POCO PEPPER SNACKS (CRESCENT ROLLS)
This recipe is an old family favorite that I got from my aunt (who got it from the Houston Chronicle. It is another quick and easy one that is always popular at holiday gatherings, these little rolls look great laid out on a platter and disappear quickly. Just spicy enough to be flavorful, mild enough that the kids enjoy them.

Steps:
- In a large bowl, mix all ingredients except for the crescent rolls.
- Pull crescent rolls apart into 4 rectangles (instead of the usual 8 triangles, just press the seam together to seal it so that it won't come apart when you bake it).
- Spread 1/4 of the mixture onto each rectangle.
- Roll up each rectangle (must be rolled the long way) and slice it into 10 slices.
- Spray a cookie sheet with Pam (or other spray) and lay out the slices like cookies.
- Bake at 400 degrees for 10-12 minutes.
EASY PEPPER JACK CHEESE QUESADILLAS
These quesadillas are quick to assemble and delicious! They are filled with pepperjack cheese and tomatoes. I made these to serve along side my Easy Tex-Mex Tomato Soup, but they could also be served as an appetizer or a small lunch or snack.

- To assemble quesadilla, place one tortilla on a dinner plate. Arrange sliced cheese atop tortilla, leaving at least 1/2 inch space from the edge of the tortilla. Arrange sliced tomatoes atop cheese layer followed by another layer of cheese (remaining). Top with remaining tortilla.
- While assembling the quesadillas, preheat an electric griddle to 350 F (or grill to medium-high heat). I use a griddle (rather than a grill) to cook quesadillas, as it is easier to turn them without losing their insides.
- Brush 1 tbs. olive oil onto the griddle, covering the surface. Brush the remaining 1 tbs. olive oil onto the top exposed tortilla. Gently slide the quesadilla from the dinner plate onto the griddle (olive oil-less side down).
- Cook for 5-7 minutes or until bottom tortilla begins to brown. With a large spatula, gently but swiftly turn quesadilla to brown other side. Cook for 5-7 minutes or until bottom tortilla begins to brown. Remove to a cutting board and allow to cool for 5 minutes.
- Slice into quarters and serve immediately with garnish of your preference. I like to use sour cream, salsa or guacamole. For this particular recipe, I served it with my Easy Tex-Mex Tomato Soup.

- In large skillet heat oil over medium-high heat.
- Cook and stir pork cubes for 4-5 minutes or until pork is just done.
- Remove excess fat from skillet; reduce heat to low.
- Add remaining ingredients to skillet, stirring to coat pork cubes.
- Cover and cook about 1 minute or until heated through.
- Transfer to warm serving dish; serve with toothpicks.

PARMESAN TRISCUIT SNACKS
A quick snack or appetizer with items I always have on hand. Sometimes I top these with a sprinkle of paprika for some color.

Steps:
- Preheat broiler to 400°.
- Place Triscuit crackers on a baking sheet. Whisk olive oil and garlic powder together*; brush onto each Triscuit.
- Top each with a slice of parmesan.
- Broil for 5 minutes, until cheese bubbles.
- *I have an olive oil mister, so I sometimes quickly spray the Triscuits with olive oil and then sprinkle with garlic. Other spices would be great too :).
