A PERFECT EYE OF ROUND ROAST BEEF

A Perfect Eye of Round Roast Beef image

Without fail, my mother-in-law made an eye of round roast beef for Sunday dinner every week. While I tried to do so myself, I always had varying results. Sometimes, I overcooked it, and other times, it was too rare. I finally discovered this method that produced a perfect roast beef every time, that was medium, and even rarer in the center, and pleased all of our tastes. The key is to use an eye of round roast (or any well-rounded and even-shaped roast). The seasonings are up to you. I listed very basic seasonings, but I use different meat rubs at times, or whatever I'm in the mood for. While there are not enough pan drippings to make gravy, the juices make a lovely au jus to accompany the beef. This works for any size roast and couldn't be easier.

Yield 1 beef roast

Number Of Ingredients 5

1 beef eye round
salt, to taste
pepper, to taste
paprika, to taste (optional)
vegetable oil

Steps:

  • Preheat oven to 500 degrees. If desired, trim off excess fat from roast beef. Season with salt and pepper (and paprika, if desired). Rub meat with vegetable oil.
  • Place meat in roasting pan in preheated oven.
  • Roast beef for 5 minutes per pound. Then turn off oven. DO NOT OPEN OVEN FOR 2 HOURS! (For example, a 4-lb. roast would take 20 minutes to cook and then sit in the turned-off oven for 2 hours.).

SHIRLEY'S PERFECT RARE ROAST BEEF

Shirley's Perfect Rare Roast Beef image

My mom showed me how to make the perfect roast beef, and I mean PERFECT! I love my roast beef rare to med-rare, and this is how I do it. IMPORTANT: Take your roast out of the fridge, and let it set to get it to room temperature before baking! If you like really rare bake for 15 mins. at 500. If you like your roast beef cooked med-rare, put in for 18 mins. at 500. If you like it well done, then just burn the darn thing LOL. What's nice about this roast is, if someone likes it done a little more, please keep in mind that the end pieces will be done a little more. ***(The roast in the series of photos that I took was a 2.75 lb. bottom of the round roast. I baked it at 500 for 15 mins., then turned the oven off and left it in the oven for 1 hour for a rare roast.) The cooking time is 5 minutes per pound but I couldn't reflect that in the cooking time in the TIME section for the recipe, at the bottom so I just put in 15-30 mins, depending on size of the roast you use (3-6 lb)

Time 20m

Yield 4-6 serving(s)

Number Of Ingredients 3

roast beef, tenderloin, tip, eye round, bottom round, rump, any you like (you can use any size roast, just adjust the baking time in the oven 5 mins. per lb.)
1 onion, cut into thin rings
garlic powder

Steps:

  • Preheat oven to 500 degrees. Wait for a few minutes before you put your roast in, so it gets as hot as possible.
  • Put the roast in a shallow pan. (I use a cookie sheet).
  • Cut onion into thin rings, and put all over the top and sides of the roast using toothpicks if necessary. I sit a few slices on the bottom of my roast too.
  • Sprinkle roast generously with garlic powder, or to your liking. DO NOT SALT roast, or you will dry it out.
  • Put roast in the oven on the middle rack.
  • Bake at 500 degrees for 5 minutes per pound, then shut off oven, and let sit in the oven for 1 hour. DO NOT under any circumstances open the oven door! VERY IMPORTANT!
  • After you turn off the oven and your roast has baked for l hour, take it out of the oven, and let sit for 15 minutes, to allow juices to distribute in the roast.
  • I use my electric knife to cut my roast, and place on a serving dish.
  • Don't forget to make the gravy!

