Caramelized onions
Pickled onions

¼ Heavy cream

Steps:

  • Mix cream, sour cream, and horseradish in a bowl
  • Add salt and pepper to taste
  • Add a tablespoon or so of caramelized onion to the prepared crostini
  • Add a slice of roast beef
  • Top with a spoonful of horseradish cream
  • Garnish with parsley or chives, if desired
  • Add a slice of roast beef to crostini
  • Top with a spoonful of horseradish cream
  • Top with a few slices of pickled onion
  • Garnish with parsley or chives, if desired

Peppered Beef and Caramelized Onion Crostini With a Horseradish image

An easy elegant appetizer which can all be made ahead of time. The onions, garlic oil, and horseradish cream can all be made and refrigerator until you are ready to put them all together. Then, just a few minutes to grill the bread ... add your toppings and serve. Serve these with along with a few dips/spreads or other appetizers and a big pot of soup to friends, and you have a great easy party.

1 1/2 lbs roast beef, peppered (right from your grocers deli - 1/4-inch thick slices)
1/4 cup marsala wine
3/4 cup beef broth
3 cups onions, cut in quarters and thin sliced (2 large)
1 teaspoon butter
1 teaspoon olive oil
1/2 teaspoon sugar
1/2 teaspoon salt
1 head garlic, peeled
1 cup olive oil
2/3 cup sour cream
2 1/2 tablespoons prepared horseradish (more or less according to taste)
1/2 teaspoon white wine vinegar
salt
pepper
1 tablespoon fresh chives, fine chopped

Steps:

  • Lets start with all the components and make them one at a time.
  • Horseradish Cream -- Just mix the sour cream, prepared horseradish (not creamy), vinegar, and season with a little salt and pepper to taste. Refrigerate until ready to use. The chives should be added right before serving.
  • Onions -- To a medium to large sauce pan, add the butter and olive oil and bring to medium heat. Add the onions and slowly begin to caramelize them - don't rush this. It will take a good thirty minutes, but it isn't hard. After 5 minutes add a pinch of salt and sugar and continue to stir now and then. After 15 minutes the moisture (water) from the onions will start to evaporate and the onions begin to caramelize. Once they get golden brown, remove, let cool and refrigerate until you are ready to use them. They can be reheated in the microwave in just a minute when you are ready to make the crostini.
  • Garlic Oil -- In a small sauce pan on medium heat, add the oil and garlic. Cook for just a minute on medium and then reduce to medium low and simmer for about 20 minutes until the garlic is golden brown. Remove the garlic and you have wonderful garlic oil. You can always buy a bottle which is expensive, and not nearly as good.
  • Beef -- Add the beef broth and marsala to a small bowl to a small pan and heat until warm. Add in the beef slices and cook just a minute or two until the beef is warm. You don't want to over cook it, it doesn't take long.
  • Crostini -- Slice and grill or broil just until golden brown on each side. Remove and brush each slice with some of the garlic oil.
  • Onions -- As the bread is toasting and the beef warming up - heat up your onions for just 1 minute in the microwave, they are all done you just want them warm.
  • Horseradish Cream -- Don't forget to stir in the chives right before you are ready to serve.
  • Toppings -- Top each garlic crostini with some of the warmed caramelized onions, then a slice or two of beef, then a little of the horseradish cream.
  • ENJOY!

2 teaspoons oil
1 tablespoon butter
2 onions, sliced
1 cup sliced mushrooms
4 (200 g) pieces steak fillets
cracked black pepper, for coating
1 tablespoon oil, extra
3 garlic cloves, crushed
140 g tomato paste (see Notes)
1/2 cup water
2 teaspoons balsamic vinegar
mashed potatoes, for serving

Steps:

  • Heat the oil and butter in a pan over a low heat.
  • Add the onions and cook for 10-12 minutes or until the onions are golden brown and caramelised. Add the mushrooms in the last five minutes. Set aside and keep warm.
  • Lightly coat both sides of the steak with cracked black pepper; heat extra oil in the pan; and pan fry the steak until it is cooked as you like it.
  • Remove the meat from the pan and keep it warm; add the garlic to the pan and sauté it for 1 minute; stir in the tomato paste, water and balsamic vinegar and simmer for 1-2 minutes.
  • Place the steak on a serving of mashed potato, top with the caramelised onions and mushrooms and drizzle with the tomato sauce.
  • Notes: I have not yet made this recipe, but when I do, since tomato paste disagrees with me (I find it too sharp), I shall be using a can of tomatoes, drained, and a teaspoon of a wonderful Australian spice Bush Tomato. If you can get hold of Bush Tomato, it's wonderfully aromatic and flavoursome without whatever is the ingredient in tomato paste that makes it sharp.

