Found this recipe on Pinterest (pinned from the "lick the bowl good" blog) and made them for our staff Thanksgiving luncheon. They are really easy to whip up and taste like a pepperoni cheesy bread!

Number Of Ingredients 10

3/4 cup flour
3/4 teaspoon baking powder
1 tablespoon italian seasoning
1/4 teaspoon salt
3/4 cup whole milk
1 egg, lightly beaten
1 cup mozzarella cheese, shredded
1/4 cup parmesan cheese, grated
1 cup pepperoni
1/2 cup pizza sauce (to serve with Pizza Puffs)

Steps:

  • Preheat the oven to 375.
  • Grease 24-cup mini-muffin pan.
  • In a large bowl, whisk together flour, baking powder, Italian seasoning, and salt.
  • Whisk in the milk and egg.
  • Stack slices of pepperoni and cut into small pieces.
  • Stir in mozzarella, Parmesan, and pepperoni.
  • Let stand for 10 minutes.
  • Stir the batter and divide among the mini-muffin cups.
  • Bake until puffy and golden, about 20-25 minutes.
  • Meanwhile, heat the pizza sauce until warmed through.
  • Serve the sauce with the Pizza Puffs for dipping.

Pizza seems like a great party food, but it can be a little messy and also gets cold fast. One year, for a birthday party for one of the cousins, my brother-in-law Joey, who's always been a creative problem solver, had the idea to make pizza puffs, putting the filling inside the dough, in a sort of mini-calzone. As with pizza, you can change the filling, replacing the pepperoni with sausage or vegetables, such as sauteed mushrooms.

Number Of Ingredients 6

One 16-ounce ball frozen pizza dough (see Chef's Note), thawed in the refrigerator for 6 hours, then left out to rise in oiled bowl, covered with plastic wrap, at room temperature for 2 hours
All-purpose flour, for dusting
1/2 cup shredded or fresh sliced mozzarella
24 thin slices pepperoni
1 jarred red pepper, drained and cut into 1 1/2-inch strips
About 2 tablespoons olive oil

Steps:

  • Position a rack in the center of the oven and preheat the oven to 425 degrees F. Line a baking sheet with aluminum foil.
  • Cut the dough into 8 equal pieces. Using floured hands if needed, carefully stretch each piece into a thin disk (the shape doesn't have to be perfect) about 5 inches in diameter.
  • Transfer the dough balls to the prepared baking sheet and fill each with 1/2 tablespoon mozzarella on one half, leaving a 1-inch border around the edge. Line the cheese with 3 slices pepperoni, and a strip of red pepper. Starting from the smaller border, stretch the dough over the filling, then continue rolling the dough (like you would roll a carpet) to wrap the filling twice. Place on a foil-lined baking sheet, seam-side down. Pinch any holes with your fingers to patch.
  • Brush the dough with a very light coating of olive oil. Bake until golden-brown, 15 to 17 minutes, then remove from the oven and let rest for 5 minutes before serving.

These of course would be fun with tons of other ingredients ! Some possible ideas that come to mind are (dice pretty fine of course); Canadian bacon/w pineapple tidbits, drained- sausage/ green or red bell pepper/ olives/ onions-- etc......

3/4 c bisquick baking mix
1/4 c 2 % milk
1/2 tsp dried oregano
1 large egg, lightly beaten
1 c mozzarella cheese, shredded
1 c mini pepperoni or regular, both diced
1/2 c pizza sauce, yours or store bought
2 Tbsp fresh basil, finely diced

Steps:

  • 1. Preheat oven to 375^. Grease a 24 cup mini-muffin pan. In a large bowl, whisk together Bisquick and oregano; whisk in the milk and egg. Stir in the mozzarella and pepperoni; let stand for 10 minutes. Stir the batter and divide among the muffin cups. Bake until puffed and golden, 20-25 minutes. Warm the pizza sauce, then stir in 1 Tablespoon of basil. Sprinkle the puffs with the remaining basil. Serve the puffs with the sauce for dipping.

I'm always looking for a new, EASY appetizer to take to different parties. This one is very simple and yummy! I haven't tried doing it yet, but I think you could use Bisquick instead of the flour and baking powder.

3/4 cup(s) whole milk

4 ounce(s) low fat sausage, cooked and crumbled
2 ounce(s) mini turkey pepperoni (1/2 cup)
1 cup(s) pizza sauce

Steps:

  • Pre-heat over to 375*. Grease a 24 cup mini-muffin pan (or 2 12 cup mini-muffin pans). In a large bowl, whisk together the flour, garlic powder and baking powder; whisk in the milk and egg. Stir in the mozzarella, sausage and pepperoni; let stand for 10 minutes.
  • Stir the batter and divide among the mini-muffin cups. Bake until puffed and golden; about 20-25 minutes.
  • Meanwhile, microwave the pizza sauce until warmed. Serve the puffs with the pizza sauce for dipping.

3 can(s) (10 count) grands jr. homestyle buttermilk biscuits (not flaky layers)
1 jar(s) ragu garlic parmesan cheese sauce
1 pkg (8 oz)kraft pizza shredded cheese
1 pkg hormel sliced pepperoni
1 egg, beaten
parmesan cheese
italian seasoning
marinara or pizza sauce for dipping

Steps:

  • 1. Preheat oven to 425 degrees.
  • 2. Separate biscuits and flatten each one with your fingers.
  • 3. Brush each flattened biscuit with Garlic Parmesan cheese sauce.
  • 4. Layer two pepperoni slices (slightly offset) in the center of each biscuit.
  • 5. Place a pinch of shredded cheese on top of pepperoni slices.
  • 6. Layer two more pepperoni slices (slightly offset) on top of shredded cheese.
  • 7. Fold up the edges of the biscuit and pinch to seal.
  • 8. Place the biscuits in 2 greased 9X13 baking pans (seam side down).
  • 9. Brush the top and sides of each biscuit with beaten egg.
  • 10. Sprinkle each biscuit with Parmesan cheese and Italian seasoning.
  • 11. Bake for 15 minutes or until golden brown.
  • 12. Serve with Marinara or Pizza sauce for dipping.
