350 g penne pasta
1 tablespoon oil
1 onion, chopped
1 garlic clove, crushed
250 g skinless chicken breast fillet, sliced
1 1/2 cups sliced mushrooms
375 ml light & creamy evaporated milk
1 tablespoon cornflour
1 teaspoon French mustard
2 spring onions, finely chopped
3 cups baby spinach leaves
1/2 red capsicum, sliced finely
2 tablespoons grated parmesan cheese
2 tablespoons toasted pine nuts

Steps:

  • Cook pasta according to directions on packet, drain, keep warm.
  • Heat oil in pan, add onion and garlic, cook 1 minute. Add the chicken and mushrooms, cook 2 minutes, or until cooked through. Add the capsicum tp pan.
  • Combine evaporated milk, cornflour, and mustard, and add to chicken mix bring pan to boil, then simmer 1 minute.Remove from heat and while still hot stir in the spinach leaves, and spring onions, stir so as spinach wilts through a little.
  • Serve over pasta, sprinkle with cheese, top with pinenuts.

2-3 strips bacon
4 thin-sliced chicken breasts
1/2 teaspoon garlic powder
1/2 teaspoon kosher salt
10-12 cranks fresh-ground black pepper
1/4 cup all-purpose flour
1-2 teaspoons olive oil
8 ounces sliced mushrooms (baby Bella, cremini, or regular white mushrooms all fine)
1/2 cup chicken broth
1 tablespoon balsamic vinegar
1/2 cup heavy cream
2 large handfuls fresh baby spinach

Steps:

  • Place a large skillet over medium-high heat, add bacon, and cook until browned and crisp. Remove to a plate and crumble or chop into small pieces. Leave bacon fat in the pan.
  • While the bacon cooks, sprinkle the chicken breasts on both sides with garlic powder, salt, and pepper. Place flour on a shallow plate. Dredge each piece of chicken through it to coat on both sides, shaking gently to remove excess flour.
  • After removing the bacon, add chicken to the skillet and cook 3-4 minutes on each side, until cooked through. Add a drizzle of olive oil if the pan starts to look dry. Remove chicken and set aside along with the bacon.
  • Add another drizzle of olive oil to the skillet, followed by the mushrooms. Cook for 5-6 minutes, until dry and nicely browned. Turn down the heat if needed. Transfer mushrooms to the same plate as bacon and chicken.
  • Add broth and balsamic vinegar to the pan, scraping to release any browned bits. Bring sauce to a simmer and cook 1-2 minutes, until slightly reduced. Add cream and stir until the sauce is smooth.
  • Return chicken, bacon, and mushrooms to the pan. Cook for 2-3 minutes to thicken sauce more and warm the chicken. Add spinach and cook 1 minute more to let it wilt. Serve and enjoy!

175g wholemeal penne
50g unroasted, unsalted cashews
10g dried porcini mushrooms
1 tsp vegetable bouillon powder
1 tbsp rapeseed oil
120g chestnut mushrooms, halved if large, thinly sliced
2 large garlic cloves, finely grated
200g baby spinach

Steps:

  • Cook the penne following pack instructions and put the kettle on to boil. Meanwhile, put the cashews and dried mushrooms in a medium heatproof bowl along with the bouillon powder, and pour over 200ml boiling water from the kettle. Leave to soak for 5 mins. After this time, blitz the mixture with a hand blender until smooth and creamy.
  • Heat the oil in a large non-stick frying pan over a medium heat and fry the fresh mushrooms and garlic for a couple of minutes until just starting to soften. Add the spinach and continue to cook, stirring frequently until the spinach has wilted. Drain the pasta, reserving a little of the cooking water. Tip the pasta into the pan with the mushroom mixture, season with plenty of black pepper and toss everything together well. Remove from the heat and stir through the creamy mushroom sauce, adding a drop of the reserved cooking water if needed to loosen. Serve straightaway.

