BAKED PENNE WITH ROASTED VEGETABLES



Baked Penne with Roasted Vegetables image

Number Of Ingredients 16

2 red peppers, cored and cut into 1-inch wide strips
2 zucchini, quartered lengthwise and cut into 1-inch cubes
2 summer squash, quartered lengthwise and cut into 1-inch cubes
4 cremini mushrooms, halved
1 yellow onion, peeled and sliced into 1-inch strips
1/4 cup extra-virgin olive oil
1 teaspoon salt, divided
1 teaspoon freshly ground black pepper, divided
1 tablespoon dried Italian herb mix or herbs de Provence
1 pound penne pasta
3 cups marinara sauce (store bought or homemade)
1 cup grated fontina cheese
1/2 cup grated smoked mozzarella
1 1/2 cups frozen peas, thawed
1/4 cup grated Parmesan, plus 1/3 cup for topping
2 tablespoons butter, cut into small pieces

Steps:

  • Preheat the oven to 450 degrees F.
  • On a baking sheet, toss the peppers, zucchini, squash, mushrooms, and onions with olive oil, 1/2 teaspoon salt, 1/2 teaspoon pepper, and dried herbs. Roast until tender, about 15 minutes.
  • Meanwhile, bring a large pot of salted water to a boil over high heat. Add the pasta and cook for about 6 minutes. Since you will be cooking the pasta a second time in the oven, you want to make sure the inside is still hard. Drain in a colander.
  • In a large bowl, toss the drained pasta with the roasted vegetables, marinara sauce, cheeses, peas, 1/2 teaspoon salt, and 1/2 teaspoon pepper. Using a wooden spoon, gently mix, until all the pasta is coated with the sauce and the ingredients are combined.
  • Pour the pasta into a greased 9 by 13-inch pan. Top with the remaining 1/3 cup Parmesan and butter pieces. Bake until top is golden and cheese melts, about 25 minutes.

SMOKED MOZZARELLA AND PENNE SALAD



Smoked Mozzarella and Penne Salad image

From the Whole Foods Market Cookbook. I buy this at the deli at my local Whole Foods a lot, mostly because if I make it, I will eat it ALL. Much better to walk up to the counter and say "One small cup of the mozzarella and penne, please!" Sometimes I find that the deli combines roasted AND fresh bell peppers, a nice added texture, and I'm not sure that they don't blanch their spinach leaves very quickly, as theirs always seem slightly wilted, although it doesn't call for that here. When I make this, my husband prefers that I use some regular mozzarella along with the smoked (just his personal taste) but I like the smoked. When cutting or grating fresh mozzarella, a useful tip is to pop it in the freezer for a few minutes to firm it up a bit--it will be much more receptive to the advances of your knife when it comes out!

1/2 cup mayonnaise
1/4 cup white wine vinegar
3 garlic cloves, minced

Steps:

  • Process the dressing ingredients in food processor or blender until smooth.
  • Cook pasta until al dente. Drain pasta in colander and run under cold water until well-cooled.
  • In a large bowl, combine cooked pasta, spinach, roasted red peppers and smoked mozzarella.
  • Toss the salad with the dressing then serve.

1 (1-pound) New York strip steak
1 teaspoon herbs de Provence
1 garlic clove, minced
3/4 cup extra-virgin olive oil, plus 3 tablespoons
1 pound penne pasta
1/4 cup balsamic vinegar
2 tablespoons Dijon mustard
1/2 teaspoon salt, plus more for steak and pasta water
1/2 teaspoon freshly ground black pepper, plus more for steak
1/4 cup chopped fresh basil leaves
1/4 cup chopped fresh parsley leaves
2 cups chopped arugula

Steps:

  • Season the steak with salt and freshly ground black pepper, herbs de Provence, and minced garlic. In a skillet, heat 3 tablespoons olive oil over medium heat. Cook steak about 7 minutes per side. Remove the meat from pan and let it rest for 5 minutes. Thinly slice the steak. Set aside.
  • Meanwhile, bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. Drain pasta, reserving 1/4 cup of pasta water.
  • In a small bowl, whisk together the balsamic vinegar, Dijon mustard, 1/2 teaspoon salt, 1/2 teaspoon pepper, fresh herbs, and 3/4 cup olive oil. In a large bowl toss the pasta with half of the salad dressing and the reserved pasta water. Add the arugula and steak, more dressing, and season with salt and freshly ground black pepper, as needed. Toss, pack for the picnic, or serve.

1/2 cup olive oil
6 garlic cloves, peeled and sliced thin
6 -8 ripe tomatoes
1/2 teaspoon salt
1 bunch of fresh arugula (or basil)
1/2 lb mozzarella cheese
1 lb ronzoni penne
parmesan cheese (to taste)
dried chili pepper flakes (to taste)

Steps:

  • Heat oil, add garlic and sauté until golden brown. Pour into a large bowl.
  • Chop tomatoes and toss with salt.
  • Cut arugula into strips and toss most of it with the tomatoes, saving some to top dish before serving.
  • Mix together with oil, tomatoes, garlic and greens while boiling slated water for pasta.

1 lb dried penne
5 tablespoons extra-virgin olive oil
1 teaspoon finely grated fresh lemon zest
2 garlic cloves, minced
1 (6-oz) head radicchio
9 oz arugula, trimmed (6 cups)
1 cup fresh basil
4 oz smoked mozzarella, cut into 1/2-inch dice
2 tablespoons fresh lemon juice

Steps:

  • Cook pasta in a 6-quart pot of well-salted boiling water until al dente.
  • While pasta is boiling, whisk together oil, zest, garlic, and salt and pepper to taste in a large bowl. Then thinly slice radicchio, arugula, and basil and add to dressing.
  • Reserve 1/2 cup cooking water and drain pasta in a colander.
  • Add hot pasta and reserved cooking water to greens and let stand 1 minute to wilt.
  • Add mozzarella and lemon juice and toss well. Season with salt and pepper and serve warm.
