Chicken Sausage & Spinach Skillet Pasta with Lemon & Parmesan image

This one-pan pasta combines tasty chicken sausage and sautéed spinach for a one-bowl meal that's garlicky, lemony and best served with a little Parm on top. It's a quick and easy weeknight dinner everyone is sure to love. This recipe is a variation on our Chicken & Spinach Skillet Pasta with Lemon & Parmesan, which is a super-popular recipe developed by Devon O'Brien.

8 ounces whole-wheat rotini pasta
2 tablespoons extra-virgin olive oil
1 (11 ounce) package cooked chicken sausage, sliced
¼ teaspoon salt
¼ teaspoon ground pepper
4 cloves garlic, minced
½ cup dry white wine
Zest and juice of 1 lemon
10 cups chopped fresh spinach
4 tablespoons grated Parmesan cheese, divided

Steps:

  • Cook pasta according to package directions. Drain and set aside.
  • Meanwhile, heat oil in a large high-sided skillet over medium-high heat. Add sausage, salt and pepper; cook, stirring occasionally, until just cooked through, 5 to 7 minutes. Add garlic and cook, stirring, until fragrant, about 1 minute. Stir in wine, lemon zest and lemon juice; bring to a simmer.
  • Remove from heat. Stir in spinach and the cooked pasta. Cover and let stand until the spinach is just wilted. Divide among 4 plates and top each serving with 1 tablespoon Parmesan.

This was borne of desperation. I had limited ingredients on hand and a hungry trio of kids (ages 8, 8, and 5) to feed. This got rave reviews (one of my daughters asked why I made such a "fancy" dinner. LOL) and after feeding our family of five, we still had some leftovers for lunch. Very easy, reasonably healthy, and yummy... my kind of dinner!

16 ounces penne pasta
14 ounces chicken sausage (I use Trader Joe's Mango Chicken Sausage)
6 ounces Baby Spinach
1 tablespoon extra virgin olive oil
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon ginger powder
salt and pepper

Steps:

  • Boil pasta per package directions.
  • While pasta is boiling, heat oil in very large skillet over medium heat.
  • Chop sausage into bite-size pieces. Add to skillet. Stir.
  • Add onion powder, garlic powder, ginger powder, salt and pepper. (ALL AMOUNTS FOR SPICES ARE APPROXIMATE -- I just gave a few shakes of each until it smelled good. For the record, I would have used fresh onion, garlic, and ginger if I'd had any!).
  • Cook until sausage is heated through.
  • Add bag of spinach. (Next time, I may use 2 bags, but this is what I had in the fridge.).
  • Stir to combine flavors well. Put lid on pan if desired to speed up cooking time. Cook until spinach is wilted.
  • Drain pasta when ready and add to skillet. Stir to combine flavors.
  • Serve and enjoy!

1 tablespoon butter
1 tablespoon salt, or more to taste
1 tablespoon ground black pepper, or more to taste
1 tablespoon garlic powder
1 pound boneless skinless chicken breasts, cut into bite-size pieces
1 (14.6 ounce) package penne pasta
5 cups fresh spinach, or more to taste
1 cup grated Parmesan cheese
1 tablespoon red pepper flakes

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate. Spread butter, 1 tablespoon salt, 1 tablespoon pepper, and garlic powder over chicken breasts on a plate or cutting board.
  • Grill the chicken breasts until no longer pink in the center and the juices run clear, 5 to 6 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Bring a large pot of lightly salted water to a boil; add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Pour penne into a colander to drain.
  • Place the penne, chicken breasts, spinach, 1/2 cup Parmesan cheese, and red pepper flakes in the pot. Cook and stir over low heat until the spinach is wilted but still green, about 7 minutes. Season with the remaining 1/2 cup Parmesan cheese, salt, and pepper.
  • Mix pasta into spinach-chicken mixture; toss well.

2 tablespoons olive oil
1/2 large red onion, thinly sliced
1 1/2 tablespoons chopped garlic
1 tablespoon grated lemon peel
1 1/2 teaspoons minced fresh rosemary
2 large skinless boneless chicken breast halves, cut crosswise into 1/2-inch-thick slices
2 10-ounce packages ready-to-use spinach leaves
12 ounces penne pasta, freshly cooked, 1/2 cup cooking liquid reserved
1 2/3 cups grated Parmesan cheese (about 5 ounces)

Steps:

  • Heat oil in heavy large pot over medium-high heat. Add onion, garlic, lemon peel and rosemary. Sauté until onion softens, about 7 minutes. Sprinkle chicken with salt and pepper. Add chicken to pot and sauté until just cooked through, about 4 minutes. Add half of spinach and toss until beginning to wilt, about 2 minutes. Add remaining spinach and toss until all spinach is wilted but still bright green, about 3 minutes longer. Mix in pasta, then 2/3 cup cheese. Moisten with reserved pasta cooking liquid by tablespoonfuls if mixture is dry. Season with salt and pepper. Serve, passing remaining 1 cup cheese separately.

8 ounces penne pasta
2 boneless skinless chicken breasts, sliced into thin strips
1 lb hot Italian sausage
2 teaspoons cajun seasoning
2 tablespoons butter
1 green bell pepper, chopped
1/2 red bell pepper, chopped
4 fresh mushrooms, sliced
1 green onion, minced
1 1/2 cups heavy cream
1/4 teaspoon dried basil
1/4 teaspoon lemon pepper
1/4 teaspoon salt
1/8 teaspoon garlic powder
1/8 teaspoon ground black pepper
2 tablespoons grated parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta, and cook for 8 to 10 minutes, or until al dente; drain.
  • Meanwhile, place chicken and 1/2 of the Cajun seasoning in a bowl, and toss to coat. Place sausage and the rest of the cajun seasoning in a seperate bowl and toss to coat. Fry sausage in a sepate frying pan until no longer pink. Slice and set aside.
  • In a large skillet over medium heat, saute chicken in butter until no longer pink and juices run clear, about 5 to 7 minutes. Add cooked sausage. Add green and red bell peppers, sliced mushrooms and green onions; cook for 2 to 3 minutes. Reduce heat, and stir in heavy cream. Season the sauce with basil, lemon pepper, salt, garlic powder and ground black pepper, and heat through.
  • In a large bowl, toss penne with sauce. Sprinkle with grated Parmesan cheese.
