This salad brings together ingredients that really enhance each other, and the dressing packs a perfect punch with maple syrup, brown sugar, and apple cider vinegar. It's a favorite in my family!

1 (10 ounce) bag mixed field greens
½ cup sliced red onion
1 Bosc pear, cored and sliced
½ cup chopped candied pecans
½ cup crumbled blue cheese
¼ cup maple syrup
⅓ cup apple cider vinegar
½ cup mayonnaise
2 tablespoons packed brown sugar
¾ teaspoon salt
¼ teaspoon freshly ground black pepper
¼ cup walnut oil

Steps:

  • Place the salad greens in a large bowl. Add the red onion, pear, pecans, and blue cheese, and toss to mix evenly.
  • To make the dressing, place the maple syrup, vinegar, mayonnaise, brown sugar, salt, and pepper in a blender, and blend thoroughly. With the motor running, slowly pour in the walnut oil. Blend until mixture becomes creamy, about 1 minute. Pour over salad mixture, and toss to coat greens evenly. Serve immediately.

SALAD
1/3 cup(s) walnut pieces, toasted
8 cup(s) baby spinach leaves, washed and dried
1 large ripe bosc pear, washed, cored and cubed
1 large shallot, thinly sliced (lyonnaise cut)
2 ounce(s) blue cheese, crumbled
1/2 cup(s) pomegranate seeds
VINAIGRETTE
1/4 cup(s) grapeseed oil
1 tablespoon(s) balsamic vinegar
1 tablespoon(s) honey
1/2 tablespoon(s) dijon mustard
ground himalayan sea salt, to taste
freshly ground black pepper, to taste (i always use mixed peppercorns)

Steps:

  • In a small skillet over medium heat, we'll add walnuts and toast them for about 5 minutes, tossing often. Transfer them to a bowl to cool off while making the vinaigrette.
  • Combine grapeseed oil, balsamic vinegar, honey, Dijon mustard, sea salt and freshly ground black pepper. Whisk until blended; taste and adjust if necessary.
  • In a large salad bowl, add baby spinach leaves and pour in the vinaigrette before gently tossing until nicely coated.
  • Place the salad on serving plates and add a handful of pear pieces. Add shallot slices, pomegranate seeds and sprinkle on blue cheese and toasted walnuts.
