PECAN PIE BY NANCY'S MOM
This is probably the best pecan pie I've ever had. It's the old fashioned kind. My friend Nancy's Mother brought this pie to a social one evening. I was following her around like a puppy begging for the recipe. She said there was not one...but she would write down how she makes it. This was years ago and both Nancy and her Mom have passed away, and I still have the piece of paper she wrote it on. You see it here. I treasure this. And I still make this pie.

Steps:
- Beat 3 eggs slightly, stir in 1 cup sugar and 1/2 teaspoon salt until dissolved. Stir in 1 cup of white corn syrup and 1/3 cup oleo melted. Mix thoroughly. Stir in 1 cup of pecans and 1 teaspoon vanilla. Pour in a deep pie shell and bake 350 degrees for 45 - 55 minutes until center is set.
PECAN PIE
Steps:
- Preheat the oven to 350 degrees F.
- On a lightly floured work surface, roll the pie crust into a 13-inch round, about 1/4-inch thick. Fit the crust into a 9-inch pie plate and trim the edges, leaving a 1-inch overhang. Fold the overhang underneath itself and crimp the edges. Refrigerate for at least 30 minutes before filling.
- Roughly chop 2 cups of the pecans by hand or in a food processor; set aside. In a medium saucepan, melt the butter over medium heat. Whisk in the brown sugar until smooth. Remove from the heat and stir in the corn syrup, vanilla bean seeds and eggs. Fold in the chopped pecans and pour into the prepared pie shell. Arrange the remaining 1 cup pecan halves around the edge of the pie to make a decorative top.
- Bake until the center is set, 60 to 70 minutes. Let cool completely.
- Slice and serve with a scoop of ice cream.

- Combine all the ingredients except for the nuts and the pie shell.
- Pour the mixture into the pie shell. Evenly spread the nuts on top and bake at 350 degrees for 40 minutes until set.
- Nice with vanilla ice cream or whipped cream.

- Preheat oven to 350 degrees F (175 degrees C).
- In a medium saucepan, combine the sugar, corn syrup, butter, water, and cornstarch. Bring to a full boil, and remove from heat.
- In a large bowl, beat eggs until frothy. Gradually beat in cooked syrup mixture. Stir in salt, vanilla, and pecans. Pour into pie shell.
- Bake in preheated oven for 45 to 50 minutes, or until filling is set.

MOM'S SOUTHERN PECAN PIE
My Mother first made this pie in 1949. The recipe was on a can of pecans. (I wasn't born then, but evidently pecans used to be sold in cans.) She kept the can in the kitchen cabinet. For some reason she never wrote it down. It's been a family favorite for 4 generations.

- Preheat oven to 375.
- Combine sugar, butter and syrup.
- Add beaten eggs and pecans and mix well.
- Pour filling into pie shell.
- Bake for about 45 minutes til center barely "jiggles".