1 pound farfalle (bow-tie) pasta
3 tablespoons extra virgin olive oil
2 pounds chicken tenders, patted dry
salt and ground black pepper to taste
24 ounces fresh mushrooms, sliced
1 medium onion, halved and thinly sliced
3 tablespoons fresh minced garlic
3 cups chicken broth
4 teaspoons Dijon mustard
¼ cup heavy cream
2 cups roughly chopped fresh spinach
2 tablespoons coarsely grated Parmesan cheese, or to taste
1 teaspoon chopped flat-leaf (Italian) parsley, or to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook bow-tie pasta at a boil, stirring occasionally, until tender yet firm to the bite, about 12 minutes. Drain and transfer to a serving bowl or a deep platter.
  • Meanwhile, heat olive oil in a large skillet over medium-high heat for 1 to 2 minutes. Season tenders with salt and pepper, place in the hot oil, and cook until lightly brown on one side, 3 to 4 minutes. Turn and cook on the other side until light brown, an additional 3 to 4 minutes. Transfer chicken to a plate.

1-ounce dried porcini mushrooms
1 cup hot water
1 pound penne pasta
1 tablespoon olive oil
1 leek, rinsed well and chopped
1 cup sliced shiitake mushrooms
1 heaping cup cooked chicken
1 teaspoon dried tarragon
1 1/4 cups reduced-sodium chicken broth, divided
1 teaspoon cornstarch
1/2 cup frozen green peas
2 tablespoons chopped fresh parsley
Salt
Ground black pepper

Steps:

  • Soak dried porcini mushrooms in hot water for 15 minutes, until soft.
  • Cook penne according to package directions.
  • While penne is cooking, heat oil in large skillet over medium-high heat. Add leeks and cook for 2 minutes, or until soft. Add shiitake mushrooms and cook for 3 minutes, until mushrooms soften. Strain porcini mushrooms through a sieve, reserving soaking liquid. Chop porcini mushrooms and add to skillet. Add chicken and tarragon and cook 1 minute, until tarragon is fragrant.
  • Add reserved mushroom soaking liquid and 1 cup of the chicken broth and bring to a simmer, for 5 minutes. In a small bowl, using a whisk, dissolve cornstarch in remaining 1/4 cup chicken broth and add to the pan with the peas. Simmer 2 minutes until it reaches a full boil, and the sauce thickens. Stir in cooked penne and cook 1 minute to heat through. Remove from heat and stir in parsley. Season, to taste, with salt and freshly ground black pepper.

2 boneless skinless chicken breasts, diced

1 lb. sliced assorted mushrooms

1 1/2 cups low-sodium chicken broth
1/2 tsp crushed red pepper flakes
1/4 cup sun-dried tomatoes, sliced (or more, to taste)
5 oz (4 cups) fresh baby spinach, chopped
1/2 cup grated parmesan (extra for passing)

Steps:

  • Bring a large pot of water to a boil for the pasta. Add the pasta and cook according to the directions on the package. Meanwhile, heat 1 Tbsp of the oil in a very large skillet over medium heat heat. Add the diced chicken breast and season with salt and pepper. Cook until browned and just cooked through, stirring once or twice, about 5 minutes. Transfer the chicken to a plate. Add the remaining 1 Tbsp olive oil to the skillet. Add the mushrooms and onions and cook, stirring occasionally, until the mushrooms have released their water and begin to brown, about 8 minutes. Add the garlic and thyme to the skillet and cook, stirring, for 1 minute more. Add the broth and crushed red pepper flakes. Bring to a boil over high heat, uncovered, until the liquid has been reduced slightly. Stir in the sun-dried tomatoes and spinach and cook until the spinach is wilted. Add the chicken back into the skillet. Drain the pasta and add it to the mushroom-spinach mixture in the skillet and 1/4 cup of the grated parmesan cheese. ​​Mushrooms and spinach together is always a match made in heaven. I use a mix of wild and regular white or cremini mushrooms for this, but don't hesitate to make it if regular mushrooms are all that is available.

