Brie, Lettuce and Tomato Salad image

Leave the bacon behind for this BLT. It's so beautifully arranged and full of flavor, you won't miss the meat!

Number Of Ingredients 9

3 tablespoons extra-virgin olive oil
1 tablespoon red wine vinegar
1 tablespoon finely chopped shallots
1 teaspoon Dijon mustard
1/4 teaspoon salt
1/4 teaspoon pepper
4 cups packed arugula or mixed greens (about 5 oz)
2 medium tomatoes, sliced
3 oz brie cheese, cut into bite-size strips

Steps:

  • In small bowl, mix dressing ingredients with wire whisk.
  • In large bowl, toss arugula with half of the dressing. Arrange sliced tomatoes on medium platter. Place arugula and brie around tomatoes; drizzle with remaining dressing. Serve immediately.
