1 1/2 sticks unsalted butter, at room temperature, plus more for the pans
2 cups sifted cake flour (sift first, then measure), plus more for dusting
1 1/2 teaspoons baking powder
3/4 teaspoon salt
3/4 cup whole milk, at room temperature
1 teaspoon vanilla extract
1/2 teaspoon peppermint extract
1 1/2 cups sugar
3 large egg whites, at room temperature
1 1/2 cups sugar
1/2 cup light corn syrup
6 large egg whites
Pinch of salt
1/2 teaspoon vanilla extract
1/2 teaspoon peppermint extract
1/4 cup crushed candy canes, plus more for topping

Steps:

  • Make the cake: Position racks in the middle and lower thirds of the oven and preheat to 350 degrees F. Lightly butter three 8-inch-round cake pans and line the bottoms with parchment paper; butter the parchment and dust with flour, tapping out the excess. Sift the flour, baking powder and salt into a medium bowl. Combine the milk and the vanilla and peppermint extracts in a small bowl; set aside.
  • Beat the butter in a large bowl with a mixer on medium speed until smooth, about 1 minute. Gradually beat in 1 cup sugar, then increase the mixer speed to high and continue beating until light and fluffy, about 5 minutes.
  • Reduce the mixer speed to low and add the flour mixture in 3 additions, alternating with the milk mixture, beginning and ending with the flour mixture, until just combined. Scrape down the side of the bowl, then increase the mixer speed to medium and beat until smooth, about 5 more minutes.
  • In a separate large bowl (using clean beaters), beat the egg whites with a mixer on high speed until foamy. Gradually add the remaining 1/2 cup sugar and continue beating until stiff, shiny peaks form, about 6 minutes. Using a rubber spatula, gently fold the whites into the batter in 3 additions until combined.
  • Divide the batter evenly among the prepared pans. Bake, switching the position of the pans about halfway through, until a toothpick inserted into the center comes out clean, about 20 minutes. Let the cakes cool 10 minutes in the pans, then run a knife around the edges and invert onto racks to cool completely. Peel off the parchment. (The cakes can be made up to 1 day ahead; wrap in plastic and store at room temperature.)
  • Make the frosting: Fill a medium saucepan with 1 to 2 inches of water and bring to a simmer over medium-high heat. Combine the sugar, corn syrup, egg whites, 2 tablespoons water and the salt in a heatproof bowl and set over the saucepan (do not let the bowl touch the water). Whisk until the sugar dissolves and the mixture registers 165 degrees F on a candy thermometer, about 8 minutes. Remove the bowl from the pan and beat with a mixer on medium speed until soft peaks form, about 5 minutes. Increase the mixer speed to high and beat until fluffy and cool, about 4 more minutes. Add the vanilla and peppermint extracts and beat until combined, 1 more minute.
  • Assemble the cake: Place 1 cake layer on a platter and spread 1 cup frosting on top; sprinkle with about 2 tablespoons crushed candy canes. Top with another cake layer, spread with 1 cup frosting and sprinkle with another 2 tablespoons crushed candy canes. Top with the final cake layer, then frost the top and side of the cake with the remaining frosting. Sprinkle more crushed candy canes on top.

2 tablespoons coarse sanding sugar

Steps:

  • Preheat oven to 325 degrees. In a medium bowl, whisk together flour, baking powder, and salt.
  • With a mixer on medium speed, beat butter with granulated sugar until light and fluffy, about 2 minutes. Beat in egg and vanilla until just blended, scraping down sides of bowl. Reduce speed to low and beat in flour mixture until combined. Refrigerate dough until firm, about 1 hour.

1 16-to-18-ounce box chocolate cake mix (plus required ingredients)
1 16-ounce tub vanilla frosting
1/4 cup crushed candy canes or peppermint candies
1 10.5-ounce bag mini marshmallows
1/2 teaspoon peppermint extract
2 1-pound boxes confectioners' sugar
4 tablespoons unsalted butter, at room temperature
Red gel food coloring

Steps:

  • Preheat the oven to 350 degrees F and coat two 9-inch-round cake pans with cooking spray; line with parchment paper. Prepare the cake mix as directed; transfer the batter to the pans. Bake and cool as directed.
  • Combine half of the frosting with the crushed candy. Place 1 cake on a small cardboard circle, domed-side down; spread with the candy frosting. Place the other cake on top, domed-side up.
  • Round the bottom and top edges of the layer cake with a small serrated knife as shown. Cover the whole cake with a thin layer of the remaining plain frosting.

  • Beat enough gel food coloring into the remaining frosting mixture until bright red. Knead in the remaining confectioners' sugar until smooth.

100g white regal icing
50g red regal icing
50g green regal icing

Steps:

  • Mix a few drops of peppermint into the white, red and green icing. Divide the white icing in 2 and wrap half in cling film along with the green icing.
  • Roll the remaining half of white icing into a long, thin sausage shape, then do the same with the red icing. Lay the 2 sausages next to each other, and twist together. Gently roll the twisted length with the palm of your hand until the 2 sausages are joined and smooth. Slice into 12cm lengths, then bend the end of each one to make a hook. Line a baking sheet with baking parchment, then spread out the candy canes. Repeat with the remaining white icing and green icing, then leave the canes to dry out for at least 24 hrs before packaging.

I've been making these for years as they are easy to whip but have and excellent flavor. What colors you make them and how you decorate them depends on the occasion. Originally from a Philadelphia Cream Cheese booklet.