KITTENCAL'S PERFECT PRIME RIB ROAST BEEF

Kittencal's Perfect Prime Rib Roast Beef image

NOTE...THE INTERNAL TEMPERATURE NOT THE TIME IS YOUR BEST GUARANTEE FOR DONENESS so for a perfectly cooked prime rib roast invest in a meat thermometer and you will never go wrong with this recipe! --- if desired you may omit the au jus and just serve the roast, I prefer to make the au jus especially if I am serving this at a holiday table --- use nothing else but only fresh garlic, a little salt and lots of fresh ground black pepper for this or you could use 1 teaspoon garlic salt, using any other spices will take away the flavor, nothing else is needed --- cooking on very high heat then reducing the temperature will seal in all the meat juices to produce the most tender and flavorful prime rib, this actually is the method that a lot of the higher end restaurants use to make there prime rib and is the method I always use when I make prime rib roast at my home --- the cooking time stated on the recipe is for a 3-4 pound prime rib, you can use this method for a larger prime rib and increase the cooking time please see bottom of directions --- for a perfectly cooked prime rib roast a meat thermometer inserted in the roast should read about 140 degrees for medium-rare doneness, it is advised not to cook prime rib more that medium-rare ----- using more that the specified amount of salt will draw out the juices from the roast, you could add a little more but it is best to salt the meat after it is cooked, using a minimum amount of salt will insure a juicy tender prime rib roast, 1 teaspoon or less of salt will be fine, remember to remove your roast from the fridge about 2 hours before cooking --- also see my recipe#146196 this is a must served with prime rib!

Categories     Roast Beef

Time P1DT1h15m

Yield 6-8 serving(s)

Number Of Ingredients 6

3 -4 lbs center-cut prime rib roast, nicely marbled, and trimmed, but leave a layer of fat on top of roast for flavor
8 fresh large garlic cloves, sliced in half (or use many as desired)
fresh ground black pepper (use lots!)
1/2 teaspoon white salt (can use up to 1 teaspoon salt) or 1/2 teaspoon seasoning salt (can use up to 1 teaspoon salt)
1/2 cup dry white wine
2 cups beef stock (or use a good quality beef broth)

Steps:

  • Using a knife, poke small holes all over uncooked roast, and insert a half of a clove of fresh garlic in the hole (as many holes and as much garlic as desired).
  • Cover roast, and refrigerate overnight.
  • The next day, remove the roast from fridge and uncover; let sit out at room temperature for about 2 to 2-1/2 hours (this is an important step to relax the meat fibers, it will make for a more tender juicy roast, the length of counter-time will depend on the size of your roast).
  • Set oven to 450°F and allow the oven to preheat for a minimum of 15 minutes.
  • Season the roast with only a small amount of salt but lots of fresh ground black pepper pepper (that's all nothing else but a little salt and fresh ground black pepper, using any other spices will take away the flavor from the prime rib!).
  • Place the roast fat-side up on a rack in a shallow-sided pan, then insert a meat thermometer in the middle of the roast but not touching any rib bones.
  • Roast uncovered at 450°F for 20 minutes (a few more minutes won't hurt at 450°F).
  • After 20 minutes of high heat cooking reduce heat to 350°F and continue to roast for 1 hour to 1 hour and 15 minutes OR until the meat thermometer reads 130°F for rare doneness OR 140°F for medium-rare doneness, that is the way a prime rib really should be served, check your roast after 1 hour cooking time.
  • *NOTE* It is strongly advised to remove the roast slightly before desired degree of doneness is achieved as the roast will continue to rise in temperature several degrees after removing from the oven.
  • Remove meat to a carving board.
  • Cover loosely with foil and allow let rest (DO NOT CUT INTO ROAST for at least 20 or more minutes or all juices in the meat will flow out).
  • While the roast is resting prepare the au jus; place the roasting pan on top of the stove over high heat.
  • Add in the wine; cook for 8-10 minutes, stirring and scraping any brown bits.
  • Add in the beef stock; cook and reduce the juice by half (this might take about 20 minutes).
  • Add salt and pepper to taste.
  • Slice roast (just before serving!) and drizzle with some of the juice.
  • *NOTE* if desired you can cover the roast loosely with foil the first hour and then uncover and cook for the remaining time.
  • --------------------------------------------.
  • APPROXIMATE COOKING TIMES for the prime rib cooked at 350°F after the 20 minute cooking time at 450°F.
  • Rare; cook 12-13 minutes per pound or to 130°F.
  • Medium-rare; cook 14-16 minutes per pound or to 140°F (I would not recommend cooking a prime rib any more than medium-rare).
  • Since every oven cooks differently cooking times are only approximate.
  • SUGGESTED SERVING PORTIONS PER PERSON ----for a generous serving of prime rib roast you should figure on 2 people per rib, that means if you plan to serve 6 people you should be able to do so with 3 ribs/ eight people with 4 ribs/ do not bother with less than 3 ribs anything less than that is not a roast but rather a steak and would be better treated as such.

