There are three secrets to great popovers: Make sure the pan is hot before you pour in the batter, fill each section not more than half full and no peeking while they're in the oven!

1 1/2 tablespoons unsalted butter, melted, plus softened butter for greasing pans
1 1/2 cups flour
3/4 teaspoon kosher salt
3 extra-large eggs, at room temperature
1 1/2 cups milk, at room temperature

Steps:

  • Preheat the oven to 425 degrees F.
  • Generously grease aluminum popover pans or Pyrex custard cups with softened butter. You'll need enough pans to make 12 popovers. Place the pans in the oven for exactly 2 minutes to preheat. Meanwhile, whisk together the flour, salt, eggs, milk, and melted butter until smooth. The batter will be thin. Fill the popover pans less than half full and bake for exactly 30 minutes. Do not peek.

3 tablespoons butter melted
2 large eggs
1 cup warm milk
1/4 teaspoon salt
1/2 teaspoon cracked black pepper
2 tablespoons finely grated Parmesan plus extra for sprinkling on top
1 cup all-purpose flour

Steps:

  • Preheat your oven to 425 degrees F. Place a muffin pan in the oven as it preheats.
  • In a bowl whisk together the eggs, milk, salt, pepper and Parmesan.
  • Add the flour and mix through just until the lumps disappear.
  • Once the oven has reached the temperature, retrieve the muffin pan and brush 8 of the spots with the melted butter.
  • Using a ladle scoop enough batter into each spot almost to the top of the pan.
  • Sprinkle each scoop of batter with some more Parmesan and place in the oven.
  • Bake at 425 for 20 minutes and then turn down the oven to 350 baking for a further 10 minutes.
  • Serve the popovers at once or reheat in a warm oven prior to use.

Parmesan Popovers with Crispy Sage Garlic Butter image

These perfect parmesan popovers are light, airy, hinted with browned butter and parmesan cheese, and are SO delicious.

2 tablespoons, +6 tsp salted butter
1-2 cloves garlic, lightly smashed
8 fresh sage leaves
1 1/2 cups whole milk, at room temperature
3 large eggs, at room temperature
1 1/2 cups all purpose flour
2 tablespoons freshly grated parmesan cheese
1 teaspoon kosher salt
1/2 teaspoon black pepper (optional)
4 tablespoons salted butter, at room temperature

Steps:

  • 1. Heat 2 tablespoons butter, the garlic, and sage in a small skillet over medium heat and cook the butter until it begins to brown and the sage is crisp, about 3-4 minutes. Remove the garlic and sage from the skillet and reserve for making the sage garlic butter. 2. Position a rack in the lower third of the oven. Preheat the oven to 450 degrees. 3. Place 1 teaspoon of butter in each cup of a 6 cup standard popover pan. Alternately, you can use a 12-cup muffin pans and make 10 mini popovers. Transfer the popover pan to the oven.4. In medium bowl, vigorously whisk together the milk and eggs until frothy, about 1 minute. Add the browned butter, flour, parmesan, salt, and pepper - if using, and whisk to combine. It's OK if there are small lumps. 5. Carefully remove the popover pan from the oven and carefully swirl the butter around the cups to grease the pan. Evenly divide the batter between the popover cups, filling them about 3/4 of the way full. Transfer to the oven and bake for 20 minutes. Lower the oven temperature to 350 degrees. Bake another 15-20 minutes, until puffed, golden and crisp. 6. Meanwhile, make the sage butter. Mash the reserved garlic with a fork. Chop the crispy sage. Stir both the mashed garlic and sage together with 4 tablespoons butter.7. Serve the warm popovers immediately, with sage butter.

1 c all purpose flour
1/4 c plus 1 tbsp. freshly grated parmesan cheese
1 pinch salt
1/4 tsp freshly ground pepper
2 large eggs
1 egg white
1 c milk
1 Tbsp butter, melted
2 scallions, minced

Steps:

  • 1. Whisk flour, Parmesan, salt and pepper in a medium bowl. Make a well in the center of flour mixture.
  • 2. Whisk eggs, egg white, milk and butter together until frothy. Pour into well of flour mixture and whisk just until smooth. Stir in the scallions.
  • 3. Preheat oven to 425 degrees. Lightly coat a 12-cup muffin tin with nonstick cooking spray and put in oven to preheat.
  • 4. When a drop of water sizzles in the pan, the pan is hot enough. Spoon in batter, dividing it evenly among the 12 cups.
  • 5. Bake for 15 minutes at 425 degrees. Reduce oven temp to 350 and bake until popovers are golden and puffed, about 10 minutes longer.
  • 6. Immediately remove popovers from the pan and make a small slit in the side of each to release steam.
  • 7. Serve warm with butter and enjoy!

3/4 tsp. salt

Steps:

  • Heat oven to 450ºF.
  • Place muffin pan in oven to heat. Meanwhile, combine flour, cheese and salt in medium bowl. Whisk eggs, milk and butter in separate bowl until blended. Add to flour mixture; stir just until blended. (Batter will be slightly lumpy.)
  • Spray 12 hot muffin pan cups with cooking spray. Spoon batter into prepared cups, adding about 1/4 cup batter to each cup.
  • Bake 15 min. Reduce oven temperature to 350ºF. Continue baking popovers 20 to 25 min. or until tops are puffed and golden brown. Transfer popovers from muffin pan to wire rack. Use sharp knife to cut slits in tops of popovers to vent the steam. Serve warm.

3/4 cup milk
1/4 cup water
1 cup minus 2 tablespoons all-purpose flour
1/2 teaspoon salt
1 large garlic clove
1/2 cup freshly grated Parmesan (about 1 1/2 ounces)

Steps:

  • Preheat oven to 375°.F. Generously grease six 2/3-cup popover tins or nine 1/2-cup muffin tins.
  • In a bowl whisk together eggs, milk, and water. Add flour and whisk mixture until combined well but still slightly lumpy.
  • Mince garlic and mash with salt. Whisk garlic paste into batter and divide half of batter among tins. Sprinkle 1/4 cup Parmesan over batter in tins and divide remaining batter among tins. Sprinkle remaining 1/4 cup Parmesan over popovers and bake in lower third of oven 45 minutes. Cut a slit about 1/2 inch long on top of each popover with a small sharp knife and bake 10 minutes more. (Popovers will not rise much because of Parmesan).