4 ounces cream cheese, softened
1 tablespoon butter
1 tablespoon light corn syrup
1/4 teaspoon peppermint extract (or few drops peppermint oil)
4 cups powdered sugar
green food coloring
red food coloring
sifted powdered sugar
green decorating icing (optional)
red decorating icing (optional)
white decorating icing (optional)
melted chocolate (to garnish) (optional)

Steps:

  • Beat cream cheese, butter, corn syrup and extract in large mixing bowl at medium speed with electric mixer until well blended.
  • Gradually add 4 cups powdered sugar; mix well.
  • Divide mixture into thirds. Knead a few drops green food coloring into one third; repeat with red food coloring and the second third. Leave the last third white.
  • Wrap each third in plastic wrap.
  • Working with one color mixture at a time, shape into 3/4-inch balls.
  • Place on waxed paper-lined cookie sheet. Flatten each ball with bottom of glass that has been lightly dipped in confectioner's sugar.
  • Repeat with remaining mixtures.
  • Decorating with icing or melted chocolate.
  • Chill.

1 cup butter, softened
1 3/4 cups sugar
2 eggs
3 teaspoons vanilla extract
3 tablespoons milk or 3 tablespoons water
4 cups flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1 1/4 cups chopped pecans
1 (12 ounce) bag Andes peppermint crunch baking chips
1 (48 count) bag Hershey candy cane kisses

Steps:

  • Preheat oven to 350 degrees F. Remove wrappers from candies.
  • Beat eggs in a medium bowl with the butter, sugar, vanilla, and water until well blended.
  • In a large mixing bowl, whisk together the flour, salt, and baking soda; stir in the pecans and the Andes candy cane mint baking chips.
  • Add the egg mixture gradually to the flour mixture, stirring to combine.
  • Shape dough into 1 1/2-inch balls (I used a small cookie scoop), and place on ungreased cookies sheets.
  • Bake at 350 degrees F for 12-15 minutes, until edges are lightly browned and cookies are set. Remove from oven; cool 3-4 minutes. Press a candy piece into center of each cookie. Remove from cookie sheet to wire rack. Cool completely. About 4 dozen cookies.

1 pint superpremium vanilla ice cream, softened slightly
1/4 teaspoon pure peppermint extract
1 cup finely crushed peppermint hard candies (1/4 lb)
16 chocolate wafers such as Nabisco Famous
Special Equipment
a 1/4-cup ice cream scoop

Steps:

  • Stir together ice cream (reserve pint container), extract, and 1/2 cup crushed candy in a bowl until combined.
  • Transfer mixture to pint container and freeze until just firm enough to scoop, about 1 hour.
  • Working very quickly, scoop ice cream onto flat sides of 8 wafers (1 scoop per wafer), then top with remaining 8 wafers, flat sides down. Wrap each sandwich individually with plastic wrap and freeze until firm, about 1 hour. Unwrap sandwiches and roll edges in remaining 1/2 cup crushed candy. Rewrap and freeze until firm, about 1 hour.

1 cup semisweet chocolate chips
1 can (14 ounces) sweetened condensed milk, divided
1 cup white baking chips
3 teaspoons peppermint extract
2 to 3 drops green food coloring

Steps:

  • In a small saucepan, melt chocolate chips with 3/4 cup condensed milk over low heat, stirring occasionally. Line an 8-in. square dish with waxed paper; butter the paper. , Spread half of melted chocolate mixture into pan; chill for 5-10 minutes (let remaining melted chocolate mixture stand at room temperature). , In another saucepan, melt white baking chips. Stir in remaining condensed milk until smooth. Remove from the heat; add extract and food coloring. Refrigerate until set. Spread over chocolate layer; spread with reserved chocolate mixture. Refrigerate until set. Cut into 1-in. pieces.

2 1/2 cups all-purpose flour, plus more for flouring work surface
1 teaspoon baking powder
1 teaspoon kosher salt
1 cup (2 sticks) unsalted butter, softened
1 cup granulated sugar
1/2 cup packed light brown sugar
1 teaspoon peppermint extract
2 large eggs
4 cups confectioners' sugar
3 tablespoons meringue powder
1/4 teaspoon peppermint extract
Red food coloring, for tinting icing
1/4 cup crushed peppermint candies

Steps:

  • For the cookies: In a medium bowl, whisk together the flour, baking powder and salt. In a separate large bowl using an electric mixer, beat together the butter, granulated sugar and brown sugar, mixing until pale yellow and fluffy, 3 minutes. Add in the peppermint extract and eggs and mix well. Slowly incorporate the dry ingredients into the wet ingredients and mix well.
  • Transfer the dough to a floured work surface, divide into two disks, wrap in plastic and chill in the refrigerator for about an hour.
  • Preheat the oven to 350 degrees F. Line two baking sheets with parchment paper.
  • Working with one disk at a time, roll out the dough to 1/4-inch thickness. Cut out candy cane shapes with the cookie cutter and place the cookies about 2 inches apart on the prepared baking sheets. Re-roll the scraps to get as many cookies as possible, returning the dough to the refrigerator to chill if necessary.
  • Bake just until the edges start to brown, 10 to 12 minutes. (Bake one sheet at a time for even cooking and browning). Transfer the cookies to a wire rack and let cool.
  • For the royal icing: In the bowl of a stand mixer using a whisk attachment, combine the confectioners' sugar and meringue powder and mix for 30 seconds. Add 1/3 cup water and the peppermint extract and continue mixing on low until the icing forms peaks, 8 to 10 minutes. Adjust the consistency of the icing with additional water if necessary.
  • Set aside some of the icing in a small bowl and add enough food coloring until the desired shade of red is reached.
  • Ice the cookies with the white icing and let dry completely. Decorate with the red icing and crushed candies to make a candy cane pattern.