PERFECT ROAST BEEF WITH A GARLIC CRUST

Perfect Roast Beef with a Garlic Crust image

This is a combination of two great recipes! I found these recipes on a cooking site. One recipe was for the crust (by Magpieno6) and one was for the cooking method (by Wynnebaer) of the roast beef! Both worked perfectly together! I added my photo!

Provided by Lillian Russo

Categories     Roasts

Time 1h40m

Number Of Ingredients 10

3 lb roast beef-no larger or cook time will be off
salt & pepper to season the roast
NOTE: ANY CUT OF ROAST BEEF WORKS FINE WITH THIS RECIPE.
GARLIC CRUST INGREDIENTS
1 c fresh white breadcrumbs-white slice bread works fine
6 Tbsp olive oil, extra virgin
4 large cloves of garlic-crushed
3 Tbsp fresh chopped parsley
1 tsp kosher salt
1/2 tsp pepper

Steps:

  • 1. Season the roast beef with salt and pepper.
  • 2. Now make the garlic crust by heating the oil in a frying pan.
  • 3. Add Garlic and saute for 2 minutes, stirring. Then mix in breadcrumbs, parsley, salt and black pepper
  • 4. Allow mixture to cool, then press this mixture onto the seasoned roast beef. This should be enough to cover just the top and sides of the roast.
  • 5. Preheat oven to 500*
  • 6. Bake UNCOVERED for exactly 23 minutes. This cooking time will give you a medium/well roast, as in the picture. If you want it more or less cooked adjust the cooking time. For medium/rare 15 minutes.

  • 8. Take roast out and let it rest for 15 minutes, covered.
  • 9. Then just slice and serve.

Categories     Roast Beef

Time 1h15m

Yield 8-10 adult portions

Number Of Ingredients 18

10 lbs prime rib roast, with bones
1 teaspoon marjoram
2 tablespoons celery salt
2 teaspoons celery salt
2 teaspoons tarragon
2 tablespoons instant minced onion
1 tablespoon thyme
1 teaspoon thyme
1 tablespoon garlic powder
2 teaspoons rosemary
1 tablespoon black pepper
1 teaspoon black pepper
3 tablespoons paprika
1 teaspoon paprika
2 teaspoons white pepper
3 tablespoons salt
1 teaspoon salt
3 tablespoons olive oil

Steps:

  • Preheat oven to 450°F Place the roast in a shallow roasting pan and allow it to rest out of the refrigerator for 30 minutes, to bring the meat to just about room temperature. Combine seasonings to make rub. Rub the meat all over with this mixture, patting it into the meat -- particularly on top. Place the roast in the oven for 15 minutes or until the meat starts to brow (the high heat will sear the roast, sealing in the juices.) Reduce the heat to 350°F and continue to cook 12-15 minutes per pound, depending on the desired degree of doneness. Remove roast from the oven and allow the meat to rest for 20 minutes. Before carving, slice a piece of the exterior rosemary-scented fat from the meat and rub it into the carving board to further season roast.
  • Gravy (optional). For gravy, thicken the pan juices with enough flour to make a paste (start with 1/3 cup.) Cook over moderate heat for 10 minutes, stirring constantly until the flour has browned and thinned slightly. Whisk in enough stock for a smooth sauce (about 2 cups for the average roast.) Simmer 10 minutes and adjust seasonings with salt, pepper, rosemary and/or parsley.
  • DEGREE OF DONENESS Roasting Time / Internal Temperature:.
  • Rare, 15 minutes per pound - 125°F.
  • Medium Rare, 17 minutes per pound - 130 to 135°F.
  • Medium, 18 minutes per pound - 140°F.
  • Medium Well, 19 minutes per pound - 150°F.
  • Well Done, 20 minutes per pound - 160°F.
