This take on the classic street food, served throughout Mexico, is encountered often in open air markets, beaches and parks in summer. The original is often made with tajín spice, a store-bought blend of ground chile, lime and salt. This preparation allows you to use any variety of mango, in states of ripeness from soft and juicy to firm, and the homemade chile-lime salt can be used for a variety of savory or sweet dishes as a garnish or topping. If using store-bought chile-lime salt, substitute the ground chile, lime zest and salt with 2 tablespoons of the seasoning.

1 tablespoon ground chile, such as ancho or paprika
1 tablespoon fresh lime zest
1/2 teaspoon fine sea salt
2 ripe mangoes (1 1/2 pounds), peeled, pitted and cut into 1/2-inch slices

Steps:

  • In a small bowl, combine the chile powder, lime zest and salt. Use the chile-lime salt immediately or store at room temperature in an airtight container for up to 3 days.
  • Sprinkle the chile-lime salt all over the mango and serve immediately, or loosely cover and refrigerate for up to 4 hours.

There's plenty of saucy, cheese flavor in Chili Cheddar Penne, from Aaron Werner of Madison, Wisconsin. Taco seasoning and canned chilies give it a zippy Southwestern flare. Make it as spicy as you like by using mild or hot chilies and regular or spicy taco seasoning. Make this dish as spicy as you like by using mild or hot chilies, as well as regular or spicy taco seasoning. Save the rest of the taco seasoning packet to use for another dish.

1-1/3 cups uncooked penne pasta
4 teaspoons butter
4 teaspoons all-purpose flour
1 cup whole milk
2 cups shredded cheddar cheese
4 teaspoons taco seasoning
1/4 teaspoon salt
2/3 cup frozen corn, thawed
2/3 cup chopped fresh tomatoes
1 can (4 ounces) chopped green chilies, drained
Sliced avocado, optional

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large saucepan, melt butter over medium heat. Stir in flour until smooth; gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. , Reduce heat to medium. Stir in the cheese, taco seasoning and salt. Cook and stir for 2-3 minutes or until cheese is melted. Drain pasta; stir into cheese sauce. Cook and stir for 3 minutes or until heated through. , Stir in the corn, tomatoes and chilies just until combined. Garnish with avocado if desired.

Penne With Chicken Mango Sausage and Spinach image

This was borne of desperation. I had limited ingredients on hand and a hungry trio of kids (ages 8, 8, and 5) to feed. This got rave reviews (one of my daughters asked why I made such a "fancy" dinner. LOL) and after feeding our family of five, we still had some leftovers for lunch. Very easy, reasonably healthy, and yummy... my kind of dinner!

16 ounces penne pasta
14 ounces chicken sausage (I use Trader Joe's Mango Chicken Sausage)
6 ounces Baby Spinach
1 tablespoon extra virgin olive oil
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon ginger powder
salt and pepper

Steps:

  • Boil pasta per package directions.
  • While pasta is boiling, heat oil in very large skillet over medium heat.
  • Chop sausage into bite-size pieces. Add to skillet. Stir.
  • Add onion powder, garlic powder, ginger powder, salt and pepper. (ALL AMOUNTS FOR SPICES ARE APPROXIMATE -- I just gave a few shakes of each until it smelled good. For the record, I would have used fresh onion, garlic, and ginger if I'd had any!).
  • Cook until sausage is heated through.
  • Add bag of spinach. (Next time, I may use 2 bags, but this is what I had in the fridge.).
  • Stir to combine flavors well. Put lid on pan if desired to speed up cooking time. Cook until spinach is wilted.
  • Drain pasta when ready and add to skillet. Stir to combine flavors.
  • Serve and enjoy!

This simple recipe makes a great accompaniment to grilled chicken. The quality of Parmesan really matters here; avoid the stuff in the green container for this preparation!

16 ounces penne pasta
1 tablespoon butter
1 tablespoon extra virgin olive oil (I use inexpensive olive oil from Spain)
30 fresh sage leaves
1 cup parmigiano-reggiano cheese, freshly grated
fresh ground pepper, to taste
salt, to taste

Steps:

  • Bring a large pot of water to a boil, and salt it. Cook the pasta until it is tender but just short of the point at which you want to eat it.
  • Meanwhile, place butter and olive oil in a saucepan large enough to hold the cooked pasta; turn the heat to medium and add the sage. Cook until the butter and oil begin to brown and the sage shrivels.Turn heat down to low.
  • When pasta is almost done, scoop out a cupful of the cooking water and set aside. Drain the pasta, immediately add it to the sage mixture, and raise the heat to medium.
  • Add 1/2 cup of the reserved water, and stir. Cook about 30 seconds or until some of the water is absorbed and the pasta is perfectly done.
  • Stir in the cheese until the sauce becomes creamy. Thin it with a little water if necessary.
  • Season liberally with pepper, and salt to taste.
