120 ml finely chopped parsley
4 slices prosciutto, finely chopped
160 ml about 1-1/2 cups grated mozzarella cheese
30 ml olive oil
2 bosc pears, cored and thinly sliced
200 ml brie cheese, cut into thin slices
4 portions frozen pizza dough, thawed overnight in refrigerator
30 ml all-purpose flour

Steps:

  • Position racks in top and bottom thirds of oven. Preheat to 425°F Lightly spray 2 baking sheets with oil.
  • Dust a counter with flour. Roll out each portion of dough into 8 inch-wide rounds. Top with brie slices, then pear slices. Brush tops of pizza and crust with oil. Sprinkle with mozzarella.
  • Bake in top and bottom thirds of oven, switching sheets halfway through, until bottom of crust is golden and cheese is melted, 20 to 25 minutes. Sprinkle with prosciutto and parsley.

1 1/2 tablespoons butter
1 large onion, peeled and thinly sliced
1/2 teaspoon granulated sugar
4 small individual prepared pizza crust (4 inches)
2 cups shredded mozzarella cheese
2 medium ripe pears, cored and sliced
1/4 cup chopped prosciutto
1/4 cup grated fresh parmesan cheese
1 tablespoon chopped fresh thyme

Steps:

  • Preheat oven to 450.
  • Melt the butter in a large skillet.
  • Add onions and cook over medium low heat, stirring frequently (about 25 minutes) until onions are very soft and golden brown Add sugar and cook five more minutes.
  • Place pizza crusts on a large baking sheet.
  • Top with equal amounts of mozzarella, onions, pears, prosciutto and Parmesano Bake approximately 10 minutes or until cheese is melted and crust is golden Sprinkle top with thyme and let cool slightly.
  • Cut into wedges and serve.
  • Makes 4 main dish or 16 appetiser servings.

290 g pizza crust mix
1 1/2 tablespoons olive oil, plus extra for greasing
plain flour, for dusting
150 g creme fraiche
50 g parmesan cheese, finely grated
8 slices prosciutto
2 pears, cored and sliced
125 g gorgonzola, rind discarded, cut into small pieces
4 teaspoons balsamic glaze, to drizzle

Steps:

  • Preheat the oven to gas 7, 220°c, fan 200°c. Line 2 baking trays with nonstick baking paper.
  • Put the pizza base mix in a large bowl and add 175ml warm water and 1tbsp of the olive oil. Mix to a dough, then knead on a lightly floured surface for 5-10 mins until smooth and springy. Put in a lightly oiled bowl, cover with clingfilm and leave in a warm place for 45mins or until doubled in size. Divide the dough in half and roll each half to an oval measuring roughly 30x25cm.
  • Mix the creme fraiche and parmesan with a little black pepper, then divide between the bases. Top with the prosciutto, pears, and gorgonzola, then drizzle with the remaining oil. Bake in the oven for 15-20 mins until golden and the cheese has melted. Serve immediately with the balsamic glaze drizzled over.

6 cloves garlic
½ tablespoon olive oil
2 ripe pears, halved and cored
1 tablespoon olive oil
all-purpose flour for dusting
1 unbaked pizza crust
1 tablespoon cornmeal for dusting
6 ounces shredded Swiss cheese
5 thin slices prosciutto, cut into halves
1 (6 ounce) package fresh mozzarella, cut into small cubes
salt and ground black pepper to taste
½ tablespoon olive oil

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Place the garlic in a small square of aluminum foil. Drizzle 1/2 tablespoon of olive oil over the garlic. Wrap foil around garlic to seal.
  • Roast the garlic in the preheated oven until soft, about 20 minutes. Smash roasted cloves with a fork.
  • Place the pears in a bowl with 1 tablespoon olive oil; toss to coat. Arrange pear slices on a baking sheet.
  • Bake in hot oven until soft, 10 to 15 minutes.
  • Raise oven temperature to 400 degrees F (200 degrees C). Preheat a pizza stone or baking sheet in the oven.
