Toss together this refreshing salad from Jeaune Hadl Van Meter of Lexington, Kentucky. The crisp greens are mixed with nuts and citrus, then drizzled with a sweet-tart poppy seed dressing.

2 cups torn romaine
1 snack-size cup (4 ounces) mandarin oranges, drained
10 pecan halves
1 tablespoon dried cranberries
POPPY SEED DRESSING:
3 tablespoons olive oil
4 teaspoons honey
1 tablespoon red wine vinegar
3/4 teaspoon Dijon mustard
1/8 teaspoon salt
Dash onion powder
1/2 teaspoon poppy seeds

Steps:

  • Divide the romaine, oranges, pecans and cranberries between two salad plates. In a blender, combine the oil, honey, vinegar, mustard, salt and onion powder; cover and process until smooth. Stir in poppy seeds. Drizzle over salads.

10 cups mixed baby greens
6 mandarin oranges, peeled and segmented
2 pears, cored and cut into 1/4 inch thick slices
1/2 red onion, small and thinly sliced
2 tablespoons Dijon mustard
1 tablespoon honey
1/4 cup extra virgin olive oil
1/4 cup balsamic vinegar
1 cup pecans, toasted and chopped

Steps:

  • In large bowl, combine lettuces, oranges, pears and red onion.
  • For Dressing:.
  • In a medium bowl, combine dijon and honey. Slowly add olive oil, whisking to combine. Slowly add vinegar, whisking to combine. Stir in toasted pecans.
  • Drizzle salad with Toasted Pecan Vinaigrette, tossing gently to coat. Serve immediately.

4-1/2 teaspoons butter
2 cups pecan halves
2 tablespoons sugar
2 bunches romaine, torn
3 cups seedless red grapes
2 cups mandarin oranges, drained
4 celery ribs, chopped
6 green onions, chopped
DRESSING:
1 cup canola oil
1/2 cup white vinegar
6 tablespoons sugar
1 teaspoon salt
1 teaspoon ground mustard
1/2 teaspoon garlic powder

Steps:

  • In a large heavy skillet, melt butter. Add pecans and cook over medium heat until nuts are toasted, about 4 minutes. Sprinkle with sugar. Cook and stir for 2-4 minutes or until sugar is melted. Spread on foil to cool. , In a large salad bowl, combine the romaine, grapes, oranges, celery and green onions., In a jar with a tight-fitting lid, combine the dressing ingredients; shake well. Drizzle over salad. Add pecans; toss to coat.

1/3 cup sliced cucumber
1/4 cup coarsely chopped pecans, toasted
1/4 cup evaporated milk
2 tablespoons sugar
1 tablespoon red wine vinegar
1/8 teaspoon pepper

Steps:

  • In a bowl, combine the romaine, oranges, cucumber and pecans. In a jar with a tight-fitting lid, combine the milk, sugar, vinegar and pepper; shake well. Pour over salad and toss to coat.
