2 pillsbury refrigerated pie crusts
1/3 cup margarine or 1/3 cup butter
1/3 cup chopped onion
1/3 cup flour
1/2 teaspoon salt
1/4 teaspoon pepper
1 1/2 cups chicken broth
2/3 cup milk
2 1/2-3 cups shredded cooked chicken or 2 1/2-3 cups cooked turkey
2 cups frozen mixed vegetables, thawed

Steps:

  • Heat oven to 425.
  • Prepare pie crust for a two-crust pie.
  • In a medium saucepan, melt margarine over medium heat.
  • Add onion; cook two minutes or until tender.
  • Stir in flour, salt and pepper until well blended.
  • Gradually stir in broth and milk; cook, stirring constantly, until bubbly and thickened.
  • Add chicken and mixed vegetables, remove from heat.
  • Spoon chicken mixture into crust-lined pan.
  • Top with second crust and flute; cut slits in several places.
  • Bake at 425 for 30-40 minutes or until crust is golden brown.
  • Let stand 5 minutes before serving.

2 cups frozen peas and carrots
2 cups frozen green beans
1 cup sliced celery
⅔ cup butter
⅔ cup chopped onion
⅔ cup all-purpose flour
1 teaspoon salt
1 teaspoon ground black pepper
½ teaspoon celery seed
½ teaspoon onion powder
½ teaspoon Italian seasoning
1 ¾ cups chicken broth
1 ⅓ cups milk
4 cups cubed cooked turkey meat - light and dark meat mixed
4 (9 inch) unbaked pie crusts

Steps:

  • Preheat an oven to 425 degrees F (220 degrees C).
  • Place the peas and carrots, green beans, and celery into a saucepan; cover with water, bring to a boil, and simmer over medium-low heat until the celery is tender, about 8 minutes. Drain the vegetables in a colander set in the sink, and set aside.
  • Melt the butter in a saucepan over medium heat, and cook the onion until translucent, about 5 minutes. Stir in 2/3 cup of flour, salt, black pepper, celery seed, onion powder, and Italian seasoning; slowly whisk in the chicken broth and milk until the mixture comes to a simmer and thickens. Remove from heat; stir the cooked vegetables and turkey meat into the filling until well combined.
  • Fit 2 pie crusts into the bottom of 2 9-inch pie dishes. Spoon half the filling into each pie crust, then top each pie with another crust. Pinch and roll the top and bottom crusts together at the edge of each pie to seal, and cut several small slits into the top of the pies with a sharp knife to release steam.
  • Bake in the preheated oven until the crusts are golden brown and the filling is bubbly, 30 to 35 minutes. If the crusts are browning too quickly, cover the pies with aluminum foil after about 15 minutes. Cool for 10 minutes before serving.

1 pound skinless, boneless chicken breast halves - cubed
1 cup sliced carrots
1 cup frozen green peas
½ cup sliced celery
⅓ cup butter
⅓ cup chopped onion
⅓ cup all-purpose flour
½ teaspoon salt
¼ teaspoon black pepper
¼ teaspoon celery seed
1 ¾ cups chicken broth
⅔ cup milk
2 (9 inch) unbaked pie crusts

Steps:

  • Preheat oven to 425 degrees F (220 degrees C.)
  • In a saucepan, combine chicken, carrots, peas, and celery. Add water to cover and boil for 15 minutes. Remove from heat, drain and set aside.
  • In the saucepan over medium heat, cook onions in butter until soft and translucent. Stir in flour, salt, pepper, and celery seed. Slowly stir in chicken broth and milk. Simmer over medium-low heat until thick. Remove from heat and set aside.
  • Place the chicken mixture in bottom pie crust. Pour hot liquid mixture over. Cover with top crust, seal edges, and cut away excess dough. Make several small slits in the top to allow steam to escape.
  • Bake in the preheated oven for 30 to 35 minutes, or until pastry is golden brown and filling is bubbly. Cool for 10 minutes before serving.

Nothing says "comfort food" like just-out-of-the-oven chicken pot pie on a cold evening. I have tweaked this recipe for several years before it became perfect (at least according to my standards, which are pretty high) :). This makes one pie, you can double, or I like to use smaller ramekins for individual pot pies. Kid pleaser. :) This recipe is a little labor intensive, but for the perfect pot pie, it is worth it!

