4 cups chopped peeled apples, cut into about 1 inch chunks
4 large eggs, beaten
1 cup canola oil
2 teaspoons vanilla extract
1 teaspoon almond extract
2 teaspoons baking soda
2 teaspoons salt or 2 teaspoons salt substitute
2 teaspoons cinnamon
3 cups all-purpose flour or 3 cups whole wheat flour
2 cups granulated sugar
3/4 cup all-purpose flour or 3/4 cup whole wheat flour
1/4 cup granulated sugar
2 teaspoons cinnamon
6 tablespoons margarine or 6 tablespoons butter, room temp

Steps:

  • Preheat oven to 350°. Lightly grease two 9x5" bread loaf pans and set aside.
  • In a large bowl, beat the eggs with an electric mixer until fluffy. Add the oil and beat until combined.
  • Add the vanilla, almond, baking soda, salt and 2 teaspoons cinnamon. Beat until thoroughly mixed.
  • Next, add the 3 cups flour and 2 cups sugar on low just to blend. Turn the mixer to high and beat until mix is smooth. The batter will be very thick.
  • Fold in the chopped apples, mixing by hand so the apples do not get too broken up.
  • Divide the mix between two pans. Since the batter is so thick, it is easiest to spoon the batter into the pans.
  • To prepare the topping, combine the 3/4 cup flour, 1/4 cup sugar and 2 teaspoons cinnamon in a small bowl.
  • Cut the butter into the mix with a fork (or your hands) until all ingredients are moist and crumbly.
  • Sprinkle equal amounts of topping on each loaf.
  • Bake for about 1 hour on the center rack of the oven. The loaf should feel fairly firm when touched in the middle, or cook an extra 5 minutes.
  • Remove from the oven and place on a cooling rack. Let cool 5 minutes before removing from the pans.
  • It is easier to slice the bread if you can wait until it is cooled. Makes 2 loaves.

4 c apples, peeled , cored and chopped

1 c canola oil
2 tsp pure vanilla extract
2 tsp baking soda
2 tsp salt
2 tsp cinnamon
3 c all purpose flour
2 c white sugar
TOPPING
3/4 c all purpose flour
1/4 c sugar
2 tsp cinnamon
1/2 c butter, room temperature

Steps:

  • 1. Preheat oven to 350°. Lightly grease two standard bread loaf pans and set aside. Peel, core and slice the apples. Cut into good-sized chunks, about 1 inch in size
  • 2. In a large bowl, beat the eggs with an electric mixer until fluffy.
  • 3. Add the oil and beat until combined.
  • 4. Add the VANILLA EXTRACT, baking soda, salt and CINNAMON. Beat until thoroughly mixed

  • 7. To prepare the topping, combine flour, sugar and PENZEYS CINNAMON in a small bowl.
  • 8. Cut the butter into the mixture with a fork until all ingredients are moist and crumbly. If you don't mind a little mess, it is faster to use your hands.
  • 9. Sprinkle equal amounts of topping on each loaf. Bake for about 1 hour on the center rack of the oven.
  • 10. The loaf should feel fairly firm when touched in the middle; if not, bake an extra 5 minutes
  • 11. Remove from the oven and place on a cooling rack. Let cool for 5 minutes before removing from the pans. It is easier to slice the bread if you can wait until it is at least mostly cool.

4 cups flour
1 teaspoon salt
1/2 lb shortening
2 large egg yolks, beaten
30 crushed vanilla wafers
1 cup sugar
1 teaspoon cinnamon
1/2 teaspoon ground nutmeg
3 lbs apples, peeled cored and sliced (Mcintosh or Granny Smith and cut each apple into 12 slices)
3 cups powdered sugar

Steps:

  • Put beaten eggs in a 1 cup measuring cup and fill with water.
  • In a roomy bowl, combinee flour and salt. Cut in shortening.
  • Add the egg yolk/water mix and stir until incorporated. Set aside.
  • In a seperate bowl, combine sugar, cinnamon, and nutmeg. Set aside.
  • Preheat oven to 450 degrees.
  • Divide the dough in half.
  • Roll half out to fit a 16 1/2 by 12 1/2 cookie sheet.
  • Sprinkle with half of the vanilla wafer crumbs.
  • Spread half of the appple slices on top of the crumbs.
  • Sprinkle the rest of the vanilla wafer crumbs on top of the first layer of apple slices.
  • Top with the rest of the apple slices.
  • Sprinkle cinnamon/sugar/nutmeg on top of second layer of apple slices.
  • Roll out second half of dough large enough to cover bottom layer of dough and apple filling.
  • Lightly moisten perimeter of bottom layer of dough and water.
  • Place second layer of dough on top of bottom layer of dough and apples.
  • Seal the two layers of dough and crimp.
  • Make a few small slits in the top crust to le t steam escape.
  • Bake at 450 for 20 minutes. The apples will be slightly firm.
  • Combine the powdered sugar and water to make a glaze. Pour the glaze over the cake while the cake is still warm, but NOT hot.

3 cups all-purpose flour
2 cups sugar
2 teaspoons ground cinnamon
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
4 large eggs, room temperature
1 cup canola oil
1/2 teaspoon vanilla extract
2 cups chopped peeled apples (about 2 medium)
1 cup coarsely chopped walnuts

Steps:

  • Preheat oven to 350°. Line 2 greased 8x4-in. loaf pans with parchment; grease paper., Whisk together first 6 ingredients. In another bowl, whisk together eggs, oil and vanilla; add to flour mixture, stirring just until moistened (batter will be thick). Fold in apples and walnuts. , Transfer to prepared pans. Bake until a toothpick inserted in each center comes out clean, 50-55 minutes. Cool in pans 10 minutes before removing to wire racks to cool.Freeze option: Securely wrap cooled loaves in plastic and foil, then freeze. To use, thaw at room temperature.
