HAM AND PEPPERONI STROMBOLI

Steps:
- Preheat the oven to 375 degrees F.
- Sprinkle a clean dry work surface with flour. Roll the dough into a 10- by 14-inch rectangle, making sure not to flip the dough over, rotating by 90 degrees as needed. After rolling the dough, apply the egg whites to cover inner section (10- by 3-inch). Then add 1/4 cup mozzarella followed by both hams, another 1/4 cup cheese and then finish with the pepperoni. To finish stuffing, add the remaining cheese and drizzle with the sauce and herbs.
- Next, brush the edges with some of the egg whites. Fold the bottom and top edges over the filling, and then fold the sides over twice, 1 inch at a time, resulting in a 6- by 14-inch tube. Brush the outside of the stromboli with the remaining egg whites, place on a sheet pan lined with parchment paper and bake until firm and golden brown, 15 to 18 minutes. Remove from the oven and let rest for 5 minutes. Cut into 5 to 6 portions and serve.

- Place each loaf of bread dough in a large greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 45 minutes. , Preheat oven to 375°. Punch dough down. - Remove dough from package and roll out on lightly floured surface to desired size.
- Add alternating rows of pepperoni, mozzarella, and salami until dough is covered, leaving 1½ inches (4 cm) of space along the outside of the dough.
- Add the roasted red pepper, shredded mozzarella, red pepper flakes, and oregano on top of meat and cheese.
- Roll up the stromboli slowly.
- Combine melted butter, garlic, parsley, salt, and pepper.
- Brush the butter mixture onto the stromboli, evenly coating each side.
- Bake stromboli at 400˚F (200˚C) until golden brown (about 15-20 minutes).

- Place each loaf of thawed bread dough in a greased glass bowl (turning once to grease top).
- Cover, and let rise in a warm place for approx 45 minutes, or until doubled; punch down dough.
- Roll each loaf into a 15x12-inch rectangle.
- In a small bowl, mix or whisk together the eggs, oil, garlic, salt, pepper, mustard and oregano; brush evenly over EACH dough to within 1/2-inch of edges (this mixture may be doubled if desired).

This is a really easy recipe that I make all the time. I love pepperoni and cheese, but you can really do anything with it. The prep time includes the time it takes to thaw out the dough. I get it out early and once it had risen I leave it in the fridge until I'm ready to cook.

- -Thaw out dough. To do this I usually use plastic wrap and spray it with Pam and wrap it loosely around the dough. This keeps it from getting dried out.
- -After the dough has risen, about 5-6 hours cut it in half so you have two little loaves.
- -Spread each half out so it looks like a rectangle. It should almost cover the whole tray, you want the dough to be pretty thin. I usually spray a pan with Pam and spread it out.
- -Cover the loaf with pepperoni and cheese.
- -Fold one half towards the middle and then fold the other half on top of it.
- -Pinch the ends closed.
- -cook at 350 degrees for 20 minutes.

- 1. In a small bowl mix together yeast, sugar and water. Let it sit for about 10 minutes for the yeast to activate. If the yeast is active small bubbles will form on the surface.
- 2. In the bowl of your stand mixer using dough hook add salt, yeast mixture and olive oil. Begin adding flour about 1/2 cup at time. Continue to add flour 1/2 cup at a time until the dough starts to pull from the sides.
- 3. Knead the dough for 3-4 minutes on a well floured surface.
- 4. Split dough in half. Roll dough out on lightly floured surface to an approximately 10 x 13 rectangle. Move dough to baking sheets.
- 5. Melt butter in small microwaveable bowl. Stir in basil, oregano and garlic powder. Brush over the laid out pizza crust. Sprinkle each crust with 1 cup of shredded mozzarella leaving a 1 1/2 inch border all around the pizza crust. Layer with ham leaving same border. Divide pizza sauce and spread over ham keeping off of the border. Layer with pepperoni overlapping again avoiding the border. Turn the pizzas horizontally in front of you and gently roll the pizza dough into logs sealing the edges as you go. Place seam side down on baking sheets.
- 6. Brush with beaten egg. Brush the tops lightly with the butter/herb mixture. Sprinkle each Stromboli evenly with the remaining mozzarella. Cut slits diagonally in the top about 1 inch apart.
- 7. Bake at 375 degrees for 20-25 minutes. Slice along slits and serve with extra marinara.

- Preheat oven to 350°. Open up your crust and roll out flat. It will be a rectangle shape. Separate your egg yolks from the egg whites. Place the egg yolks in a bowl and mix your parmesan cheese, oregano, parsley, garlic powder, pepper and vegetable oil. Spread your mixture evenly onto your crust.
