After years of experimentation, I perfected this recipe of sweet potato casserole and it has turned into a holiday favorite. It's always a huge hit & I get tons of requests for it. And the best part is, it's great hot, cold & leftover. Everyone says it's just like dessert, and everyone goes back for seconds or even thirds. Enjoy!!

Time 1h5m

Yield 8-10 serving(s)

Number Of Ingredients 12

4 large sweet potatoes
5/8 cup butter
1 cup evaporated milk
3 eggs, beaten
1 cup sugar
2 1/2 teaspoons nutmeg
2 1/2 teaspoons vanilla
2 1/2 teaspoons cinnamon
2 cups crushed corn flakes
1 cup brown sugar (unpacked)
1 cup chopped pecans
1/2 cup butter, melted

Steps:

  • Preheat over to 425 degrees. Butter a 13x9 glass baking dish and set aside.
  • Bake the potatoes until soft throughout. This can be done in either the oven or the microwave, there is no difference in the end product. Then peel the skins off, and whip the potatoes in a large bowl with an electric mixer.
  • Add in all the casserole ingredients and beat with electric mixer until smooth. Spread in the glass dish and bake 20 minutes, uncovered. This can be prepared a day in advance & refridgerated overnight, simply increase the cook time to 30 minutes to cook through.
  • FOR THE TOPPING, crush corn flakes by hand to equal 2 cups (about 4 cups from the box). Stir in unpacked brown sugar and chopped pecans. Set aside.
  • Just before the casserole is done, melt butter and add to dry topping mix. Stir until thoroughly moist.
  • Remove casserole from oven, reduce heat to 400 degrees, and spread topping over top.
  • Bake uncovered 15 minutes at 400.
  • This sweet potato casserole is great hot, warm or cold. And the leftovers taste just as good as when first made.

SWEET POTATO CASSEROLE WITH MARSHMALLOW & PECAN-STREUSEL RECIPE - (4.2/5)

Sweet Potato Casserole with Marshmallow & Pecan-Streusel Recipe - (4.2/5) image

Provided by Foodiewife

Number Of Ingredients 13

TOPPING:
4 whole medium sweet potatoes
1/2 cup brown sugar
1 cup whole milk, I used 2% and it worked out fine
2 eggs
1 teaspoon vanilla extract
1 teaspoon salt
1/2 teaspoon pumpkin pie spice, optional
1 jar marshmallow fluff, or creme
1 cup brown sugar
1 cup pecans, finely chopped
3/4 cups flour
3/4 stick unsalted butter, melted

Steps:

  • Wash 4 medium sweet potatoes and bake them in a 375°F oven until fork tender, about 30 to 35 minutes. When they are finished cooking slice them open and scrape out the flesh into a large bowl. Add the brown sugar, 1 cup milk, you can use half and half for a richer texture, 2 eggs, 1 teaspoon of vanilla extract and 1 teaspoon of salt. Add the pumpkin spice, if using. With a potato masher, mash them up just enough, you don't want to be perfectly smooth. Otherwise, I think the texture is too much like baby food. Your choice. Note: I used a hand mixer, on low speed, in spurts so as not to puree the sweet potatoes too much. Now, in a separate bowl, add 1 cup brown sugar, 1 cup pecans, chopped, that means measure a cup of pecans, then chop them, 3/4 cup flour, and 3/4 stick of melted butter. With a fork, mix until thoroughly combined. Note: You can easily make this a day or two ahead Spread the sweet potato mixture into a regular baking dish and sprinkle the crumb mixture all over the top. I used individual ramekins. If adding the marshmallow creme, add it before the topping. You could use miniature marshmallows, but I really liked the creaminess of the marshmallow creme. You could leave the marshmallow out, altogether, and this is still a delicious recipe. Bake in a 400°F oven for 30 minutes, or until golden brown.

SWEET POTATO AND PEACH CASSEROLE WITH PECAN TOPPING

Sweet Potato and Peach Casserole With Pecan Topping image

Splurge and enjoy this decadent side dish for the holidays or a special occasion. This is a nice change from the usual sweet potato casserole. The peaches compliment the sweet potatoes, and a little peach schnapps liqueur adds to the flavor. You don't have to be concerned about the alcohol content of the schnapps as the alcohol evaporates during the cooking process, but you can substitute the schnapps with peach nectar if you prefer. You can find peach nectar in the juice section of your grocery store.

