I was looking for something a little different for an appetizer to serve at a party. These were a bit of a hit to Tuna and non Tuna lovers alike. I made mine in patty pans and got about 24, but the recipe says to use muffin pans. N.B. The recipe is for Tuna in springwater but I was unable to list springwater!

4 sheets frozen shortcrust pastry, thawed
425 g canned tuna in water, drained well
125 g creamed corn
2 eggs, beaten
1 tablespoon fresh chives, chopped
1/4 cup sour cream
salt and pepper, to taste
1/2 cup tasty cheese, grated

Steps:

  • Cut 4 each 10cm circles from each pastry sheet.
  • Place pastry circles into a greased 12 cup medium muffin tin.
  • Combine creamed corn, eggs, chives and sour cream and season with salt and pepper.
  • Spoon mixture into pastry cases and sprinkle with cheese.
  • Bake in a preheated oven at 200ºC for 20-25 minutes.

396 g tuna
198 g sweetcorn
120 g cheese sauce
500 g shortcrust pastry
flour
1 egg

Steps:

  • Preheat the oven to 200C/180C Fan/Gas 6. Line two baking trays with baking paper. Drain the tuna and mix with the corn and the sauce. Season with pepper - you probably won't need salt.
  • Roll out the pastry on a lightly floured surface to the thickness of a 2p coin. Cut out 11cm rounds. Re-roll the pastry trimmings and cut out more rounds.
  • Brush one round with the egg, put 1 heaped tsp of the tuna mixture in the middle. Fold over the pastry to make a turnover and press the edges together to seal. Repeat until all the tuna is used up.
  • Put on the baking trays and brush with egg. Bake for 20-25 minutes until golden.

1 (8 ounce) can canned tuna, drained
1/3 cup celery, thinly sliced
2 cups shredded cheddar cheese
1/4 cup green onion, thinly sliced
1 1/2 cups milk
4 eggs
1 cup baking mix (Bisquick)
1/2 teaspoon grated fresh lemon rind
1 teaspoon lemon juice
1/4 teaspoon salt
1/8 teaspoon black pepper
1 garlic clove, crushed

Steps:

  • Preheat oven to 350°F.
  • Grease a 10" pie plate.
  • Layer the tuna, celery, cheese and onions in the pie plate.
  • Beat the remaining ingredients together for 15 seconds in a blender.
  • Pour the mixture into the pie plate.
  • Bake for about 40 minutes until golden brown or bake until a knife inserted in center comes out clean.
  • Cool for about 5 minutes before serving.
