE BANANA BREAD
I can't claim credit for this fantastic recipe, but I can sure pass it on! This recipe features spices found in a good cup of Chai, and packs a lot of banana flavor.

Steps:
- Preheat oven to 350º. In a large mixing bowl, mix butter into mashed bananas. Add sugar, egg and almond extract. Sprinkle baking soda, baking powder, spices and salt over entire mixture and mix well. Add flour and nuts last and mix well. Pour batter into buttered loaf pan. Bake 60-75 minutes. Cool on a rack before removing from pan.
SPICED BANANA BREAD
Adapted this from another banana bread recipe I found here (#1387). Added a lot of the spices from my pumpkin pie that I like and added chocolate chips for the kids.

Steps:
- preheat oven to 375°F.
- Grease 9 x 5 inch loaf pan.
- mix flour, baking powder, baking soda,
- salt, spices, coffee and lemon zest together and set aside.
- beat butter in large mixing bowl until soft and creamy.
- beat in sugar
- add eggs, vanilla and rum and beat until blended.
- add flour mix and beat until well blended.
- fold in mashed bananas, apple, and chocolate chips.
- pour into prepared pan.
- bake in center of oven for 1 hour 15 minutes or until toothpick inserted in center comes out clean.
- cool in pan 10 minutes.
- invert from pan and cool completely on rack.

- 1.Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.
- 2.In a large bowl, stir together the melted butter and sugar. Add the eggs and vanilla, mix well. Sift then Combine the flour, baking soda, cinnamon, nutmeg, ground cloves and salt, stir into the butter mixture until smooth. Finally, fold in the sour cream, walnuts and bananas. Spread evenly into the prepared pan.
- 3.Bake at 350 degrees F (175 degrees C) for 50 minutes, or until a toothpick inserted into the center of the loaf comes out clean. Cool loaf in the pan for 10 minutes before removing to a wire rack to cool completely.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a loaf pan with nonstick spray.
- Combine flour, baking soda, cinnamon, salt, and nutmeg in a bowl. Set aside.
- Mash bananas until mostly smooth but some chunks remain. Add eggs, oil, maple syrup, sugar, and vanilla extract; mix with a wooden spoon. Add flour mixture and walnuts. Mix just until flour is moistened. Pour batter into the prepared pan.

- Preheat oven to 350 degrees. Grease a 9 x 5 x 3-inch loaf pan with non-stick cooking spray.
- In a large bowl or electric mixer fitted with the paddle attachment, beat the butter and sugar until light and fluffy, about 2 minutes.
- Beat in eggs one at a time, incorporating well after each addition.
- Scrape down sides of bowl as necessary.
- In a medium bowl, whisk together the flour, baking soda, cardamom, cinnamon, ginger, allspice, and salt.
- Add to the butter mixture and beat gently until just combined.
- Add bananas, sour cream and vanilla and mix on low speed until just combined.
- Gently stir in nuts if using.
- Pour batter into prepared loaf pan and bake until deep golden brown and cake tester inserted into center comes out clean, 60-70 minutes.
- Let rest in pan for about 10 minutes, then turn out onto rack to cool completely.
