PEPPERONI PIZZA OMELET
Came up with this when I didn't want the same ol' everyday omelet. I bet you could even get your pickiest eater to like this--what kid doesn't like pizza?;) If you don't want to use pepperoni, just substitute some chopped cooked ham. Submitted to "ZAAR" on September 26th, 2007.

Steps:
- In a small bowl beat together eggs, milk, and Italian seasonings until well blended.
- In a skillet over medium heat, melt butter.
- Add eggs; as the eggs set lift edges so the rest of the eggs can cook.
- When eggs are partially set, spread pizza sauce on half of the eggs.
- Cover sauce with mozzarella cheese; cover cheese with pepperoni.
- Place other half of omelet over pepperoni.
- Remove from heat and let sit for a couple of minutes or until cheese is slightly melted.

- Spray pan with cooking spray.
- Beat eggs and broil on low heat until mostly cooked.
- place slices of cheese, pepperoni, and jalapeƱos over omelet.
- Let cook until cheese is mostly melted.
- Add a dash of salt.
- Fold over, spoon salsa over omelet and serve.

- In a small bowl beat your eggs. Heat a frying pan, spray with non-stick spray or coat the bottom with oil.
- Pour eggs into the pan and cook until you are able to get a spatula under it and flip without breaking it.
- When it is flipped over top with pizza sauce, I usually coat the whole top, then on 1/2 of the omelette layer pepperoni, mushrooms and green pepper, (you can saute the mushrooms and peppers if you like, even add olives too). Top with mozzarella and fold over. Cook until cheese is melted.
- Can be served by it's self or with hashbrowns of even rice.

- Whisk eggs in a bowl with Tabasco sauce.
- Grate onion and potato into same bowl.
- Add diced tomato and mix together.
- Place mixture into a lightly oiled small skillet or fry pan over medium to low temperature.
- Immediately layer pepperoni slices over the top and sprinkle with grated cheese.
- Grind pepper over the top.
- Cook around 15-20 minutes until egg has set on the top and cheese has melted, there is no need to flip it.

When eggs are completely set, remove from the heat., Spread pizza sauce over half of the eggs; top with pepperoni and mozzarella cheese. Fold in half; sprinkle with Parmesan cheese. - Beat eggs with water; season with salt and pepper. Set aside. Spray an 8-inch omelet pan or nonstick skillet with cooking spray. Heat skillet over medium heat.
- In small saucepan, heat pizza sauce.
- Add sausage to skillet. Cook until browned. Set aside.
- Add pepper, onion, mushrooms, and seasoning to skillet. Cook, covered, over medium heat until peppers are soft, about 2 to 3 minutes.
- Add cooked sausage to pepper mixture. Pour eggs over pepper mixture. (Eggs should set immediately at edges). With an inverted pancake turner, carefully push cooked portions at edges toward center so uncooked portions can reach hot pan surface, tilting pan and moving cooked portions as necessary. Reserving some sauce for topping, when top of omelet is thickened and no visible liquid egg remains, spoon hot sauce over half of the omelet. Top with pepperoni and mozzarella cheese. Slide from pan onto plate. Spoon on remaining sauce. Sprinkle with Parmesan.
