1/4 cup red wine vinegar ((see note 2))
1/4 cup granulated sugar (or less to taste (see note 3))
1 teaspoon dried mustard ((see note 4))
1 teaspoon poppy seeds
Salt

Steps:

  • In a small bowl with a whisk, or in a jar with a tight-fitting lid, add the vegetable oil, red wine vinegar, sugar, dried mustard, poppy seeds, and salt to taste (I like 1 teaspoon).
  • Stir or shake to combine. Allow the flavors to blend at room temperature while preparing the salad.

  • In a 1-quart jar with a lid, mix together the sugar, mustard powder, vegetable oil, poppy seeds, salt, white vinegar, and onion juice; tighten the lid onto the jar, and shake vigorously to combine. Reshake the dressing before using.

1 tablespoon fruit pectin, powdered
1 teaspoon sugar
1/8 teaspoon dry mustard
1/8 teaspoon pepper
1/4 cup water
1 tablespoon vinegar
1 clove garlic, minced

Steps:

  • Combine pectin, sugar, mustard and pepper.
  • Stir in water, vinegar and garlic. Cover and chill for 1 hour.
  • Chill to store two or three days.
  • Variations:
  • Herbed Salad Dressing: Prepare as above, except add 1/8 teaspoon dried basil, crushed and 1/8 teaspoon paprika to the dry pectin mixture. Continue as directed.
  • Parmesan Salad Dressing: Prepare as above, except add 1 tablespoon grated Parmesan cheese and 1/4 tsp. dried oregano, crushed to the dry pectin mixture. Continue as directed.
  • Creamy Onion Dressing: Prepare as above except increase the sugar to 1 tablespoon and stir in 1/4 cup sliced green onion and 1/4 cup plain Low-Fat yogurt with the water. Continue as directed.

1 teaspoon onion flakes
1/4 teaspoon kosher salt
1/2 cup grapeseed oil* (or other neutral oil like organic vegetable or canola)
1 tablespoon poppy seeds
Variation: 1 to 2 tablespoons mayonnaise or Greek yogurt, for creamy poppy seed dressing

Steps:

  • In a medium bowl, whisk together the granulated sugar, white vinegar, dry mustard, onion flakes, and kosher salt. (For the creamy variation, whisk in the mayonnaise here.)
  • Gradually whisk in the grapeseed oil about 1 tablespoon at a time until a creamy emulsion forms.
