Homemade Vodka Sauce image

This is how I make my own Vodka Sauce for pasta, chicken and burgers...you will find many ideas to use this sauce- like lasagna, and spaghetti, etc. Recipe makes about 7 1/2 cups- you can freeze any extra for later use,in freezer containers.

1 large sweet onion, chopped
5 clove garlic, roughly chopped
3 Tbsp extra virgin olive oil
2 can(s) 28 oz. ea. of crushed tomatoes
1 1/4 c vodka, premium quality
2 c heavy cream
4 Tbsp fresh basil, finely chopped
5 1/2 oz can tomato paste
salt and pepper to taste

Steps:

  • 1. Sauté onion, garlic and olive oil in a large saucepan or small kettle until translucent. Do not overcook or brown.
  • 2. Add both cans of crushed tomatoes and vodka.
  • 3. Cook 1/2 hour until alcohol has burned off.
  • 4. Add heavy cream and basil. Stir to blend ingredients.
  • 5. Add tomato paste as desired. If you want a thinner sauce, use less tomato paste. Stir to blend. Simmer 1/2 hour.Season to taste with salt and pepper.
