Categories     Savory Pies

Time 1h55m

Yield 1 pie, 6-8 serving(s)

Number Of Ingredients 16

2 large butternut squash
4 tablespoons olive oil
2 teaspoons cumin seeds, toasted
2 teaspoons ras el hanout spice mix
1 pinch chili flakes
2 -3 red onions
4 whole garlic cloves
1 kg Baby Spinach
250 g ricotta cheese
50 g pine nuts
200 g soft rindless vegetarian goat cheese
350 g plain flour
50 g coarse polenta
150 g cold butter
60 g parmesan cheese
1 medium free-range egg

Steps:

  • 1. For the pastry, mix the flour, polenta and a pinch of salt in a food processor. Add the cold butter and pulse until the mixture resembles breadcrumbs. Tip into a bowl, add 50g of the grated Parmesan and mix with a table knife until the mixture comes together. Measure out 4 tbsp cold water and add a little at a time until the dough just sticks together (you may not need all the water). Knead it gently until it forms a ball, wrap the pastry in cling film and chill for 20 minutes in the fridge.
  • 2. Meanwhile, preheat the oven to 200°C/fan180°C/gas 6. Scatter the sliced butternut squash over 2 or 3 large roasting trays, drizzle with half the olive oil, scatter over the cumin seeds, ras el hanout and chilli flakes, and season well with salt and black pepper. Roast in the oven, stirring occasionally, for 40 minutes.
  • 3. Meanwhile, add the sliced onions and garlic to another roasting tin with the rest of the olive oil. Halfway through cooking the squash, add the onions to the oven and roast for 20 minutes. Remove the squash and onions from the oven, squeeze out the garlic from their skins, mash the roasted garlic into the onions and leave to cool slightly.
  • 4. Place the spinach in a colander over the sink and pour over a kettle of boiling water. Refresh under cold water, then squeeze dry to remove all the excess water. Chop the spinach, put into a bowl, season and mix with the ricotta, then set aside.
  • 5. On a lightly floured surface, roll out two-thirds of the pastry and use it to line the base and sides of a 23cm springform tin. Add half the spinach mixture in a layer, then distribute half the roasted squash on top of that. Scatter with half the pine nuts, then half the goat's cheese. Repeat with the rest of the spinach mixture, butternut squash, pine nuts and goat's cheese. Finally, add the garlicky onions in a layer on top.
  • 6. On a lightly floured surface, roll out the rest of the pastry, then lay on top of the pie, pushing in the edges to seal well. Make a hole in the middle of the pie and decorate the top with leaves made from any leftover pastry. Brush the top of the pie with beaten egg, scatter with the rest of the Parmesan and chill for 20 minutes.
  • 7. Cover with cling film and foil and freeze, uncooked, for up to 1 month.
  • 8. When ready to eat, remove the foil and cling film and defrost fully in the fridge. Preheat the oven to 200°C/fan180°C/gas 6 and bake for 30-35 minutes until the pastry is golden brown on top. Leave to cool in the tin for 10 minutes before serving.

Provided by WKernan

Categories     < 60 Mins

Time 55m

Yield 4 US, 4 serving(s)

Number Of Ingredients 10

2 tablespoons olive oil
1 tablespoon finely chopped fresh sage
3 cups butternut squash, cubed
1 medium yellow onion, chopped
2 garlic cloves, minced
1/8 teaspoon red pepper flakes
1/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
2 cups vegetable broth
12 ounces whole grain linguine

Steps:

  • 1.Warm the oil in a large skillet over medium heat. Once the oil is shimmering, add the sage and toss to coat. Let the sage get crispy before transferring it to a small bowl. Sprinkle it lightly with salt and set the bowl aside.
  • 2.Add the squash, onion, garlic and red pepper flakes to the skillet. Season with salt and pepper. Cook, stirring occasionally, until the onion is translucent, about 8 to 10 minutes. Add the broth. Bring the mixture to a boil, then reduce the heat and simmer until the squash is soft and the liquid is reduced by half, about 15 to 20 minutes.
  • 3.In the meantime, bring a large pot of salted water to a boil and cook the pasta until al dente according to package directions, stirring occasionally. Reserve 1 cup of the pasta cooking water before draining.
  • 4.Once the squash mixture is done cooking, remove it from the heat and let it cool slightly. Transfer the contents of the pan to a blender, but keep the skillet handy. Purée the mixture until smooth (beware of hot steam escaping from the top of the blender), then season with salt and pepper until the flavors sing.
  • 5.In the reserved skillet, combine the pasta, squash purée and ¼ cup cooking liquid. Cook over medium heat, tossing and adding more pasta cooking water as needed, until the sauce coats the pasta, about 2 minutes. Season with more salt and pepper if necessary.
  • 6.Serve the pasta in individual bowls topped with fried sage, more black pepper and shaved Parmesan/Pecorino and/or smoked salt, if desired.

BUTTERNUT SQUASH AND GOAT CHEESE TARTINES

Butternut Squash and Goat Cheese Tartines image

I love to have something for guests to nibble on while they're waiting for the main event, and these crostini are full of delicious fall flavors. You can do most everything the day before--just save the assembly for the day of!