1/2 ounce (about 1/2 cup) dried porcini mushrooms
2 tablespoons extra virgin olive oil
1/2 medium onion or 2 shallots, chopped
2 garlic cloves, minced
1 pound mixed regular and wild mushrooms or 1 pound regular white or cremini mushrooms, trimmed and cut in thick slices (or torn into smaller pieces, depending on the type of mushroom)
Salt and freshly ground pepper
1/4 cup fruity red wine, such as a Côtes du Rhone or Côtes du Luberon
2 teaspoons chopped fresh thyme or a combination of thyme and rosemary
6 ounces baby spinach or 12 ounces bunch spinach (1 bunch), stemmed and thoroughly cleaned
3/4 pound penne
Freshly grated Parmesan to taste

Steps:

  • Place the dried mushrooms in a Pyrex measuring cup and pour on 2 cups boiling water. Let soak 30 minutes, while you prepare the other ingredients. Place a strainer over a bowl, line it with cheesecloth or paper towels, and drain the mushrooms. Squeeze the mushrooms over the strainer to extract all the flavorful juices. Then rinse the mushrooms, away from the bowl with the soaking liquid, until they are free of sand. Squeeze dry and set aside. If very large, chop coarsely. Measure out 1 cup of the soaking liquid and set aside.
  • Heat the olive oil in a large, heavy, nonstick skillet over medium heat and add the onion or shallots. Cook, stirring often, until tender, about 5 minutes. Turn up the heat to medium-high and add the fresh mushrooms. Cook, stirring often, until they begin to soften and sweat, about 5 minutes. Add the garlic and salt to taste, stir together for about 30 seconds, then add the reconstituted dried mushrooms and the wine and turn the heat to high. Cook, stirring, until the liquid boils down and glazes the mushrooms. Add the herbs and the mushroom soaking liquid. Bring to a simmer, add salt to taste, and cook over medium-high heat, stirring often, until the mushrooms are thoroughly tender and fragrant. Turn off the heat, stir in some freshly ground pepper, taste and adjust salt.
  • Bring a large pot of water to a boil and salt generously. Fill a bowl with ice water. Add the spinach to the boiling water and blanch for 20 seconds only. Remove with a skimmer and transfer to the ice water, then drain and squeeze out water. Chop coarsely and add to the mushrooms. Reheat gently over low heat.
  • Bring the water back to a boil and cook the pasta al dente following the timing suggestions on the package. If there is not much broth in the pan with the mushrooms and spinach, add a ladleful of pasta water. Drain the pasta, toss with the mushrooms and spinach, add Parmesan to taste, and serve at once.

1/2 large red onion, thinly sliced

2 large skinless boneless chicken breast halves, cut crosswise into 1/2-inch-thick slices
2 10-ounce packages ready-to-use spinach leaves
12 ounces penne pasta, freshly cooked, 1/2 cup cooking liquid reserved
1 2/3 cups grated Parmesan cheese (about 5 ounces)

Steps:

  • Heat oil in heavy large pot over medium-high heat. Add onion, garlic, lemon peel and rosemary. Sauté until onion softens, about 7 minutes. Sprinkle chicken with salt and pepper. Add chicken to pot and sauté until just cooked through, about 4 minutes. Add half of spinach and toss until beginning to wilt, about 2 minutes. Add remaining spinach and toss until all spinach is wilted but still bright green, about 3 minutes longer. Mix in pasta, then 2/3 cup cheese. Moisten with reserved pasta cooking liquid by tablespoonfuls if mixture is dry. Season with salt and pepper. Serve, passing remaining 1 cup cheese separately.

1 pound boneless skinless chicken breasts, cut into bite-size pieces
1 (14.6 ounce) package penne pasta
5 cups fresh spinach, or more to taste
1 cup grated Parmesan cheese
1 tablespoon red pepper flakes

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate. Spread butter, 1 tablespoon salt, 1 tablespoon pepper, and garlic powder over chicken breasts on a plate or cutting board.
