Lentil Soup image

You can easily make this a vegetarian soup. Just leave the ham out and replace the chicken broth with vegetable broth or water.

Number Of Ingredients 14

16 ounce(s) dried lentils
1 can(s) italian crushed tomatoes
1/4 cup(s) celery, diced
1/4 cup(s) sweet onion diced
2 cup(s) chopped fresh spinach
1 1/2 cup(s) cooked, cubed ham
2 cup(s) chicken broth
5 cup(s) water
2 cup(s) diced carrots
1 teaspoon(s) oregano, dried
1 tablespoon(s) basil, dried
1/4 teaspoon(s) garlic powder
1 tablespoon(s) thyme, dried
to taste - salt and pepper

Steps:

  • Rinse the lentils and place in a slow cooker.
  • Dice onion and celery small. Add to slow cooker.
  • Peel and dice the carrots. Add to cooker.
  • Add the remaining ingredient to the slow cooker. Stir to mix well.
  • Turn the slow cooker on high. Cover and cook for 4 hours.
  • Add more water if necessary. Stir occasionally.
