PERFECTION SALAD- GRANDMA'S VERSION
Perfection Salad was invented in 1905 when Knox gelatin ran a recipe contest. A Pennsylvania woman won 3rd place with this salad and, now her salad is famous and the other 2 recipes that got the higher awards are unknown. You never know. :) Here is my Grandma's version of Perfection Salad. I understand it is a little different...

- 1. Combine the 2 packages of lime Jell-O with 4 cups of hot water in a large bowl, stirring until dissolved. Stir in cold water. Immediately add vegetables and well drained pineapple. Pour mixture into a mold or serving dish. Refrigerate until mixture has set (about 2 or 3 hours).
- 2. Prepare the lemon Jell-O package following directions on package. Pour over the first mixture after it has set. Refrigerate the salad for several hours more or overnight. Unmold by dipping into hot water for 10 seconds.
- 3. OPTIONAL: Serve with a sauce made of 1 cup mayonnaise or Miracle Whip thinned with 1-2 tablespoons milk, and sweetened with 1-2 tablespoons sugar. mix well until sugar is dissolved. Adjust amounts of milk and sugar to your taste. Spoon over salad as it is served.
PERFECTION SALAD
A family recipe dating back to the early part of the 20th century, by my great-grandmother. I have a tendency to think of this as Grandpa's salad, because he always prepared it for us. My mom and sister still make it for our holiday family gatherings, although now we usually use sugarfree Jello. (I've recently discovered that Perfection Salad is not something unique to our family - there are a lot of old recipes on net for it. They're generally similar to the one below.)

Steps:
- Pour boiling water over jello in bowl.
- Stir until jello is disolved.
- Stir in vinegar, veggies, salt, and cold water.
- Pour into mold, chill until firm.
- Serve unmolded on chilled plate, topped with a generous dollop of mayonnaise (family tradition of the last 30 years or so demands that you use Best Foods mayo brand - *never* Miracle Whip).
- If preferred, use 1/2 cup celery and 1 cup grated carrot.
- You can use sugar-free jello for a diabetic/lowcarb version of Perfection Salad. Sometimes lemon jello is difficult to find - we've sometimes used lime instead.
AMISH PERFECTION SALAD
A delicious take on jello. Although the combination may sound a bit on the odd side, it is extremely refreshing, especially on a hot summer day. Perfect for BBQs and Potlucks. For a "healthier" version, we use sugar-free jello (0.3 ounce package). **Chilling Time not included in Preparation**

Steps:
- Mix together the Jell-O and sugar in a 9-inch glass pie plate.
- Add boiling water and stir for at least 2 minutes, until fully dissolved.
- Stir in the cold water and refrigerate 35 to 40 minutes, uncovered, until the Jell-O has set to a point between liquid and solid but is not fully firm.
- Add the pineapple and carrots. (Adding the pineapple and carrots at this stage will cause the heavier pineapple to sink to the bottom and the lighter carrots to stay on top.).
- DO NOT STIR.
- Refrigerate until firm.
PERFECTION SALAD
You can omit the sugar and the unflavored gelatin and lemon juice--and use a 3 oz. package of lemon or lime Jell-O in place of them. Keep the water amounts and vinegar and salt the same. Recipe from Maytag Dutch Oven Cookbook- 1949.

- 1. Sprinkle gelatin over 1/2 c. cold water for 5 minutes. Add vinegar and 1/4 more cup water, lemon juice, boiling water, sugar and salt. Stir until dissolved. Cool to room temperature. Add cabbage, celery and carrots, distributing them evenly throughout gelatin mixture. Individual salad molds can be used or and attractive dish that makes the salad thick enough to cut into attractive servings. (I used my bread loaf pan) Refrigerate until set. Serve on lettuce leaves.
- 2. Note: Can use bag of prepared cabbage from the produce department.
PINK PERFECTION CRANBERRY SALAD
A light refreshing, slightly sweet, molded cranberry salad. It's very pretty when cut. This recipe came from our church newsletter. It was submitted by one of the best cooks in our church.

- Blend softened cream cheese, mayonnaise and sugar.
- Add pineapple, cranberry sauce and nuts. Whip cream and fold into mixture.
- Pour into a mold or loaf pan that has been sprayed with vegetable spray or lined with plastic wrap.
- Freeze.
- To serve: let stand for 15 minutes, turn out on bed of lettuce and slice as needed.
- Unused portion may be returned to freezer and kept for a few weeks.

- Put in 9x12-inch dish, Jell-O and mix with 3 cups boiling water.
- When mixed, add pineapple with juice, mix well. Then add carrots, cabbage and celery and mix well. Then add 2 cups cold water and mix well again.
- Put in fridge to set up, and enjoy.

- Soak gelatin in cold water for 5 minutes. Add vinegar, lemon juice, boiling water, sugar, and salt. Cool. When mixture is the consistency of egg white, add cabbage, celery, pimientos or pepper, and radishes. Turn into a 5-cup ring mold rinsed in cold water. Chill overnight. Unmold on a bed of lettuce leaves. Prepare the following mayonnaise dressing.Mayonnaise Dressing:*Blend mayonnaise and half-and-half until smooth. Serve over salad.Note: A delicious accompaniment to cold sliced chicken or veal.