1 beef tenderloin roast (3- to 4-pounds )
1 tablespoon extra-virgin olive oil
1 tablespoon whole black peppercorn
1 tablespoon whole white peppercorns
2 tablespoons fennel seeds
1 1/2 teaspoons dried thyme
2 tablespoons dried culinary lavender flowers

Steps:

  • Bring the tenderloin roast to room temperature before cooking.
  • Trim the tenderloin of fat and silverskin.
  • Note: Silverskin is a silvery-white connective tissue. It doesn't dissolve when the tenderloin is cooked, so it needs to be trimmed away. If the silverskin is not trimmed off, it will cause the tenderloin to curl up into the shape of a quarter moon. If you ask, your butcher will do this for you.
  • Once the tenderloin roast is trimmed, it no longer has any structure and will start to flatten out. As you want the meat as round as possible for even cooking and also for presentation, trussing is the key.
  • Using individual pieces of kitchen twine/string to truss the roast. Tie the kitchen string around the tenderloin roast with equal spacing between each truss. Tie the meat firmly, but not too tight. NOTE: I usually have my butcher do this for me.
  • Pat the beef dry with paper towels (this is important as surface moisture will interfere with good browning). Lightly oil outside of the roast.
  • In a small spice or coffee grinder, coarsely grind the black peppercorns, white peppercorns, fennel seeds, thyme, and lavender flowers; rub mixture all over the meat. Wrap tightly in plastic wrap and refrigerate at least 2 hours or overnight (preferably).
  • Heat a large cast-iron frying pan over high heat. Without adding any cooking fat, sear the roast on all sides (about 3 rotations, approximately 1 minutes each). NOTE: Resist the temptation to constantly turn the beef from side to side and you'll be rewarded with a beautifully browned crust. When browned, immediately remove from heat.
  • Preheat oven to 450°F.
  • Tenderloin, like other lean cuts of meat, are best roasted at a high heat rather than baked at lower temperatures. Flavor comes from the browning, not from fat slowly melting into the meat.
  • Place the seared roast in a large baking pan or roasting pan and bake, uncovered. Roast in oven approximately 20 to 40 minutes (depending on size of your roast) until a meat thermometer registers desired temperature (see below). NOTE: Turn tenderloin over halfway through cooking for even browning.
  • Rare - 120°F
  • Medium Rare - 125°F
  • Medium - 130°F.
  • When the tenderloin roast is cooked to your liking, remove from oven, and transfer onto a cutting board; cover with a tent of aluminum foil and let stand 15 minutes before carving (meat temperature will rise 5 to 10 degrees after it is removed from the oven).
  • When ready to serve:
  • Cut the roast into 1/2-inch slices. Transfer onto a serving platter and serve immediately with any accumulated juices.

1/2 lb sirloin steak
4 tablespoons vegetable oil, divided
1 small shallot, chopped fine
1 garlic, chopped fine
2/3 teaspoon pepper (to taste)
1/2 cup green bell pepper, cut into strips
1/2 cup red bell pepper, cut into strips
1 cup bean sprouts, tightly packed
1 1/2 lbs shanghai noodles, cooked
1 tablespoon oyster sauce
1 1/2 teaspoons dark soy sauce
1 1/2 teaspoons cornstarch
1/4 teaspoon sugar
1/2 teaspoon salt
1 1/2 teaspoons soy sauce
1/2 teaspoon sugar

Steps:

  • Freeze sirloin steak for 30 minutes for easier cutting. Cut beef into thin strips.
  • Combine marinade ingredients in bowl. Add beef and marinate for 20 minutes.
  • Heat wok and add 2 T oil. Add shallot, garlic and ground pepper; stir for 10 seconds. Add beef with marinade and stir for one minute. Add bell peppers and bean sprouts; stir for an additional 2 minutes and set aside.
  • Heat remaining 2 T oil over medium heat. Add noodles and stir constantly for one minute. Add sauce ingredients and cook for 2 minutes, stirring constantly. Add beef and bell pepper mixture; mix well. Stir fry until heated through. Season to taste with more pepper if desired.
  • Serve immediately.