Time 45m

Yield Makes 10 tartines

Number Of Ingredients 13

1 small (1-pound) butternut squash, peeled, seeded, and diced into 1/3-inch pieces
2 tablespoons extra-virgin olive oil
3/4 teaspoon salt, divided
4 tablespoons butter, at room temperature
1 tablespoon Champagne vinegar
1/4 cup basil leaves, chopped
2 tablespoons sugar
1/4 cup roasted pistachios
4 ounces goat cheese
1/4 cup mascarpone
1/4 teaspoon kosher salt
5 slices hearty health bread, toasted and cut in half
1/4 cup dried cranberries

Steps:

  • Preheat the oven to 450 degrees F. On a rimmed baking sheet, toss the squash with the oil and 1/2 teaspoon salt. Spread the squash pieces evenly on the tray and roast for 35 minutes, stirring halfway through, until the squash is cooked and beginning to brown.
  • In a small saucepan, melt the butter over medium heat. Continue to cook the butter, stirring occasionally, until the solids become golden brown and the butter smells nutty, about 4 minutes. Watch it carefully, as it can go from golden brown to black very quickly. Turn off the heat and allow to cool slightly.
  • To a medium mixing bowl add the vinegar and 1/4 teaspoon salt. Add the brown butter to the vinegar, using a rubber spatula to get all the browned bits from the bottom of the pan. Whisk to combine. Stir in the basil and the cooked squash and set aside.
  • Add the sugar and 2 tablespoons water to a small skillet. Place over medium heat undisturbed until the sugar is dissolved. Cook for an additional 6 to 7 minutes until it just barely begins to brown, swirling the pan on occasion to encourage even browning. Stir in the pistachios with a rubber spatula and pour onto a baking sheet lined with parchment paper. Set aside to cool.
  • In a small bowl combine the goat cheese, mascarpone, and salt with a rubber spatula. Set aside or refrigerate until ready to use.
  • To assemble, roughly chop the candied pistachios. Divide the cheese mixture on the toast halves. Top each half with a spoonful of the squash mixture, a sprinkle of the candied pistachios, and a few dried cranberries.

BUTTERNUT SQUASH SPAGHETTI SAUCE

Butternut Squash Spaghetti Sauce image

When I heard about this recipe from a friend of mine, I smiled and nodded and thought to myself - no WAY will my kids eat this - or me for that matter! But she kept saying how delicious it was so I tried it and boy was she right! My friend created this recipe because her husband won't eat vegetables so she finds ways to "hide" them from him. It looks and taste just like spaghetti sauce - the sauce is a little thicker and not quite the robust red that spaghetti sauce is. Try it at least once! I used lots of garlic because I love it so modify to your tastes. As a suggestion, I would add only one can of stewed tomatoes and tomato sauce before adding the second cans until you do a taste test Same suggestion with the tomato paste. Tomato sauce can't get much healthier than this. If you try it, I'd love to know of any modifications you made.

BUTTERNUT MAC 'N' CHEESE

Butternut Mac 'n' Cheese image

I tripled this recipe and made 5 quarts. You can change the squash to macaroni ratio to suit your taste (more squash makes it more like casserole, as listed it's pretty much a glorified mac n' cheese). This is the best mac n' cheese you'll ever have, thanks to A Veggie Venture's Thanksgiving Recipe tour. http://kitchen-parade-veggieventure.blogspot.com/

Categories     Cheese

Time 1h

Yield 4-6 serving(s)

Number Of Ingredients 9

1 (1 lb) butternut squash
1/2 lb elbow macaroni
1 tablespoon unsalted butter
1 small onion, chopped small
1 teaspoon nutmeg
1/2 teaspoon white pepper
1 tablespoon flour
1 cup whole milk
16 ounces cheddar cheese, cubed if in a brick (or any good melting cheese)

Steps:

  • Squash:.
  • Preheat oven to 400°F.
  • Cut squash in half, lengthwise and rub cut side with olive oil.
  • Place cut-side down on a baking sheet and roast for 60 - 75 minutes or until completely cooked and soft.
  • Scoop out flesh while still warm and break apart with a spoon.
  • Timing-wise, finish the squash roughly the same time the pasta and the sauce is cooked so that it's still warm.
  • NOTE: You can change the ratio of squash to macaroni if you want it to be more or less squashy-I think this ratio is ideal because is comes out like mac n' cheese but there is still a good amount of squash hiding in there --.
  • Cook macaroni in salted water.
  • Let drain well. Timing-wise, finish the pasta and the sauce about the same time.
  • Sauce:.
  • In a saucepan, melt the butter on MEDIUM heat until shimmery.
  • Stir in the onion as it's prepped, then the nutmeg and white pepper, cook until onions soften.
  • Stir in the flour and mix well.
  • A tablespoon at a time, add the milk, incorporating each tablespoon well before adding another. (If you add it all at once, or without working in each time, there's risk of ending up with a lumpy sauce).
  • Stirring often, let the sauce come almost to the boiling point, it will thicken slightly.
  • Add the cheese and let melt, adjusting temperature so that the sauce won't boil. (It's not a disaster if it does, since it's going into the casserole, but it'll look curdled).
  • COMBINE.
  • In a large bowl, break the squash apart, mashing it really, with a wooden spoon.
  • Stir in the hot, drained pasta and combine well, distributing the squash throughout. Stir in the sauce and combine well.
  • Transfer to a greased baking dish.
  • If you like, sprinkle the top with pimento or paprika.
  • If making ahead, let cool to room temperature, cover and refrigerate.
  • BAKE.
  • Return dish to room temperature.
  • Bake at 350°F for 30 minutes until hot and bubbly throughout.
  • To add color to the top, place under the broiler for 2 - 3 minutes, watching carefully so not to burn. When covered with foil, holds its temperature for a good 30 minutes.
