{Baked} Pepper Jack Cheese Dip is an easy and yummy appetizer that goes great with soft pretzels, or is good as a fish taco topping!

Number Of Ingredients 6

1 pound shredded pepper jack cheese
1 pound shredded sharp cheddar cheese
3 cups milk (I used 1%)
3 tbsp all purpose flour
2 tbsp butter
dippers-soft pretzels (chips, fish tacos)

Steps:

  • Preheat oven to 375 degrees
  • Melt the butter in a heavy sauce pan
  • Add the flour, and whisk to combine
  • Let the flour cook for 1 minute
  • Slowly whisk in the milk and continue whisking until milk thickens
  • Add cheeses and continue to whisk until cheeses are melted and sauce is smooth
  • Place into a baking dish and bake for about 15 minutes, or until the top beings to brown
  • Enjoy with soft pretzels, chips, or fish tacos

This homemade queso dip recipe uses pepper jack cheese to bring a moderate amount of spice and keep the ingredient list to a minimum. It's the perfect cheese dip when having friends over or to enjoy solo while watching your favorite show or movie.

One 8-ounce bar Cabot Pepper Jack Cheese, shredded
1 tablespoon cornstarch
2 tablespoon unsalted butter
1/2 large onion, diced (about 1/2 cup)
1/4 teaspoon black pepper
1/4 teaspoon ground cumin
1/4 teaspoon kosher salt, or more to taste
2 cloves garlic, minced
One 12-ounce can evaporated milk
Chopped cilantro, for serving
Tortilla chips, for serving

Steps:

  • Toss the shredded cheese with the cornstarch; set aside.
  • Place the butter in a medium saucepan over medium heat; add the onion, pepper, cumin, and salt, and cook, stirring occasionally, until the onions start to soften and become translucent, about 4 minutes.
  • Add the garlic and cook for 1 minute more. Add the milk and bring to a simmer.
  • A handful at a time, add the cheese to the saucepan, stirring after each addition until melted. Let the queso simmer for 2 to 3 minutes. Taste the dip (caution-it's hot!) and adjust for seasoning (be careful with salt because tortilla chips are usually already pretty salty).
  • Transfer the queso to a bowl. Top with some cilantro and serve with tortilla chips for dipping.

3 tablespoons butter
3 tablespoons flour
1 cup milk
4 ounces shredded monterey jack pepper cheese

Steps:

  • Melt butter in a sauce pan.
  • With a whisk, mix in flour and allow to cook for about 1 minute.
  • Slowly whisk in milk.
  • Cook for 1 minute.
  • Add cheese, keep whisking until cheese melts.
  • Serve with chips, veggies or whatever floats your boat.

1/2 cup butter (1 stick)
1 (8 ounce) package cream cheese
1 cup milk (the original recipe calls for half and half, but we used whole milk instead)
1/2 cup monterey jack pepper cheese (we usually just keep going until we feel like stopping)
1 tablespoon garlic
1 dash italian seasoning
1 dash garlic powder
1 dash basil

Steps:

  • In a medium saucepan, melt butter on medium heat. Be sure not to let it get brown! Shred your Pepperjack cheese while you're waiting for it to melt (if applicable).
  • Once butter is mostly melted, add the package of cream cheese. It's easiest to cut it into 4 pieces so that it melts quicker.
  • Once butter and cream cheese are mixed well together, add the cup of milk, Pepperjack cheese, garlic powder, and then shake pepper, Italian seasoning, and basil on top. Stir all together until well mixed.
  • Put it on low heat and stir regularly. If you're going to be serving this dish with chicken, put the chicken in the sauce and stir it inches.