SUNNY'S SAGE AND PECAN SWEET POTATO CASSEROLE

Sunny's Sage and Pecan Sweet Potato Casserole image

Provided by Sunny Anderson

Categories     side-dish

Time 2h5m

Yield 8 to 10 servings

Number Of Ingredients 16

1/2 cup all-purpose flour
1/4 cup plus 2 tablespoons light brown sugar, packed
5 tablespoons unsalted butter, cold, cut into teeny weeny bits
1 cup pecan halves, roughly chopped
6 to 8 fresh sage leaves, finely chopped
Zest of 1 orange
Kosher salt
2 1/2 pounds (about 4 medium) sweet potatoes, skin on
2 tablespoons vegetable oil
1/2 cup heavy cream
1/2 cup all-purpose flour
1/4 cup light brown sugar, packed, plus more to taste
4 tablespoons unsalted butter
1/2 teaspoon pumpkin pie spice
1 cup mini marshmallows, more if desired
2 eggs

Steps:

  • For the topping: In a medium bowl, add the flour, brown sugar, butter, pecans, sage, orange zest and a pinch of salt. Mix with your hands until it feels like you could make a ball that would just slightly hold together and everything is crumbly. Take a tiny bite; it should be slightly sweet with a hint of salt (like a good chocolate chip cookie!). Add a tiny pinch more of salt as needed. Cover the bowl and place in the freezer while finishing the recipe. Remove from the freezer 5 minutes before using and break apart with a fork as if you were flaking rice.
  • For the filling: Preheat the oven to 400 degrees F. Poke the sweet potatoes about 6 to 8 times, about 1/4-inch deep, using a fork. Rub with the oil and set the potatoes on a baking sheet. Roast on the middle rack until fork tender and the skins are darkened, 40 to 50 minutes. Set aside to cool. By the time the potatoes are cool enough to handle, the skins will loosen from the flesh. With your hands, gently remove the skins and discard. Place the sweet potato flesh in a large bowl along with the cream, flour, brown sugar, butter and pumpkin pie spice. Mash until smooth.
  • Shift the oven rack one level down and turn on the broiler. Spread out the marshmallows in a single layer on a baking sheet, transfer to the oven and broil, watching the entire time. When the tops of the marshmallows char to a black color and begin smoking (be strong, brown looks good, but black tastes better!), quickly remove from the oven. Lower the oven to 375 degrees F. With a rubber spatula, fold the marshmallows into the mashed sweet potatoes until combined. Taste and add a bit more brown sugar if needed, a tablespoon at a time; this should be just on the edge of sweet, the topping does the rest. In a small bowl, whisk the eggs and fold them into the sweet potatoes to combine.
  • Spread the sweet potato mixture into a 9-by-13-inch baking dish, leveling the top. Sprinkle the prepared topping evenly over the potatoes. Bake until the topping is shiny and golden brown, 30 to 35 minutes. Serve warm.

SLOW COOKER SWEET POTATO CASSEROLE WITH PECAN TOPPING

Slow Cooker Sweet Potato Casserole with Pecan Topping image

This recipe is for a 3-quart slow cooker, but it can be easily doubled for a 6-quart slow cooker. Number Of Ingredients 14

MASHED SWEET POTATO FILLING
4 lb sweet potatoes-fresh
6 Tbsp butter-unsalted
1/2 c brown sugar-packed
1 tsp pure vanilla extract
1 tsp salt
1 tsp cinnamon-optional
PECAN STREUSEL TOPPING
1 1/2 c flour-all purpose
3/4 c brown sugar-packed
1 stick butter-unsalted
1/2 tsp salt
3/4 c pecans-chopped
1/2 tsp cinnamon-optional

Steps:

  • 1. BAKE SWEET POTATOES: Position rack in center of oven and preheat to 400° Pierce each potato with fork and place on foil lined baking sheet. Bake until tender, about 50-60 minutes. Then cool until easy to handle-but still hot. While potatoes bake, grease a 9x13/2qt casserole, and make streusel.
  • 2. STREUSEL: In a medium bowl, combine flour, brown sugar, salt, and pecans. Cut in butter using a pastry blender, or your fingertips until coarse and crumbly. Set aside.
  • 3. MAKE FILLING When you can handle the potatoes, cut in half lengthwise and scoop out flesh into large bowl. Add sugar, butter, vanilla, and salt. Mash with potato masher or for a smoother purée, use an electric mixer.
  • 4. ASSEMBLE: Spread sweet potato mixture in prepared dish. Sprinkle streusel evenly over top and bake until golden brown, about 20-30 minutes. Let stand 5 minutes before serving. Streusel and filling can be made up to 2 days ahead and refrigerated, separately, covered. Assemble and bake until golden, approximately 45 minutes.
