CREAMY SMOKED SALMON PASTA

This is a lighter version of pasta carbonara. For people who want the flavor but not the bacon, smoked salmon is the perfect substitute!

6 tablespoons butter
½ onion, finely chopped
2 tablespoons all-purpose flour
2 teaspoons garlic powder
2 cups skim milk
½ cup grated Romano cheese
1 cup frozen green peas, thawed and drained
½ cup canned mushrooms, drained
10 ounces smoked salmon, chopped
1 (16 ounce) package penne pasta

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Melt butter in a large skillet over medium heat. Saute onion in butter until tender.
  • Stir flour and garlic powder into the butter and onions. Gradually stir in milk. Heat to just below boiling point, and then gradually stir in cheese until the sauce is smooth. Stir in peas and mushrooms., and cook over low heat for 4 minutes.
  • Toss in smoked salmon, and cook for 2 more minutes. Serve over pasta.

60 g butter
2 cloves garlic, finely chopped
2 shallots, finely chopped
200 ml white wine
200 ml double cream
1/2 grated lemon, zest of
2 tablespoons lemon juice
2 tablespoons chopped fresh chives
200 g smoked salmon, slices cut into strips
500 g pasta (eg. fettuccine, linquini, tagliatelle)
salt, black pepper
4 teaspoons salmon roe (optional)
1/4 cup chopped fresh flat leaf parsley

Steps:

  • Melt butter in a large frying pan over medium low heat.
  • Add shallots and garlic and cook, stirring occasionally, until soft, 5 minutes.
  • Add wine and simmer until reduced by half, 3 minutes.
  • Add cream, lemon zest and juice, chives and salmon.
  • Heat over medium low heat, without boiling, until hot through, 1 minute.
  • Add salt& pepper to taste.
  • Meanwhile, cook pasta, drain, reserving 1/2 cup pasta water.
  • Add pasta to the sauce.
  • Toss well to coat, adding reserved water as needed.
  • Stir through chopped parsley, if using.
  • Top with Salmon roe, if using.
  • Serve immediately.

12 ounces farfalle (bow-tie pasta)
Coarse salt and ground pepper
1 small red onion, quartered and thinly sliced
2 ounces bar cream cheese, cut into small pieces
1/4 cup fresh dill, coarsely chopped, or 1 teaspoon dried dill weed
2 tablespoons capers, drained and rinsed
4 ounces smoked salmon, cut into bite-size pieces

Steps:

  • Cook pasta in a large pot of boiling salted water until al dente, according to package instructions. Reserve 1/2 cup pasta water. Add onion to pot; immediately drain pasta mixture, and return to pot.
  • Add cream cheese, dill, capers, and salmon to pasta. Toss, adding reserved pasta water a little at a time to create a thin sauce that coats farfalle (you may not need all the water). Season lightly with salt and pepper. Serve.

This pasta dish is so easy to make because it makes its own sauce! The cream cheese melts to form an incredibly smooth and luxurious sauce that compliments that smoked salmon very well. This recipe is a favourite dinner party entree of Food Network celebrity Chef Michael Smith.

1 lb penne (or your favourite shaped pasta like bowties, long pastas like spaghetti don't work as well)
1 cup room temperature cream cheese
1 bunch fresh dill, chopped
4 green onions, sliced
1 lemon, juice and zest of
1 tablespoon Dijon mustard
1/4 cup capers
8 ounces smoked salmon (or more)
sprinkled sea salt & freshly ground black pepper, to taste

Steps:

  • Bring a large pot of salted water on to boil. Season it liberally with salt. When it boils, add your choice of pasta. Cook to el dente, until the pasta is cooked through but still pleasantly chewy.
  • Scoop out 1 cup or so of the starchy cooking water. Drain the pasta but not quite all the way. Leave it a bit wet. Put the pasta back into the pot along with a splash or two of the reserved water, about 1/2 cup or so in total then immediately add the rest of the ingredients.
  • While the pasta is till steaming hot toss well melting the cheese and forming the creamy sauce. Season with salt and pepper. Serve immediately.