1/2 - rotisserie chicken, deboned, deskinned (a good rotisserie chicken makes all the difference) or leftover turkey
1 cup(s) carrots, sliced
1 - leek, chopped
1 cup(s) frozen green peas
1/2 cup(s) butter
2/3 cup(s) all purpose flour
2 1/2 cup(s) chicken broth
1/3 cup(s) half and half
1/3 cup(s) apple juice (trust me on this and pour in that apple juice!)
1 teaspoon(s) salt
1 teaspoon(s) poultry seasoning
- ground pepper to taste
1 - egg, beaten
1 - pie crust, homemade preferred, but any refrigerated crust will work

Steps:

  • Find your favorite pie crust recipe. I highly recommend a homemade crust, but if you're pie-crust challenged, a store-bought will do. ;) I make my pie crust a day ahead and keep in fridge till I'm ready. If you're making a double crust pie, go ahead and roll out your bottom crust and place in your baking dish. Cover well with plastic wrap and keep in fridge up to one day prior to use. I leave the top crust in a ball, wrapped in plastic wrap and take out while I'm cooking the rest of the ingredients. Roll out the top crust when you're ready to use it. Do not cook the crust beforehand.
  • Preheat oven to 425 degrees. In a large saucepan, toss in your frozen peas and sliced carrots. Pour the chicken broth over them and cook on high heat. Cover when it comes to a boil, and cook for about 10-12 minutes on medium-high or until carrots are tender (not mushy!) Don't throw out that broth when veggies are done!
  • While the vegetables are cooking, shred your rotisserie chicken or turkey. Chop your leeks. When the veggies are done, strain your liquid from your veggies into a bowl (SAVE your chicken broth!)
  • In the same saucepan cook the leeks in the butter over medium heat, stirring occasionally until leeks are slightly soft, and butter has started to brown. Whisk in the flour, salt, a little pepper, and poultry seasoning. Add the chicken broth, half and half, and apple juice VERY slowly, whisking the whole time over medium-high heat. Reduce heat to medium-low and cook at least 10 minutes until you have a very thick gravy. Make sure your filling is thick or you'll end up with chicken soup instead of chicken pot pie! Reduce heat to low.
  • Add your shredded chicken or turkey and your cooked vegetables. Stir around and remove from heat.
  • Pour pot pie mixture into your bottom crust (if making double crust pie) or into your baking dish of choice. Top with your pie crust, and cut 3 slits in the top. With a pastry brush, brush crust and edges with beaten egg. (Don't have a pastry brush? Leafy greens make a good makeshift brush, or just use a bunched up paper towel dabbed in the egg wash and blot it on the pie.) Bake in preheated oven for 35 minutes or until crust is a golden brown. Makes great leftovers!
  • Enjoy! I serve with applesauce on the side.

2 tablespoons flour
1 teaspoon instant chicken bouillon
1/8 teaspoon pepper
3/4 cup milk
1 1/2 cups cooked chopped turkey or 1 1/2 cups chicken
1 (10 ounce) bag frozen vegetables, thawed and drained
1 can refrigerated crescent dinner roll

Steps:

  • Combine miracle whip, flour, boullion and pepper in a medium saucepan.
  • Gradually add milk.
  • Cook stirring constantly over low heat until thickened.
  • Add meat and veggies.
  • Heat thoroughly while stirring occasionally.
  • Pour into an 8-inch square pan.
  • Unroll crescent roll dough into two rectangles.
  • Press perforations together to seal.
  • Place rectangles side by side to form a sqaure.
  • Place seams together.
  • Place square over filling and press around edges to seal.
  • Bake at 375 15-20 minutes or until browned and bubbly.

1 medium carrot, peeled and sliced
1 stalk celery, chopped
1 medium onion, finely chopped
1/2-3/4 teaspoon dried thyme
1 (10 ounce) can mushrooms, well drained (whole or sliced, squeeze out excess moisture with hands)
1 tablespoon fresh minced garlic
1 teaspoon ground black pepper
3 -4 tablespoons butter or 3 -4 tablespoons margarine
2 1/2 cups cubed cooked chicken (or turkey)
1 tablespoon all-purpose flour
1 teaspoon all-purpose flour
1 (10 3/4 ounce) can condensed golden mushroom soup, undiluted
1 1/2 cups frozen cut green beans, cooked and drained
salt (to taste) (optional)
1 (9 inch) pastry for double-crust deep dish pie

Steps:

  • In a large skillet melt butter over medium heat.
  • Add in carrot, celery, onion and thyme; cook stirring until just crisp-tender.
  • Add in mushrooms fresh garlic,and black pepper; cook stirring for 2 minutes.; remove skillet from heat.
  • Place the cubed chicken or turkey in a bowl sprinkle with 1 tablespoon plus 1 teaspoon flour and toss well to coat.
  • To the skillet add in the floured chicken or turkey, undiluted soup and green beans to the onion mixture; mix very well with a spoon to combine.
  • Line the bottom of the pie plate with pastry.
  • Add in the chicken or turkey mixture.
  • Place the remaining pastry on top; seal and flute.
  • Slice a couple of slits on top to allow steam to escape.
  • Brush lightly with table cream or milk.
  • Cover the edges loosley with foil.
  • Place the pie plate on a baking sheet.
  • Bake bottom-oven rack for 55-60 minutes or until golden brown.
