I invented this easy no-bake recipe because of a bake sale at work, combined with my boredom with the usual rice cereal version. It was one of the most requested cookies, and helped me make enough for a down payment on my home! Top these with chocolate chips, and they taste just like s'mores!

½ cup peanut butter
¼ cup butter
1 (16 ounce) package miniature marshmallows
¼ cup honey
1 (12 ounce) box honey graham cereal

Steps:

  • Spray a 9x13 inch baking pan with nonstick spray; set aside.
  • Melt the peanut butter, butter, and marshmallows in a saucepan over medium heat, stirring until smooth. Stir in the honey. Remove from heat; stir in the honey graham cereal. Press the mixture evenly into the prepared pan with a greased spatula. Allow to cool; cut into squares to serve.

3/4 cup graham cracker crumbs
1/2 cup butter, melted
2 cups confectioners' sugar
1/2 cup chunky peanut butter
1 cup semisweet chocolate chips

Steps:

  • In a bowl, combine cracker crumbs and butter. Stir in sugar and peanut butter. Press into a greased 8-in. square pan. , In a microwave or double boiler, melt the chocolate chips and stir until smooth. Spread over peanut butter layer. Chill 30 minutes; cut into squares. Chill until firm, about 30 minutes longer. Store in the refrigerator.

1 package (16-1/2 ounces) refrigerated chocolate chip cookie dough
2 cups chocolate-covered peanuts
1 cup miniature marshmallows
1/2 cup butterscotch ice cream topping

Steps:

  • Press cookie dough into an ungreased 13x9-in. baking pan. Bake at 350° for 14-16 minutes or until edges are lightly browned and center is set. Sprinkle with peanuts and marshmallows; drizzle with ice cream topping., Bake 6-8 minutes longer or until marshmallows are puffed. Cool completely and cut into bars.

1/2 cup light corn syrup or honey
1/4 cup sugar
1/2 cup creamy peanut butter
6 cups oven toasted corn or rice cereal
1/2 cup salted peanuts, if desired

Steps:

  • Butter 9- or 8-inch square pan.
  • In 3-quart saucepan, heat corn syrup and sugar just to boiling over medium heat, stirring constantly. Remove from heat.
  • Stir in peanut butter. Gently stir in cereal and peanuts until evenly coated. Press firmly in pan. Let stand 1 hour. For squares, cut into 6 rows by 6 rows. Store loosely covered.
