HERB-CRUSTED PORK ROAST
There is nothing like a well-seasoned pork roast, pan-seared and baked to perfection. The moist meat gets a flavor boost from a cheesy herbal crust and simple reduction sauce.

Steps:
- In a small bowl, combine the ground mustard, herb seasoning, salt and pepper; rub over roast. In a large skillet, brown roast in 2 tablespoons oil. Place roast fat side up on a rack in a shallow roasting pan. Brush top with Dijon mustard. Combine the bread crumbs, cheese, basil, thyme, rosemary, garlic and remaining oil; press onto roast. , Bake, uncovered, at 350° for 1-1/2 to 1-3/4 hours or until a thermometer reads 145°. Place on a warm serving platter. Let meat stand for 15 minutes before slicing. , Stir wine into roasting pan, scraping to loosen browned bits. Pour into a small saucepan. Bring to a boil over medium-high heat; cook until reduced by half. Serve with roast.

PECAN-CRUSTED PORK TENDERLOIN WITH RASPBERRY-CHIPOTLE SAUCE

- For the pork: Preheat the oven to 375 degrees F. Prepare the pork tenderloins by rinsing under cold water. Pat dry and set aside.
- Combine the breadcrumbs, pecans, rosemary, salt and pepper in a 9-by-13-inch pan. Set aside. Place the egg whites in a small bowl and whip slightly.
- Brush the tenderloins with the whipped egg whites. Then dredge in the breadcrumb mixture, pressing to adhere. Place on a baking sheet. Bake until done, about 25 minutes. Remove from the oven and let rest about 10 minutes prior to slicing.
- For the raspberry-chipotle sauce: Combine the raspberry preserves with the adobo sauce.
- To serve: Slice the tenderloins and serve with the raspberry-chipotle sauce.
PECAN-COATED ROAST LOIN OF PORK
Steps:
- Rub the pork loin with olive oil, making sure that it is well covered. Combine the sage, thyme, garlic, salt, pepper and brown sugar in the bowl of a food processor or blender and pulse until you have a thick paste. You may have to add a drizzle of olive oil to get it started. Slather the paste all over the pork loin, cover it with plastic wrap, and refrigerate it over night.
- Preheat the oven to 400 degrees. Place the pecans in the bowl of a food processor or blender and pulse until they are finely chopped. Roll the pork loin in the crushed pecans and place it in a roasting pan. Make a tent of aluminum foil and arrange it over the pork loin, covering the nuts completely so they won't char.
- Roast for 30 minutes; then lower the heat to 350 degrees and continue to roast. After 1 hour and 20 minutes, remove the aluminum foil and continue to roast until the pork is done, approximately 20 minutes more. Serve hot.
CORNBREAD-CRUSTED PORK LOIN WITH SAGE
An unusual presentation that is very quick, and only dirties THREE kitchen items. I can't make this recipe without snacking on the cornbread mixture - it is delicious! Pork loin can dry out when cooking, but the crust on this recipe results in a deliciously moist final product. I adapted this recipe from one in Gourmet magazine, adding a little Asiago cheese to the crust so that it holds together better, and optimizing the instructions for super-fast cleanup.

- Preheat oven to 425°F.
- Heat oil in large non-stick pan over high heat.
- While oil heats, season the loin with salt and pepper.
- When oil is very hot but not smoking, add loin to pan and brown on all sides, about 4 minutes total.
- Transfer to oiled, foil-wrapped shallow baking pan.
- Reduce heat under non-stick pan to medium and add butter. Add garlic and cook until fragrant and slightly browned, about 1 minute.
- Crumble cornbread into pan and sprinkle with cheese.
- Layer sage leaves together in one hand, and use kitchen shears in the other to snip fine ribbons onto the cornbread. Stir mixture in pan and season with pepper to taste.
- Spread mustard over loin, then carefully but firmly pat the crumb mixture onto the mustard (when making this for family, I just mound the crumbs over the loin and pat it down a bit for speed).
- Tent loosely with foil and cook just until instant-read thermometer registers 155 (a remote probe thermometer helps, otherwise you are likely to knock off a lot of the crust by repeatedly stabbing the loin) about 20-25 minutes.
- Transfer loin to a cutting board and tent with foil. Let rest 10 minutes before serving.

PECAN CRUSTED PORK TENDERLOIN
Makes a delicious and attractive entree. Would make a great entree for company. Recipe off the web but I don't know who to credit, but it does say it's Southern cruisine.

- With a sharp knife cut tenderloins into 1/4-inch slices. With a meat mallet gently pound each slice to about 1/8-inch thickness.
- In a shallow bowl or on waxed paper, combine the flour, salt, and pepper.
- In a shallow bowl or pie plate, whisk the eggs and water.
- In another shallow bowl or on waxed paper, combine bread crumbs, pecans, and parsley.
- Dip the tenderloin pieces into flour mixture, then into the egg mixture, then into the bread crumb and pecan mixture, coating well.
- Heat vegetable oil in a large skillet over medium heat. Cook tenderloin pieces, 1/3 or 1/2 at a time, until lightly browned on both sides and cooked through. Add more oil as necessary.
- Place browned tenderloin on a warm platter or tray and tent with aluminum foil to keep warm while cooking remaining pieces.
- Add the 3/4 cup water and chicken bouillon granules to the drippings in the skillet and bring to a boil, stirring to loosen browned bits; continue to boil for 1 minute.
- Pour over pork. YUM!
